Gooseberry compote "Mojito" for the winter

Compote- a delicious and healthy soft drink that can be prepared from different berries and fruits. We cook them simply, for daily use, and also prepare healthy, fragrant compotes for the future, for the winter, in order to enjoy vitamins and the benefits of homemade compote on frosty days. My today's recipe will be dedicated to not the usual, banal compote made from strawberries, raspberries, cherries or blackcurrants ... We will make an extremely healthy, refreshing Mojito compote from green gooseberries, lemon with mint sprigs. If you add a little rum to such a compote, you will already get a real Mojito. So, let's experiment together.

Would need:

  • Gooseberries - 2-3 cups (for a 3-liter jar)
  • Sugar - 1 cup
  • Lemon (you can lime or citric acid) - 2-4 slices
  • Mint - 2-4 sprigs

How to make compote for the winter from gooseberries, lemon and mint "Mojito":

Before you start making compote, prepare the ingredients. To do this, we collect the gooseberries from the bush and wash it under running water. Let the water drain. My lemon with a brush. Mint sprigs are also thoroughly washed, as they usually accumulate a lot of dirt and sand.

Pour green gooseberries into a clean, sterile jar (you can not cut the tails from the berries), add sprigs of mint and lemon (lime) slices. If you don't have a lemon, add 1 tsp to the jar. citric acid.

Fill the jar with boiling water and leave for 20-25 minutes.

Then, drain the water from the jar into a saucepan, pour 1 cup of sugar into it and bring to a boil. Sugar should dissolve completely. When the sweet marinade boils, boil for 1-2 minutes and pour it back into the jar with berries, lemon and mint.

Compote is ready. It remains only to seal the jar with a turnkey lid or close it under a screw cap.

Wrap hot jars with compote under a blanket for 2 days. For 2 days, we clean the cooled jars with compote in a cool place, a pantry or send them to the cellar for storage. Gooseberry compote is perfectly stored at home, subject to normal temperature.
