LET'S CONSIDER in more detail Composition of cookies Yubiliynoye
Sodium bicarbonate - baking soda.

Sodium pyrophosphate - food supplement under the code E450, approved for use in food products, used as a baking powder, as well as to slow down the oxidation process food products. Overuse phosphate can lead to osteoporosis.

Palm oil is the cheapest and least valuable of all vegetable oils. According to nutritionists, it is quite difficult to digest, especially by the children's body. Experts agree that in children, palm oil makes digestion difficult and can lead to a decrease in bone mineralization.

Another important point. The biscuits appear to be made from hydrogenated palm oil, which are trans fats that are now recognized as dangerous.

Many countries around the world have banned the use of trans fats in school canteens and restaurants. According to doctors, the consumption of hydrogenated fats should be no more than 1 g per day. In most countries, food manufacturers are required by law to list the proportion of trans fats on packaging.

Russian legislation does not provide for specifying whether vegetable oil is hydrogenated, and also does not oblige the manufacturer to indicate the proportion of trans fats in the product. If we look at the composition of cookies, then palm oil is in third place, which means that its amount is not so small. Housewives know from experience how much butter is consumed when baking any cookie. And if we assume that it is hydrogenated oil that is used, then its amount in 100 g of cookies is much more than 1 g.

Emulsifier soy lecithin- food additive E322. Emulsifiers create a homogeneous mixture of immiscible ingredients such as water and fat. Lecithin is extremely important for the normal functioning of the human body. However, it should be borne in mind that soy lecithin can be isolated from genetically modified raw materials.

Citric acid - E330. This nutritional supplement can be both natural and artificial origin. AT Food Industry used to protect food from oxidation, rancidity and discoloration. Some people are quite sensitive to citric acid.

According to nutritionists, cookies alone are not the best. the best option for breakfast, especially for children. In what quantity to use cookies - everyone will determine for himself.

BE HEALTHY!
In fact, this is a typical recipe, well, except that there is a little less “chemistry”. If you bake at home, it will probably turn out less harmful. But it seems to me that the quality of the ingredients, the same butter, milk, sour cream, also leaves much to be desired.

exists.

I tried this cookie. I won’t say that any childhood memories are also associated with it, because, like oatmeal, I don’t remember it :) I began to communicate closely with Yubileiny only in the 2000s.

These are history cookies. It was first baked in 1913 on confectionery factory to the 300th anniversary of the Romanov dynasty, which is why it is called "Jubilee". In 1920, this factory was renamed "Bolshevik". Biscuits received a second birth in 1967, and now it has already been timed to coincide with the anniversary of October. Since that time, it could, in principle, be baked at any Soviet factory according to an officially approved recipe.

Recipes for cookies, biscuits and waffles. M, 1969.

In 1992, the Bolshevik factory became owned by Danone. Since 2007, the Yubileinoye brand has been owned by Kraft Foods Inc, and since 2013 Mondelēz International has become its owner. This company is the result of the division of Kraft Foods Inc, now it owns such brands as "belVita", "Oreo", "Alpen Gold", "Milka".

Businesses not affiliated with Mondelēz International are not allowed to produce biscuits and chocolates with the names listed above. That is why other variants of names are now sometimes found (for example, cookies "Happy Anniversary"), and cookies with the name "Jubilee" produced at any other factory are considered counterfeit products.

Based on the Soviet recipe, I calculated the following proportions of ingredients for myself:

620 g flour premium
45 g cornstarch
180 g powdered sugar
25 g of invert syrup; warm before use (you can replace about 20 g of starch syrup or take 10-15 g more powdered sugar)
210 g butter(original margarine).
22 g whole milk
30 g melange (or 1 very fine egg, i.e. it is desirable that the mixture "protein + yolk" has about the same weight)
4 g vanilla sugar (it is better to crush or take 1 g of vanilla essence)
4 g fine salt (also better crushed and sifted)
6 g baking powder

ATTENTION! Recalculation of flour and liquid is required: Since Soviet times, the moisture capacity of flour has changed, so either you need to reduce its amount, or take about 1.5 times more liquid, in this case milk.

There seems to be nothing special in the recipe, but here technology matters! Anyone who reads my latest articles carefully should have noticed that sometimes recipes need to be looked for in some official documents, and cooking technology in others. Even having found the proportions of the ingredients, I could not bake such cookies until I found out exactly how they should be prepared.

The main thing - do not knead the dough for a long time!

