Hello my dear readers! The year 2017 is inexorably approaching, and with it the question that is painful for all women: what to cook for the New Year? This problem with enviable constancy "covers" us every year, as soon as December looms. And we, in order not to break a long-standing tradition, usually fall into a slight panic - there are a lot of recipes, but there is nothing to cook.

Remember the old joke: "A man has nothing to wear when everything is clean, and a woman - when there is nothing new!" So in the preparation of the New Year's menu - you always want something original, unusual, tasty and new. Therefore, the sacramental “what to cook” is already ringing in the head of every self-respecting housewife. I wanted to do without the New Year's "watch" in the kitchen for this New Year and stretch the process of preparing New Year's dishes in time. First, I will announce the entire list.

What to cook for the New Year without problems

My New Year's menu for 2017

Part of the meat from the broth I “wander” - in the form disassembled into fibers, I put it in the freezer (in a plastic container). And the day before preparing the salad, I defrost it in the refrigerator and voila. You will need to mess with the salad less. A trifle, but nice! We prepare the salad the day before serving, store in the coldest place in the refrigerator.

This morning I bought an excellent piece of bone-in pork loin at the market. Now is the time to cook it. Until the New Year, it will wither and ripen. The meat must be removed from the bone (decide what to cook from the bone). Then the meat must be salted (about 4% salt to the mass of raw materials). Next, the meat is sent for several days in a cold place. For cooking details, please refer to the corresponding recipe. Store the finished product in a cool and known place only to you. I will definitely make homemade ham.
I'll buy some meat later. I’ll leave the smoked ham in the refrigerator until “moment X” or freeze it, and cook it 3 days before the New Year. Before the feast, all that remains is to cut the meat into slices and serve.

Cooking:
Take 3 eggs, boil them hard boiled and cool.
Onions must be cut into rings and marinated well in a special marinade (20 minutes). A marinade can be made from vinegar, water, and sugar.
Now peeled eggs, pickled onions, crab sticks, rice and corn must be passed through a meat grinder. Then add mayonnaise and mix well (mayonnaise must be fat, otherwise the resulting mass will fall apart).
There are different ways to decorate appetizers.
The easiest is to roll the usual even balls and roll them in coconut or grated cheese.
You can arrange a snack in the form of a snowman, or you can connect your imagination.
To decorate a snack in the form of a Snowman: make 3 balls from the resulting mass: one is large, the other is smaller, and the third is the smallest. Roll these balls in coconut flakes (anything you like can be used instead, depending on your taste, for example, I use cheese). Boil a carrot and cut it out in the shape of a bucket - this will be the snowmen's hat. And the black eyes of snowmen can be made using black caviar (not necessarily real, you can use imitation) or olives, cut to size and shape.

Zucchini ratatouille rolls

Ingredients:
1 medium zucchini
1 large bell pepper
Half an onion
3-4 tomatoes
2-3 eggplant
1 garlic clove
3 tablespoons olive oil
Salt to taste
0.5-1 teaspoon of Provence herbs
Green onions (as a tie)
Cooking:
Cut the courgette or zucchini into thin strips. Brush the strips with olive oil and grill over medium heat for 4-5 minutes. Remove from grill and cool.
Place a whole pepper on the grill. As soon as the skin turns black, transfer the pepper to a bowl and cover with cling film for 15 minutes. Remove the skin from the pepper and cut it into small pieces. Roast the tomatoes the same way. Remove the skin and finely chop again.

Ingredients:
1 medium cucumber
200 gr smoked salmon
400 gr curd cheese (Philadelphia, Almette, etc.)

Cooking:
Toast the bread in a toaster, cool and cut into cubes.
Peel the cucumber, cut lengthwise, remove the seeds with a spoon, cut into quarters.
Chop the dill. Mix curd cheese with milk, dill, if necessary, salt and pepper.
Cut salmon and sprinkle with lemon juice.
We put in glasses / glasses first toasted bread, cucumbers, curd cheese on top and finish with salmon. You can also sprinkle dill on top. Serve immediately, otherwise the bread will get soggy.

Jellied chicken in tomatoes


Ingredients:

Cooking:
Boil chicken drumsticks in lightly salted water with the addition of dill sprigs until cooked, cool slightly, separate the meat from the bones and cut into small cubes.
We need about 200 milliliters of broth, add the garlic passed through the press, bring to a boil, strain, add salt and pepper.
Dissolve the instant gelatin in the broth.
Cut the top off the tomatoes and carefully remove the core.

Ingredients:

  8. After about an hour, put the rest of the fruit in a baking dish and add more wine.
  9. 15 minutes before the end of frying, grease the goose with apricot-honey glaze.

Ingredients (for 8 servings):

  • 2 chickens
  • sea ​​salt and ground black pepper
  • 4 kg potatoes
  • 2 lemons or 3 limes
  • 2 heads of garlic
  • thyme, rosemary

  9. When the chicken is ready, remove the lemon and garlic. Peel the garlic, mash and rub the chicken with it, remove the rosemary leaves.
