Chopped liver cutlets. Chopped pork liver cutlets

Ingredients:

Any liver - 700-800 g.,

Eggs - 3 pcs.,

Starch - 4-5 tablespoons,

Garlic - 2 cloves,

Onion - 1 pc.,

Salt, ground black pepper, Provence herbs to taste,

Vegetable oil for frying.

The cooking method is very simple:

Wash the liver, dry it, remove the films and ducts. Soak in milk if you like. We cut into small pieces.

Finely chop the onion and fry until golden brown in a small amount of rast. oils.

Add eggs, squeezed garlic, fried onions, starch, salt, pepper, herbs to taste to the liver.

Mix well and let stand for 15 minutes.

Not everyone likes cutlets or pork liver chops because of one feature. The liver is bitter. In this step-by-step recipe with photos, you will learn how to make tender chopped pork liver cutlets without bitterness. The secret is very simple - you need to properly prepare the liver.

Chopped cutlets are good because even if the liver is not very soft, cutlets still turn out tender, juicy and tasty. That is, if you are not strong in cooking, then it will be easier to cook such cutlets than, for example, chops.

Cooking chopped liver cutlets takes about an hour, and this is taking into account the preparation of the ingredients.

Ingredients for the recipe for chopped liver cutlets:

  • pork liver - 350 grams,
  • milk - 250-300 ml,
  • salt - 1 teaspoon,
  • carrots - 1 pc.,
  • onion - 1 pc.,
  • eggs - 2 pcs.,
  • flour - 2 tbsp. spoons,
  • vegetable oil - for frying,
  • water - 1 glass,
  • dill and parsley - 1 bunch.

How to cook chopped pork liver cutlets:

1) First you need to get rid of the bitterness that pork liver gives. To do this, wash the liver and cut into pieces. It is best to cut when the liver is slightly frozen. Place the pieces in a deep bowl.

2) To remove the bitterness, you will need milk. Pour it into the bowl with the liver to completely cover the contents.

Leave in this state for 30 minutes. When the right time has passed, drain the milk. You can put the contents in a large sieve and rinse the liver with water. It's not obligatory.

3) Carrots are best grated on a fine grater. So it will be tastier and more tender.

4) Try to take a small bulb. Cut into small cubes with a knife. The smaller the onion, the better.

5) Beat the eggs into the bowl with the ingredients and mix everything thoroughly until smooth.

6) Add flour and salt. Stir the mass for cutlets.

7) The mass should not be too dry, otherwise it will simply turn out that the cutlet will fall apart during frying.

8) Pour sunflower oil into a hot pan. Make the fire not strong. Spread the mass for the liver patties with a large spoon into the pan. Important: start frying the cutlets only when the oil is hot. Fry the patties on one side, then flip over.

9) When all the cutlets are ready, wash the pan and pour a little water into it so that the bottom is covered by about 1 cm. Put all the finished cutlets into the pan and leave covered over low heat for 5-7 minutes. After stewing, the cutlets will become very soft and tender.

The liver is a useful product that should be in the diet of every family. If you don’t like it at home when fried or stewed, then a great solution would be to cook chicken liver cutlets. By choosing the right recipe, they can be made soft, juicy and tender.

According to the classic recipe, the composition of the dish includes simple accessible ingredients, including: carrots, 2 onions, salt, 900 g of chicken liver, 2 selected eggs, 120 ml of milk, 9-10 large spoons of wheat flour, a pinch of salt and a mixture of ground peppers.

  1. The liver is washed, finely cut and soaked in cool milk for half an hour.
  2. Carrots are grated with small cells, and onions are cut into miniature cubes. Happy owners of a vegetable peeler can take advantage of its functions.
  3. Prepared liver with onions are passed through a meat grinder.
  4. Carrots and eggs are added to the mass. Minced meat is salted and peppered.
  5. It remains to add flour and leave the mass to infuse for 20-25 minutes.
  6. Cutlets are spooned into a frying pan with hot oil and traditionally fried on both sides.

