I propose to cook delicious dessert for the whole family - kefir ice cream. Especially such ice cream will come in handy in the warm season, when it is unbearable heat outside, and cold kefir ice cream is in our refrigerator. This homemade recipe is pretty easy to make. The longest process is cooking soft cheese from kefir. It can be prepared ahead of time.

Ingredients for kefir ice cream:

  • Kefir 3.2% 1 l
  • Chocolate black 100 g
  • Powdered sugar 3 tbsp
  • Fatty cream 150 g
  • Lemon juice 1 tbsp (optional)

Recipe for making ice cream from kefir at home:

1) To make soft cheese, we need fat yogurt. If possible, take home. If not, get a quality yogurt from the supermarket with a 3.2 percent fat content. Without opening the package, send to the freezer until completely frozen. This step is best done at night. After the bag of kefir is completely frozen, remove it from the freezer, cut the bag with scissors and remove it. Take a sieve or colander, cover with gauze. Put frozen kefir. Leave until completely defrosted. Place a container under the bottom of the colander to drain the whey. One liter package produces about 300-400 g of cheese and 500 ml of whey. Whey can be prepared fluffy pancakes or thin pancakes.

2) Take fatty cream for dessert, with a fat content of more than 30%. Place cold cream in a deep bowl. Add powdered sugar. Whisk gently with a whisk until thickened.

3) Add thawed cream cheese to whipped cream. Stir gently until smooth.

4) Separately, melt the dark chocolate in a steam bath. Cool to room temperature. Add to buttermilk. Pour in lemon juice, if desired. Stir with a spatula.

5) Place the creamy mixture in a convenient container with a lid and send it to the freezer until completely frozen. Ice cream can be consumed frozen or immediately after preparation as a soft creamy dessert.

Recently, a recipe for making ice cream from kefir, banana and honey caught my eye. This composition puzzled me a little, but I still decided to try it, what could come of it? The result was unexpectedly pleasant.

You definitely cannot buy such banana and kefir ice cream, the products are simple and natural, and the dessert itself is quite light and refreshing.

For cooking we need:

  • kefir 2.5% - 300 ml
  • bananas without peel - 300 gr
  • honey - 2 tablespoons

Bananas, peeled, grate on a coarse grater.

Add kefir and honey and stir with a blender until smooth.

Honey can not be added all at once, but in parts. not to be too sweet.

Now this mixture needs to be poured into suitable molds for solidification.

I decided to use small plastic cups and fork-shaped canapé skewers to make something similar to a popsicle.

We wrap the cups in foil and with its help we fix the skewers in the middle of the cup with the ice cream mixture. We put it in the freezer overnight.

In the morning we take it out, unfold the foil, lower the glass for a few seconds. hot water(that's why you can't take glass molds - they can crack due to temperature differences) and easily shake out our ice cream on a plate.

Now it can again be wrapped in foil and stored in the freezer. In fact, it turned out that eating it on such a stick and in such a form is not very convenient, so you can simply freeze it in portioned forms and eat it with a spoon.

It is not quite the same as store-bought, it is like a delicious “snowball”, because it contains practically no fat. But it is so pleasantly refreshing and cooling that in the heat of 30 degrees it was just a salvation.

The next day I made a large portion, added a little mint and a teaspoon lemon juice and froze in disposable glasses. Now I often cook such homemade banana and kefir ice cream in the heat.

In general, you can add anything to such ice cream. For example, chopped nuts and chocolate, or some fresh berries.

Ingredients for 4 servings:

  • kefir - 1 liter;
  • black chocolate - 75 gr.;
  • cream 33% - 130 gr.;
  • lemon juice - 1 tbsp. spoon;
  • powdered sugar - 3 tbsp. spoons;

Cooking:

This ice cream requires a little prep to make. We need to completely freeze the kefir and then completely defrost it to get a delicate cream cheese. I take kefir with a fat content of 3.2%. Right in the package I put it in the freezer for 12 hours. Kefir should be natural, thick and tasty.

In the evening, we cover the sieve with clean gauze in 2 layers and lay out completely frozen kefir. We leave at room temperature. In the morning you will have a delicious, tender cream cheese with a slight sourness. From 1 liter of kefir I get 300 grams of cream cheese.

We put the cream and the dishes in which we will whip them, as well as the nozzles for the mixer, in the refrigerator for an hour. Then whip the chilled cream with powdered sugar to volumizing and persistent shiny peaks.

Then, continuing to beat, we gradually introduce kefir cream cheese into the cream.

Melt dark chocolate in a water bath.

Add melted chocolate to the cream, beat.

We put the finished cream - ice cream into ice cream cups or into a container and send it to the freezer for 3 hours. This ice cream can be made without an ice cream maker.

Often, when parents eat something tasty, but forbidden for a baby, such as ice cream, they also want to cook a delicious dessert. It is not difficult to do this, we will prepare homemade children's ice cream from kefir!

All the ingredients are simple and the recipe is very easy.

To get started, prepare all the products and utensils for baby ice cream - a bowl and a blender. And then get started. Such ice cream can be prepared with children. To prepare ice cream from kefir, allocate about 30 minutes of time. And then for 4 hours, just whisk every hour and that's it.

Ingredients:

kefir - 1 cup
banana - 1 pc.
honey - 2 tbsp. spoons
cherry in own juice- optional

Kefir ice cream for children, recipe:

Peel the banana and cut it into large rings. Put the banana in a convenient, deep bowl.

Add honey to chopped bananas in a bowl. If your honey is candied, then it does not matter. Melt it in a water bath. But it is better, of course, to use high-quality natural honey.

Now, using a blender, grind bananas with honey until smooth.

Add kefir to the banana mass and grind again with a blender. The mass should not contain pieces.

Add some cherries in their own juice to the ice cream mass and grind again with a blender. Cherry will give the ice cream an interesting color and a pleasant sourness, as a banana with honey will give a sugary sweetness.

The mass for ice cream is ready.

Cover the ice cream bowl cling film and put in the freezer.

Take out the bowl every hour and beat the mass for several minutes with a blender. Then clean again and so on 4 times. After that, the ice cream will be ready.

Serve with cherry juice and garnish with whole cherries. Children will definitely appreciate such a delicious dessert made from healthy ingredients.

To prepare kefir ice cream with a banana, you need kefir, bananas, honey or granulated sugar.


Ripe bananas are suitable for ice cream, you can even take very soft ones, in which the skin is covered with black or brown spots. Such fruits are the most fragrant and sweet.

Remove peel from bananas. Cut the pulp into slices and place in a deep container.



Pour honey according to your taste. If the honey is thick, then it must be heated in a water bath.



Pour kefir.

If possible, it is better to use fermented milk product home production or buy on the market from a trusted milkman. If you are on a diet, use fat-free kefir, which can be bought at the nearest supermarket.

Pour the kefir mass into molds. From this amount of products, I got 9 portion molds.

Send to the freezer until completely frozen - about 3-5 hours, depending on the power of your equipment.
