Zucchini can be pickled and fried and stewed, boiled, in general, it is such an easy-to-cook vegetable that every time I fall in love with it more and more. And how tasty and juicy different dishes turn out with it, well, you just lick your fingers. Today I will share my favorite recipes that I cook from zucchini. And at the very end I will share my secret of how I store zucchini. So read to the end!

Zucchini with meat and potatoes baked in the oven.

A very hearty and healthy dish that can be prepared for lunch or dinner or for the arrival of guests, for a change.

To prepare it you will need:
Pork 300-400 gr.
Zucchini medium 1 pc.
Tomatoes 4 pcs. small
Onion 2 pcs. medium
Potato 5-6 pcs. maybe more
Bulgarian pepper, I have half, but you can take more.
Greens parsley, dill
Salt to taste
Ground black pepper to taste
Seasonings to taste too.
Sunflower oil

Wash the meat, let the water drain and cut into thin plastics.

After each piece of meat we beat off so that it is soft and very tender when cooked.

Salt, pepper, sprinkle all the meat with seasonings and set aside for now, let it soak.

At this time, we wash the potatoes, peel and cut into slices

We do the same with onions and peppers, only we cut the onion into rings, and the pepper into strips.

Preheat the oven and grease a baking sheet with sunflower oil.

Place the first layer of zucchini on a baking sheet. Therefore, we also cut them in circles, if the zucchini are young, then the peel can not be cut off from them; when it is cooked, it will be soft and the middle can not be removed from young zucchini. But if the zucchini is no longer young, then it is better to remove the peel and seeds from the middle.
Even after the zucchini have been laid out, they need to be properly salted, because they secrete a lot of juice, so you need to salt well, otherwise it will be undersalted later.

The second layer will be potatoes

Place onions and peppers on top of potatoes.

The next layer will be our chop meat.

We close the whole thing with tomatoes

And finally sprinkle with fragrant herbs.
Now we send the baking sheet with our dish to the oven for 60 minutes.

Zucchini with minced meat and cheese baked in the oven.

This is one of my favorite recipes.
It is very simple in preparation.
And the ingredients are all available:
Zucchini 1 pc
Tomatoes 4 pcs
Bulgarian pepper 1 pc
Onion 1 pc
Minced meat 300 gr
Cheese 100-150 gr.
Greens parsley, dill
My zucchini and cut into slices, cut the peel from the zucchini only if the zucchini is no longer young.
Also wash the tomatoes and also cut into circles.
Minced meat is mixed with finely chopped onion and bell pepper. You can finely chop the meat in place of minced meat, but minced meat is still better. But sometimes I'm too lazy to get a meat grinder and I finely cut the meat.
Any meat can be used, even pork, even chicken.
The resulting minced meat with vegetables is salted, peppered, seasoned with your favorite seasonings and put on top of zucchini with tomatoes, sprinkle all this with grated cheese and herbs, put in the oven for 30 - 40 minutes.

It can be served with a side dish such as mashed potatoes or spaghetti, or you can eat it just like that. Too bad the photo doesn't convey the taste. But it's just a deliciously delicious and juicy dish. I highly recommend everyone to try it.

Braised zucchini with vegetables and meat.

I think this recipe is universal, which is suitable for any occasion. Thanks to vegetables, the dish is considered light and healthy. It can be cooked with or without meat.
For cooking you will need:
Zucchini
Tomatoes
Carrot
Onion
Garlic
bell pepper
Potatoes
Any meat you want.
Salt and spices to taste.

Wash the meat from the beginning, cut and fry until golden brown
Then wash all the vegetables and cut into cubes. And add in turn to the meat. First, onions, fry a little, then carrots, bell peppers, zucchini, tomatoes, garlic and potatoes. Stew all vegetables in their own juice, over medium heat for 35 minutes, stirring occasionally. If you like thinner, then you can add water with tomato paste, let it boil again. Salt, add spices and herbs. Let cook for 5 more minutes.

How to save zucchini for the winter.

As promised, I share my ways on how to store zucchini in the winter. Although for some it will not be a secret, of course I will not open America, but suddenly someone does not know, or knows, but does not use it yet.
In general, the first way is freezing in the freezer. I usually cut the zucchini into small squares and put it in a large bag, and in the winter, if necessary, I take it out and add it to different dishes, it’s very convenient because they are already chopped and there is no need to defrost them, I throw them directly frozen, for example, into stewed potatoes and the taste cannot be distinguished from fresh zucchini. I keep it this way until the next harvest. Therefore, we eat zucchini all year round.
The second way is at home somewhere in a dark and dry place, in a closet or under a closet. So that the zucchini does not rot, you need to dry the stalk and do not pull them too often. In this way they can be stored until spring.