Recipe for cooking in the oven

The oven will make the discussed dish low-calorie. It will include: large potatoes, 570 g of chicken liver, onion, salt, a large spoonful of oatmeal, ground black pepper, 90 g of hard cheese.

  1. First, with the help of a special blender nozzle, oatmeal turns into crumbs. Then she chop onions, liver and potatoes.
  2. All ingredients are mixed. Grated cheese, salt, pepper or any other spices, grated on a fine grater, are added to them.
  3. Minced meat is laid out in silicone small molds.
  4. The dish is cooked in a hot oven for 20 minutes.

You can serve the dish with any garlic sauce. Decorate with green canned peas.

With added rice

White rice groats will make the cutlets more satisfying and nutritious. In addition to rice (1 cup), you will need to take: a pound of liver, salt, half a cup of wheat flour, a chicken egg, a pinch of a mixture of peppers, an onion.

  1. The liver with peeled onions, salt and peppers turns into a homogeneous minced meat.
  2. Rice is cooked until tender in salted water.
  3. Ready-made cereals, eggs and flour are added to the resulting mass. Its quantity may differ from the declared volume. Falling asleep flour, you need to monitor the density of the dough.
  4. Cutlets are fried in any fat in a frying pan without a lid.

Lush liver cutlets

Chicken liver cutlets in a slow cooker

Pots in a miracle pan always turn out to be less greasy than in a regular frying pan. In addition, the multicooker as a whole facilitates the cooking process. It will include: a pound of liver, a selected egg, a white onion, salt, 4 large tablespoons of wheat flour and the same amount of fatty sour cream, aromatic herbs. How to cook delicious liver cutlets in a slow cooker is described below.

  1. Peeled onions and liver are crushed with a blender.
  2. Sour cream, flour, salt, spices are added to the ingredients. After mixing, the mass is left in the refrigerator for 10-15 minutes.
  3. Formed cutlets are laid out in the oiled bowl of the device and cooked on both sides in the “Frying” program.

Served with ketchup.

With semolina

With semolina, the dish turns out to be more magnificent and soft. The recipe includes the following ingredients: 430 g of chicken liver, large onion, salt, selected chicken egg, aromatic herbs, 4 large spoons of semolina.

  1. The liver is thoroughly washed, gets rid of everything superfluous (films, veins), after which, together with pieces of onion, it turns into a homogeneous minced meat. It is convenient to do this with the help of a special nozzle of a blender or a meat grinder.
  2. Semolina, seasonings, salt and a chicken egg are immediately added to the resulting mass.
  3. After thoroughly mixing the ingredients, they are left for about 15 minutes. During this time, the cereal should swell.
  4. It remains to fry the products on both sides until golden brown.

From the indicated amount of ingredients, about 15-17 small cutlets are obtained.

With mushrooms

Mushrooms go well with chicken liver. For cutlets, it is best to use champignons (420 g). From the products taken: 920 g of liver, 2 medium onions, a large spoonful of sour cream, salt, dried dill, 80 g of hard cheese, 2 selected eggs, 3 large spoons of wheat flour.

  1. Mushrooms with onions are peeled and cut into small pieces. These components are fried in well-heated oil until tender, after which they are cooled.
  2. Hard cheese is rubbed on a grater with large cells.
  3. The liver is cleaned, cut, doused with boiling water. After draining the water, the meat also cools.
  4. The two masses are mixed, dill, salt, cheese, sour cream and wheat flour are added to them. After kneading, the minced meat is removed for half an hour in a cold place.
  5. When the specified time has elapsed, you can start frying the cutlets. They are laid out in a pan with a spoon and lightly crushed.

Serve with any spicy garlic sauce, such as those made with unsweetened yogurt, chopped herbs, and granulated garlic.

With rice - a la meatballs

Such cutlets can be sculpted in different shapes. Or make them flat standard or roll them into balls to make delicious meatballs. A ready-made dish of any shape will surely appeal not only to adults, but also to the smallest members of the family. They are prepared from the following products: a pound of chicken liver, a large chicken egg, a white onion, a pinch of aromatic herbs, a large spoonful of potato starch, 160 g of rice, salt.

