Like so many of our favorite recipes, this soup leaves the housewives room for imagination: the main thing is to make cheese balls so that the idea is not lost, but otherwise you can put whatever your heart desires in it :) In the video, we showed a variant of this soup, suitable us.

Let's start with the manufacture of the cheese balls themselves: rub 100 grams of cheese (any) on a fine grater. add 70 grams butter room temperature and stir it into the grated cheese. Add one egg and mix well. Add your favorite seasoning to the balls (I had Caucasian herbs at that moment), three tablespoons of flour and mix. You can add salt, but do not forget that the cheese is already salty. If it turns out watery and the dough sticks to your hands, then just add flour until you get such a consistency that balls can be rolled out of the dough. Cover bowl with dough cling film Or put in a bag and refrigerate for 30 minutes. To prepare the soup, we need a broth - any, to your taste. I always have it in the freezer. We put it to boil (I had about 2 liters) and prepare vegetable stuffing soup. Three carrots on a large grater. onion and bell pepper cut into small cubes. We send vegetables to fry on vegetable oil. While the vegetables are fried and the broth boils, cut the potatoes into cubes. For 2 liters of broth, I took 5 small potatoes. Put the potatoes in the boiling broth. When the vegetables are almost fried, add to them the same seasoning that was added to the cheese balls, and black pepper (you can not add it or take any other pepper you like). When the seasonings have warmed up a little with the fried vegetables, you can put them in the soup. Now we take the dough out of the refrigerator and make balls the size of hazelnuts out of it (they will increase greatly in the broth). Wet hands with water during the process if the balls stick to hands. This is the longest moment of cooking this soup, which requires patience, endurance and self-control so that the balls remain consistently small :) We send them one by one to the soup and leave to cook for another 10-15 minutes. And at this time, cut the dill or any other of your favorite herbs. You can put whatever your heart desires in this soup - the main thing is to make cheese balls so that the idea is not lost :) We send dill to the soup. It remains to salt, stir and the soup with cheese balls is ready :)