1. Softened butter whip with powdered sugar. This is the longest stage of all: the mass should have a creamy texture.

2. Gradually add milk, egg and other ingredients, except flour and starch (stir at each stage; if cooking with household appliances, then do not stop stirring at a slow speed).

3. Add flour, sifted with starch and baking powder, and mix (briefly) until smooth.

The allowable temperature for such a test is 20-24 C, so after forming it can be allowed to stand for just a few minutes.

4. Roll out the resulting dough on a floured surface. about 5-6 mm thick, cut out round, oval, square or rectangular cookies (you can use curly notches or rolling pins). Single weight ready-made cookies- about 10-12 years.

I used a square notch with a wavy edge (6.5 cm) and another smaller one to make a light impression on the surface. True, because of this, the cookies were slightly swollen in the center during baking.

It may seem that the dough cannot be rolled out into a thin layer at all, so, for example, I did not take risks and gently rolled out literally piece by piece, cutting out 1-2 cookies.

I don't know what that kind of dough really should be. In addition, everyone understands that home opportunities differ from production ones. For example, I mixed everything with my hands, without mixers. If I had time to experiment, I would know and tell more about it.

5. These cookies are baked literally 3-6 minutes at a temperature of 190-230 C. If there is a pattern on the surface of the cookies, then the baking temperature should be higher and the time should be shorter.

About taste. I trained on cats, as always :) I asked them to say if this cookie reminded them of anything. After my son's answer, I was in a culture shock: "It looks like what we once bought in a store - a rectangular one, in packs." "Once upon a time" - this is about 10 years ago, and "rectangular in packs" we bought only "Jubilee". "Round in packages" - it was oatmeal, I already showed it (see photo).

Probably many are familiar with the taste of Yubileinoye cookies, and if not, then it's time to get to know him.

As a child, my mother often bought these cookies, because they are tasty and not expensive. And this is probably why, if they ask me: "What cookies do you associate with childhood?", then I will certainly answer: "Jubilee". And although the manufacturer produces other formats no less delicious cookies(for example, "Morning"), I will always associate "Anniversary" with this particular package.

Although I prefer the same cookies, but only with chocolate icing, my mother always bought traditional ... But what can I say, she still buys) Cookies are especially tasty if you dip them in tea, I just eat them that way.

The composition is not the best, but good enough, especially in relation to the price. They also write that without the addition of dyes and preservatives, and this is good news!

Ingredients: wheat flour, sugar, vegetable oil, water, corn starch, glucose-fructose syrup or invert syrup (sugar, water, acidity regulator, baking powder, salt, flavoring, emulsifier (soy lecithin), egg product, vitamin and mineral complex.

Cookies cost 20 rubles. in "Yes". And what is most remarkable and pleasant is that six years ago it cost about the same and no crisis is subject to it.

There are 8 standard sized cookies in a pack. They are sweet in taste. Sometimes you buy cheap Soviet biscuits and break your teeth (especially they like to give this in the canteen), and this is soft, although I still prefer to dip the biscuits in tea so that they get soaked and become especially tasty.

We produce here, in Russia, in the Vladimir region, and it is stored for about a year.

Cookies "Jubilee": composition.

What are cookies made from?

The manufacturer claims that it makes the Yubileinoye cookies special, which includes only the highest grade flour. The desired consistency is provided by a unique cooking technology, in which wheat gluten does not swell. finished product it turns out porous, brittle and crumbly.

The recipe for the classic "Jubilee" has not changed over the years. The composition includes:

  • wheat flour of the highest grade;
  • lemon acid;
  • sugar;
  • vitamin supplements;
  • water;
  • vanilla milk flavors;
  • vegetable oils;
  • dry whey;
  • corn starch);
  • salt;
  • baking powder food.

Cookies are good for baby food: it perfectly absorbs moisture, quickly swells and becomes soft. For babies, it is recommended to soak it in warm milk.

In addition to the traditional "Jubilee", there are other types on sale: walnut, strawberry, with cocoa, with nuts, icing and fortified. A separate line is the "Jubilee" morning cookies, the composition of which is distinguished by cereal (rye and oatmeal) flakes.

Benefit or harm?

Useful cookies "Jubilee" will not be for everyone. So, it is not recommended to use it for people with individual intolerance to egg or milk protein and nuts. May contain traces of peanuts or sesame seeds.

In addition, "vegetable oils" is a loose concept. The usefulness of common palm oils. The desire to save on production forces companies to purchase leftovers that are only suitable for industrial use.
