The basis of the cake for the cake will consist, as you understand, of cookies and butter, crush the cookies into crumbs in some container, add soft butter there, it is desirable that it lies at room temperature, then it will become soft. The resulting mass, spread in some form and put in the refrigerator to solidify the oil.
  2. Now let's prepare fruits or berries for a cake without baking, peel off everything that is not needed and knead with a fork or something else for a soft state.
  3. Cottage cheese must also be very well rubbed with a fork and mixed with sugar. Now we will divide the resulting cottage cheese into 2 equal parts, we will add berries to one part and mix well, we will leave the second part unchanged for now.
  4. Gelatin needs to be soaked, leave it aside to swell for about 15-20 minutes.
  5. The cream must be heated and brought to a hot state and add our swollen gelatin and mix well, but they cannot be boiled in any way, because. in boiling water, gelatin loses many of its properties.
  6. The gelatin was dissolved, now we pour half of this mixture into cottage cheese with berries, and we pour the second part of the cream into simple cottage cheese, mix everything well.
  7. We take out the base of the cake from the refrigerator, we have two curd masses, now they need to be laid in layers so that the cake without baking turns out beautiful.
  8. If you do not want to mess around, then you can add a berry-curd mixture to the top of the cake, smooth it, and on top of the other, the curd mixture.

We put the cake in the refrigerator for 2-3 hours to solidify the gelatin and our no-bake cake is ready! A very simple no-bake recipe, isn't it?!

A thin layer of crushed biscuits and a wide layer of creamy mass based on cottage cheese are preserved here. But in this case, we do without the help of the oven, adding gelatin to the filling and thereby greatly simplifying the process and reducing the cooking time. To make the filling very tender and “silky”, we use the ratio of cottage cheese and sour cream one to one.

A no-bake cottage cheese cake with gelatin and cookies is lighter than biscuit cream products. It perfectly copes with the role of a homemade dessert in hot weather, and when beautifully decorated with berries / fruits, it instantly transforms, becomes elegant and solemn, worthy of an important event. And all this without any hard work on our part!

Ingredients:

For the base:

  • shortbread cookies - 200 g;
  • butter - 100 g.

For the curd layer:

  • cottage cheese - 400 g;
  • sour cream 15-20% - 400 g;
  • gelatin powder - 10 g;
  • sugar - 120 g;
  • vanilla sugar - a bag (8-10 g).

For registration:

  • cake jelly - 1-2 sachets;
  • a mixture of berries or fruits (raspberries, blueberries, peaches, etc.).

  1. We make the base. We crush the cookies with a blender to the state of flour, pour into a convenient working bowl. Any brittle biscuits are suitable for the recipe - sweet crackers, "Jubilee", "Maria", etc.
  2. Melt butter. After cooling, pour sand crumbs.
  3. We mix the mass, soaking all the grains of cookies with an oily liquid.
  4. We take a detachable form (in this example, a container with a diameter of 22 cm is used), for convenience we lay the bottom with parchment paper. Pour out the oiled crumbs. Spread evenly and tamp with your fingers to get an even layer of the same thickness.
  5. Let's start preparing the curd layer (while we put the form with the base of the cake in the refrigerator). We combine cottage cheese, sour cream, all sugar, including vanilla, in one bowl. We rub with a submersible blender until perfect smoothness, the disappearance of all curd lumps and sugar grains. Cottage cheese for the recipe is suitable for any fat content, but it is better from 5% and above, as well as fine-grained.
  6. Soak gelatin in 100 ml of cold water, let the granules swell. The swelling time depends on the specific gelatin - instant gelatin takes 10 minutes, the usual one takes 40-60 minutes (see instructions on the package).
  7. We heat the swollen mass until the granules are completely dissolved. A simple and convenient method is to place a bowl of gelatin in a bowl of hot water and actively mix the composition until a homogeneous liquid is obtained. You can warm up the mass in another way (microwave, stove, “water bath”), just do not forget that gelatin cannot be boiled!
  8. After cooling slightly, pour the dissolved gelatin into the curd cream in a thin stream. All the time, we actively mix the mass with a hand whisk so that the gelatin composition is evenly distributed.
  9. We take out the form with the base and fill the layer of cookies with the curd mixture. We put it in the refrigerator until the light layer solidifies (it will take 2-4 hours).
  10. The frozen dessert is arbitrarily decorated with berries or fruits. In our example, pieces of canned peaches, raspberries and blueberries are used (other additives can be used).
  11. Following the instructions on the package, prepare the jelly and first fill the fruit and berry platter with a small amount. We remove the dessert in the refrigerator so that the jelly layer “grabs” and fixes all the additives. Then fill the cake with the rest of the jelly, return to the refrigerator shelf.
  12. After waiting for the final solidification, we release our product from the mold - carefully draw a knife along the walls, remove the split board. We transfer the dessert to a dish, if desired, supplement with mint leaves.
  13. Cottage cheese cake without baking with gelatin and cookies is ready! Cut into portioned segments.
