There are many types of this excellent and beloved Georgian dish - khachapuri. By themselves, they can be both in the form of a cake, and “open” - in the form of a boat, “sweetened” with cheese on top or without a cheese crust.

In addition, they can be cooked both in the oven and in a pan. Yes, there is simply no single recipe for khachapuri dough. What can we say about the fillings: various cheeses, cottage cheese, greens, beans, eggs.

Moreover, our housewives manage to cook this dish even with meat, sausage and fish. Although the word “khacha-puri” itself says that it should still be bread (that is, dough, flatbread) and cottage cheese (well, or its derivatives - cheeses). On the other hand - what's the difference when it's damn tasty!

Classic recipe

sifted flour - about 2 glasses + for mixing
kefir (preferably fatty) - 180 g
vegetable oil - 60 g
salt, soda, sugar - 0.5 tsp each
chicken egg 1C - 1 PC.
homemade cottage cheese (not liquid) - 350 g
spices and salt taste

To begin with, we offer a universal recipe, from which you can “start dancing”.

We knead the dough correctly: sift the flour, then separately combine kefir, egg, butter, salt, sugar, soda - beat everything thoroughly. Pour the liquid ingredients into the flour and knead the elastic "obedient" dough. Add flour if necessary. Let the test rest.

In the meantime, prepare the filling. There is no need to grind the cottage cheese - it will be even tastier if its lumps are caught in the cake. Although, who likes. Mix with salt and spices. It is appropriate to use black pepper, paprika, coriander. If desired, add minced garlic.

Divide the rested dough into six parts. From each we make a cake, put a sixth of the filling. We wrap. Gently roll out the resulting “pie” with a rolling pin into a thin circle so that the dough does not burst and the filling does not leak.

Fry over low heat in a dry (without oil!) Frying pan on both sides until golden brown. While still hot, ready-made khachapuri with cottage cheese is “sweetened” with pieces of butter.

Khachapuri with cottage cheese and herbs

For the test you will need:

  • flour - about 400 g;
  • boiled water, slightly warm - 150 ml;
  • butter at room temperature - 190 g;
  • salt - a pinch.

The stuffing will go:

  • cottage cheese of medium consistency - 250 g;
  • fresh dill - 10 g;
  • green parsley - 10 g;
  • cilantro - 15 g;
  • chicken egg 1C - 2 pcs. (for an amateur);
  • salt, ground black pepper - to taste;
  • garlic - optional.

The dish takes 70 minutes to prepare.

Calorie content of one hundred grams: 205 kcal.

Pour a little warm, salted water into a glass of flour. Knead, then send to the refrigerator. While this part of the dough is cooling for 15 minutes, chop the soft butter with the remaining flour. Knead. We get the first part from the refrigerator, combine with the second. Adjust the amount of flour.

Meanwhile, boil the eggs for the filling. Wash and dry greens. We grind. Mix grated boiled eggs on a coarse grater (who does not like, you can not add them), cottage cheese, spices, herbs, salt.

Roll out the dough to a thickness of about 4 mm. Cut into 10 squares. Put a tenth of the filling in each square. We turn the square in half diagonally, pinch the edges of the triangle. Fry in a frying pan without oil on both sides over low heat. Serve khachapuri with butter.

For the test we are preparing:

  • butter - 170 g;
  • egg 1C - 1 pc.;
  • semi-liquid cottage cheese - 250 g;
  • soda (you can not extinguish it!) - 3 pinches;
  • flour - 350 g;
  • salt - taste.

The stuffing will go:

  • hard cheese (any) - 350 g;
  • garlic - a clove or two;
  • table mayonnaise - 40-50 g;
  • sour cream - 50 g;
  • salt, pepper - taste;
  • wild garlic - if desired.

The dish is prepared in 50 minutes.

Calorie content of one hundred grams: 288 kcal.

The recipe for khachapuri with cottage cheese and cheese in the oven is quite a bit different from the previous two. So, mix cottage cheese with soft butter. We drive in the same egg, salt, soda. We add flour. Knead soft dough.

Lay paper on a baking sheet, sprinkle with flour. Roll out half of the dough on top in the shape of a circle. We spread the entire filling, leaving free edges of about one centimeter. Then apply the second circle from the remaining half of the dough. We pinch the edges.

We put in the oven (preheat to 180 degrees) until a characteristic aroma appears - this is about 35 minutes. But be careful! Remove when browned, not burnt. Serve khachapuri, cut into pieces. You can move away from traditions and eat with sour cream. Very tasty!

To make it even tastier

  1. To make classic khachapuri correct, it is important that the dough does not tear. Then in the pan the pancakes will puff up and steam well from the middle. Then the walls of the cake will fall into place. There will be no dough sticking to the teeth.
  2. It is acceptable to stack ready-made khachapuri with cottage cheese, shifting with pieces of butter. Then they are saturated with oil, become juicier and more aromatic.
  3. The most obedient dough for this Georgian dish is cottage cheese. Properly prepared, it will give in to the hands of the hostess like soft plasticine. To do this, you need to take cottage cheese of optimal consistency: not too liquid, but without grains.
