Vegetable Stuffed Peppers: Vegetarian Recipe

The second important ingredient of the filling will be fried eggplant. Also, do not forget about spices, as they often play a key role in the preparation of vegetarian dishes.

Ingredients for Stuffed Vegetarian Peppers:

  • 2 large bell peppers;
  • bulgur 2 tablespoons;
  • water;
  • salt;
  • seasoning for meat or chicken;
  • vegetable refined oil;
  • 1 small eggplant;
  • 1 carrot;
  • 1 onion;
  • tomato optional.

Pour bulgur with hot water and cook until tender for 25-35 minutes.

Add previously boiled bulgur.
Add salt, spices to the chicken and Provence herbs.


Fill the peppers with the filling, and tomatoes, if the filling remains.


Put the pepper in the form, not forgetting the lids.
Pour water into the mold by 2 cm and bake for 1 hour until cooked at a temperature of 160 degrees on the middle shelf.
