Delicious cream cheese soup with mushrooms

Guess what can be cooked from mushrooms, potatoes, processed cheese, carrots and onions? That's right, a very tasty and nutritious soup of mushrooms and processed cheese from summer resident Maria. Children love this soup, especially with homemade crackers. But first things first.

In the summer, there are a lot of troubles and worries in the country. There is no way to really bother in the kitchen. And then dishes that are quick and easy to prepare come to the rescue. So, this soup is one of the quick miracle recipes. It's very quick and easy to prepare! Judge for yourself.

For the soup we need:

  • water - 1.5 l;
  • potatoes - 4-5 pcs.;
  • carrots - 1 pc.;
  • onion - 1 pc.;
  • mushrooms - 3-4 pcs.;
  • processed cheese - 1 pc.;
  • vegetable oil - 1 tbsp. l.
  • butter - 1 tsp. a spoon;
  • salt, peppercorns, bay leaf;
  • greens.

Cooking cream cheese soup with mushrooms

First of all, we send processed cheese to the freezer. For what it needs to be done, I will tell a little later.

Soup really cooks very quickly if you know the correct cooking sequence. So, put a pot of water on the stove - 1.5 liters is enough, bring the water to a boil. In the meantime, in parallel, peel the potatoes, cut them into cubes. My potatoes are old, still harvested last year, so I can’t cut them into identical cubes. But it will not affect the taste of the soup, I assure you.)

As soon as the water in the pan boils, reduce the heat, add salt, send potato cubes, a piece of butter into boiling salted water, cover with a lid and simmer over low heat for about 10-15 minutes.

In the meantime, let's get roasting. mushrooms and carrots are prepared in advance and frozen in the freezer. If you have fresh vegetables, quickly peel them, cut the mushrooms into plates, three carrots on a coarse grater. Peel the onion and cut into cubes. We heat the pan, pour vegetable oil, send mushrooms there,

fry for 3 minutes, add onion,


fry, then carrots.


Fry vegetables until tender.


It's time to take our processed cheese out of the freezer. Now it must be peeled off the foil and can be easily grated on a coarse grater. Isn't it much easier to do this when he's a little frostbitten?


Did you forget about the pot of potatoes? Send black peppercorns, bay leaf, ready-made vegetable frying, processed cheese into it. Mix everything thoroughly.


Salt the soup if necessary. Greens are more suitable for such a soup - dill and parsley in equal proportions. I only had green onions on hand, which I finely chopped and added to the saucepan.


Everything! You can remove the pot of mushroom soup from the heat. It is better not to serve such a soup to the table, as they say, with heat, with heat, but it is better to let it brew or, as many joker cooks say, "give the vegetables time to make friends."

The soup turns out to be so tasty that it does not need advertising and is liked by all children without exception. Especially if you serve it with homemade crackers. Don't worry, these croutons cook so quickly that you won't even believe it!

We take a loaf, cut it into squares, strips, etc. I had two buns from a loaf, and I cut them in a hurry "as I could."


Now the "magic": pour a couple of tablespoons of vegetable oil (in my case, refined sunflower oil) into a heated frying pan, throw a good pinch of salt and 0.5 teaspoon of some seasoning into the boiling oil. For example, "For meat dishes", "Provencal herbs" or, in the end, "Paprika" or "Hmeli-suneli". In general, what is in the house at the moment. Please note that if the seasoning contains salt, then do not put additional salt!


We quickly send our sliced ​​\u200b\u200bbread to the pan, quickly and quickly interfere, a couple of minutes and you can transfer the croutons to a plate.


Ideally, you need to dry such crackers for 10 minutes in the oven or 40 seconds in the microwave. But I assure you - these are unnecessary body movements, without which it is quite possible to do!

Scatter the soup into plates with a ladle, serve croutons in a separate plate ... we call the whole family, we accept enthusiastic oohs and aahs! Mmm, yummy! It is a pity that I am a useless photographer - no matter how hard I tried, the final photo did not convey all the colors and aroma of the cooked dish. But take my word for it - the soup and croutons turned out excellent!
