To do this, pour sugar into thick sour cream and stir occasionally until the sugar is completely dissolved. I put the finished cream in the refrigerator.

We take the dough out of the refrigerator. We roll each piece between 2 layers of parchment, attach a lid or a dish and cut it out with a knife.

We transfer the parchment with the blank and trimmings to a baking sheet and bake in an oven preheated to 180 degrees for about 5-6 minutes. Remove the baked cakes directly from the parchment from the baking sheet and transfer to the table to cool. After cooling, remove the parchment.

How to make a honey cake without eggs at home - a step by step recipe with a photo

  1. The classic honey cake is prepared in a custard way, in a water bath. Therefore, prepare two pans of a larger and smaller diameter. Pour water into a large one and bring it to a boil.
  2. Place the butter, sugar and honey in a smaller saucepan and send the mixture to a boiling water bath.

  3. Butter, honey and sugar should be well melted and warmed up. Now you need to add soda and sour cream and heat the mixture for another 2 minutes, stirring.

  4. Add 1 cup flour to the mixture and mix batter homogeneous consistency directly without removing from the water bath. Let it warm up for a few minutes.

  5. Remove the dough from the water bath and knead a thick dough with the remaining 3 cups of flour. The dough should form well and come off your hands.

  6. Divide ready dough into 7-8 equal balls, place each in a separate bag (wrap cling film) and refrigerate for 20-30 minutes.

  7. Meanwhile, preheat the oven to 190 degrees.
  8. Then take out one ball of dough and roll it out 3-4 mm thick directly on the baking paper. If you want a round cake, then use a plate of a suitable diameter to cut out the circle along the outline. Remove excess dough before baking. Make holes with a fork.

  9. Bake the cake crust on a baking sheet for about 5-7 minutes. The crust should be a nice golden color.

  10. Allow the cake to cool quite a bit and soak with a pre-prepared cream.

  11. Then bake the next cakes. After the cake is ready, it must be put on the cake already soaked in cream and soaked in the same way. Sprinkle the last cake with crumbs from the cakes or walnuts.

  12. Can be fried upon request walnuts and finely chop them and sprinkle each cake with nuts - it will turn out even tastier.
  13. Let the finished honey cake soak for 4-6 hours. This is an amazingly delicious cake.

  1. Sour cream is one of the simplest creams. You need to mix sour cream with sugar and vanilla. The cream is ready.
  2. Important! Do not beat sour cream with a blender / mixer. There is a danger that the serum will separate from the protein and the cream will exfoliate.
  3. To make sour cream less high-calorie, replace half of the sour cream with non-sour cream. However, it is very necessary thick yogurt, so 800 ml. homemade yogurt place in several layers of gauze and hang over the pan - excess liquid will drain and the yogurt will turn out thicker.

Step 1 Preparing the Dough Liquid

In a deep bowl, mix sugar, butter, milk, salt and honey.

Place the cup on the steam bath. Honey and butter will become softer, sugar will dissolve and you will get a homogeneous liquid with a temperature of about 50 degrees

IMPORTANT!!! For this recipe you need to use buckwheat honey or other honey with a sharp taste and smell. The more flavor honey has, the tastier your Vegetarian Eggless Honey Cake will be.

Step 2 Preparing the Honey Dough

Sift flour mixed with baking soda into a deep bowl.

Add the liquid that we prepared in a water bath to the flour.

Mix well. You should have a dough that will stick to your hands.

Cover with a plate or cling film and set aside for 20-30 minutes



Step 3 Preparing the cake layers

After 20-30 minutes, the dough will become a little thicker and will stick slightly to your hands.

Take a piece of dough, knead 2-3 times and roll out parchment paper cake 0.4 cm thick. If the dough sticks, then sprinkle paper and rolling pin with flour.

Attach a measured form to the cake (I used the bottom of the form, you can use the lid). The size of the form depends on your desire. The smaller the form, the more cakes will turn out and the cake will be higher.

Use a knife to cut off the pastry that protrudes from the edges.




Step 4 Baking the cakes

Send the cakes to the oven preheated to 175 degrees for 5-7 minutes. Do not overcook the cakes in the oven.

The cake should be soft, the edges slightly hard.

Take out the cakes and lay them out on an open surface to cool. At the end of baking, you will have a piece of dough left.

Make a shapeless cake out of the dough and bake it too. Next, we use this cake as a decoration.

When the cakes have cooled, cut off the edges of the cakes no more than 0.3 cm (the hardest part). This must be done without fail, then our cakes will be better saturated and will not be hard.



Step 5 Preparing the cream

While the cakes are cooling, mix cold cream in a deep cup, powdered sugar and vanillin.