  1. Rice is boiled in salted water until tender.
  2. The liver is thoroughly washed, gets rid of all blood vessels and films, after which it is ground with a blender.
  3. The onion is peeled and cut into small cubes.
  4. A chicken egg, potato starch, a vegetable, aromatic herbs and salt to taste are added to the offal mass.
  5. It remains to pour the prepared cooled rice into the minced meat. If desired, you can grind half of the cooked cereal at the very beginning along with chicken liver.
  6. Small cutlets are formed from the resulting mass. They need to be fried in a small amount of fat on both sides.

Serve the treat slightly cooled, garnished with finely chopped greens.

Surprisingly simple and quick to prepare chopped liver cutlets, which will serve as a wonderful second course at your everyday lunch and even during a festive celebration! Believe me, your loved ones and guests will be delighted with such a dish!

To make chopped liver cutlets, you will need:

liver - 500 g
chicken eggs - 3 pcs.
starch - 4-5 tbsp.
onion - 1 pc.
salt, pepper and spices - to taste
garlic - optional

How to cook chopped liver cutlets:

1. So, we begin the preparation of our cutlets by thoroughly rinsing the liver, drying it (you can use paper towels for this), and then removing all films and veins. By the way, for this recipe you can easily use any liver (beef was used in this case).
After that, cut the liver into small (very small) pieces and put them in a separate bowl. You can also “chop” them slightly with a knife after cutting them into pieces.
2. Next, peel the onion and also chop it as finely as possible (or just rub it on a coarse grater). After that, add the onion to the liver and mix them together. Then comes the turn of chicken eggs (mix them with the liver-onion mass). If you wish, then it's time to add finely chopped garlic (1-2 cloves will suffice).
3. Do not forget to salt well and, if desired, pepper our minced meat, as well as add your favorite spices. Note that this time ground nutmeg and fragrant Provence herbs were used. At the end, add starch and mix everything well again. If you do not have starch, then you can easily replace it with the most ordinary wheat flour.
4. Leave the minced meat to brew for 10-20 minutes. After that, we send the pan to the fire and heat the vegetable oil on it (note that the pan and oil must be really well heated, otherwise the first batch of cutlets may stick to the pan). However, you should not pour a lot of oil in this case, so that the cutlets do not turn out to be too fatty.
5. Spread (pour) the minced meat into the pan (like pancakes) with an ordinary tablespoon and fry the cutlets on both sides until an appetizing golden brown is formed (after you turn them over for the first time, cover the pan with a lid).

Ready chopped cutlets, it is advisable to first lay out on a paper towel, and only then on a plate for serving. By the way, you can serve these cutlets with your favorite sauce, with vegetables or with a potato (or other) side dish. In this case, yogurt sauce (fresh herbs + regular yogurt + granular mustard + salt, pepper to taste) or the same chilled sour cream will be very well combined with them!

Today I want to offer you to cook chopped liver cutlets, let's take chicken liver as a basis. I also suggest adding some oatmeal, cheese and potatoes. Chopped liver cutlets are very tasty, with mashed potatoes - just delicious. Cutlets can be cooked both in a pan, fried in vegetable oil, and baked in the oven, I prefer the second option. When serving, you can add sour cream to the liver cutlets.

Chicken liver will be easy to cut if it is frozen. So, cut the liver into small pieces, put in a deep bowl.

Peel and rinse a medium-sized onion, cut into small cubes, you can also chop the onion in a blender bowl. Add onion to liver.

Pour oatmeal into a bowl. Oatmeal can be pre-ground in a blender or coffee grinder.

Peel and rinse potatoes, grate with medium chips. Add potatoes to all ingredients, also add hard cheese, grated with medium shavings.

Add salt and pepper to taste, mix well.

Preheat the oven to 180 degrees, prepare the molds - oil them a little. Fill the molds with cooked minced meat and put in the oven. Bake chopped liver cutlets for 25-30 minutes. After the specified time, remove the cutlets from the oven and serve.
