Peach Charlotte

First, turn on the oven to heat up to 180 degrees. At this time, start preparing the dough. Pick up a wide bowl and beat 4 large eggs into it. Add sugar and a pinch of salt to them. If you will be using medium or small eggs, then just increase the amount.


Beat the eggs in a homogeneous and fluffy mass for 5-7 minutes, so that there are no grains of sugar left. It is better to do this with a mixer using medium speed.


Add the sifted flour to the egg mass and mix the dough with a silicone spatula.


Add a pinch of cinnamon and vanilla sugar to the dough for charlotte, focusing on your taste. Add baking powder to make the cake fluffy and airy.


Line a springform pan with parchment paper, grease the bottom with butter and pour in the batter.

Wash the peaches, remove the pits and cut into slices or cubes. The skin can be removed if desired. Instead of peaches for charlotte, you can take apples, pears, plums or apricots. If you do not have fresh, but have frozen fruits, feel free to use them after defrosting them in the refrigerator. You can also cook charlotte with canned peaches and other fruits. Put the chopped fruits in random order on top of the dough and send to the hot oven to the middle position. Peach charlotte will be baked for 30-40 minutes.