Beat with a mixer until standing peaks and until the cream becomes opaque.



Step 6 Assemble the honey cake

Place one cake on a plate or cutting board.

Lay the cream with a thickness of 0.5-0.7 cm. Lay the next cake, cover with cream.

Repeat until all cakes are gone.

Spread the cream on the surface and on the sides

Put the cake cuts and the last small cake on a baking sheet and put in the oven for 20 minutes at a temperature of 120 degrees.

Sprinkle the crumble over the top and around the edges of the cake. Cover the cake with a large cup and put it in a cool place for at least 3-5 hours.

ATTENTION!!! It is important to cover the cake with a cup for 3-5 hours. During this time, the cake will be saturated with moisture from the cream and become softer.

Medovik itself is a very simple cake, but this elegant simplicity hides the charm of a win-win classic. Previously, I rarely managed to find a delicious honey cake in pastry shops, all sorts of variations of which seemed unbalanced. Then I decided to bake a honey cake myself and failed. Failure forced me to postpone the venture for a while, but one day I decided on it again. The result exceeded my expectations so much that I considered it a coincidence, luck or a miracle. On the 10th or 20th time of cooking, I was convinced that the recipe is perfect, and now I can share it with you! May the honey joy be!
For cooking we need:

For cakes:

  • 35 g sour cream
  • 150 g sugar (about 2/3 cup)
  • 80 g softened butter
  • 3 art. l. liquid honey
  • 2 tsp slaked soda
  • 2.5 st. sifted flour

For cream:

  • 500 g sour cream 20%
  • 500 g cream 33% or more
  • 2 tbsp. l. boiled condensed milk
  • 2 tbsp. l. honey

Cooking

  1. In a saucepan, lightly beat sour cream with sugar, add butter, honey, soda to them, put in a water bath and heat to a uniform consistency. The mixture will darken slightly and increase in volume.
  2. Remove the saucepan from the heat and add the sifted flour. Knead with a spatula into a smooth, not stiff dough. Now it should cool down and rest for about half an hour.
  3. Let's prepare the cream. Whip the cream and gradually add sour cream to them. Then we put boiled condensed milk, honey there, beat everything well and put it in the refrigerator.
  4. Preheat the oven to 200°C. Cooking paper for baking. Sprinkle a sheet of paper with flour, pinch off a piece of dough (about the size of a palm), sprinkle it with flour a little, roll it out on paper into a layer 5-6 mm thick and then cut it into a round shape of the selected diameter. For a diameter of 16 cm, you should get about 8-9 cakes. We bake cakes for 3-5 minutes, depending on the power of the oven. We carefully monitor the process, because the dough is baked very quickly and can easily burn.
  5. We cool the finished cakes on a wire rack, and then generously coat with cream and put in the refrigerator for a couple of hours at least. We are not afraid if at first the cakes seem a little dry: in the refrigerator they will fluff up and become airy.

How to cook honey cake without eggs - recipe:

  1. Honey dough is prepared very quickly, so it is better to prepare all the products for it right away.
  2. So, combine butter with honey and sugar in a bowl. We put the bowl in a water bath (in a saucepan with water) and heat until everything dissolves. We do not bring to a boil.

  3. Continuing to heat the mixture, put sour cream, 1 cup (150 g) of flour and stir.
  4. We pour citric acid with baking soda and stir again.
  5. Now remove the resulting honey mixture from the heat and leave to cool for a while. Then add the remaining flour and knead a soft elastic dough.

  6. We make five identical koloboks from the dough and wrap each one in a bag. We send them to the refrigerator for half an hour.

  7. Cut off a piece of baking paper and roll out one ball of dough into a thin layer on it. Then we take a lid with sharp edges and put it on top of the rolled layer. We press. Remove any dough that comes out of the lid.

  8. We remove the cover. With the help of a fork, we prick all over the cake at a small distance from each other.

  9. We transfer the paper with the dough to a baking sheet and put it in an oven preheated to 180-190 ° C to bake for about 5 minutes. At this time, roll out the next layer. When the cake, which is in the oven, is browned, we take it out, but do not remove it from the paper yet, let it cool a little first. Thus we bake all the remaining cakes.

  10. We collect the scraps of dough and roll out a full-fledged sixth cake, and from the leftovers - a small seventh, which we use to sprinkle the honey cake. We also bake them in the oven.

  11. We leave the cakes to cool, and we ourselves will deal with sour cream for a honey cake without eggs. To prepare it, you just need to combine sour cream, sugar, salt, vanillin and stir with a spoon until smooth.
  12. We layer the cakes with cream and grease the sides of the cake, and sprinkle the honey cake with chopped small cakes on top.
