How to cook ears from puff pastry. Puff pastry ears

homemade cookies- a great treat for unexpected guests. And you can cook it very quickly if you have it on hand. ready dough. Even a schoolboy can bake cookies-ears from puff pastry. The technology of preparation is simple, but it turns out the pastries are very tasty, crumbly and tender. These cookies can be made with various fillings- cinnamon, coconut flakes, poppy, etc.

For the preparation of cookies, puff pastry is most often used. unleavened dough, but you can also bake a yeast version of the puff. The dough must be of good quality, because the taste of cookies depends on it.

Cookie ears are formed quite simply. It is necessary to roll out the dough into a long rectangular layer. The longer the layer, the more layers your cookies will have. The optimal length of the layer is about 30 cm.

Then you need to find the middle of the layer along the length. And make a note. Now you can sprinkle the dough with the chosen filling option, distributing it evenly. The next step is to roll the dough into a roll. First you need to wrap one side to the intended center line. And then fold the other side in the same way. As a result, we get two rolls with a common base. The rolls need to be pressed lightly against each other so that they stick together. For better bonding, you can lubricate the gluing place with water.

Now you need to turn our blank with the solid base up and cut into pieces 1.5-2 cm wide. Put the blanks on a baking sheet covered with parchment. You need to spread out at a distance from each other. We bake at 200 degrees. The baking time of cookies depends on the size of the blanks and ranges from 10 to 20 minutes.

Interesting facts: cookies-ears came to us from German cuisine. In Germany, this pastry is called "pig's ears". In Switzerland it is known under the name "Prussian dessert".

When baking, some of the sugar will inevitably leak out, so if you do not use parchment, it will be difficult to clean the baking sheet.

Bake at 200 degrees for about 15 minutes. The cookies should be golden in color.

  • 3 tablespoons of sugar;
  • 8 gr. ground cinnamon;
  • a little flour for rolling out the dough.

Mix sugar and ground cinnamon in a bowl. Sprinkle the dough with the cinnamon-sugar mixture. Then lightly roll on top with a rolling pin so that the filling is slightly pressed into the dough.

We twist the layer of dough into a roll, first from one side to the middle, then wrap the dough in the same way on the other side. We cut the workpiece into pieces about 1.5 cm thick. Put the cookies on a baking sheet covered with foil. Do the same with the second layer of dough.

We bake at 200 degrees for about 200 minutes, the cookies should acquire a golden hue and become crispy.

Puff pastry cookies with nuts

Another baking option is ears with nuts.

  • 250 gr. ;
  • 150 gr. nuts;
  • 1 egg white;
  • granulated sugar to taste.

Roast the nuts in a dry frying pan. We make sure that the nuts do not burn. Then grind the nuts, but not into flour, but to get small grains. The easiest way is to use a blender, but you can also chop with a knife.

Advice! You can use any nuts for this baking. For example, walnuts. Perfect for peanuts too.

Mix ground nuts with granulated sugar, put sugar to taste, add raw protein, mix.

Roll out puff pastry into a rectangular layer, grease with cooked nut filling. We turn the dough into a roll, first from one side to the center. Then on the other side. We cut the workpiece in half into pieces about 2 cm wide.

Advice! To make it easier to cut the prepared roll into even cookies, we recommend putting the workpiece in the freezer for 10-15 minutes, after wrapping it with cling film.

Delicious Puff ears with sugar - a great option for tea gatherings!

Want something tasty, sweet and crunchy? And to cook in a matter of minutes? Then check out this recipe for puff pastry cookies with sugar and cinnamon. Cookies are sweet, insanely fragrant, and, of course, very crispy. In the common people, these cookies are called "ears". Despite the attractive appearance, even a beginner can give a beautiful shape to the liver. After all, it is prepared from purchased puff pastry, and all you have to do is defrost the dough and make ears with cinnamon and sugar out of it.

On the shelves in stores you can find yeast and without yeast dough. What is the difference between them and which option should we use? The fact is that during baking yeast-free dough rises solely due to water vapor, and in yeast work water vapor is supported by the work of yeast bacteria. There are much more layers of dough in the yeast-free dough, and they are all smeared with oil. Due to this, baking from yeast-free dough turns out to be more fatty, high-calorie, slightly dry and very crispy. Cookies, crunches, snack baskets (see the chicken and cheese snack recipe) and cake layers come out of it wonderfully. Baking from yeast puff pastry is slightly less crispy, but more fluffy and soft. This dough is best suited for puff pastries, pies, cookies and buns. Therefore, if you want to get lush and more soft cookies- use yeast dough, and if you prefer crispy cookies - buy yeast-free.

Yeast dough can be made with your own hands, but this is such a painstaking task that most hostesses prefer to use ready-made ones bought in a store. Purchased puff pastry is no worse than homemade. The main thing is to remove it from the freezer before starting cooking and let it melt at room temperature. And only then proceed to rolling and laying out the fillings.

Cooking time: 30 minutes.

Ingredients:

  • 0.5 kg of sheet puff pastry;
  • 0.5 st. sugar (100 g);
  • 8 gr. cinnamon powder;
  • 8 g ground cinnamon.

However, it should be borne in mind that the more fat the cottage cheese, the more the calorie content of the dish increases. And vice versa - low-fat cottage cheese brings cookies closer to diet dishes.
  2. We combine all bulk products, everything except sugar, in a separate bowl. Is the amount of flour indicated in the ingredient list accurate? It is rather difficult to answer this question: it all depends on the flour that is available. Most often, recipes are served on the basis of the mass of flour from durum varieties wheat. Therefore, each brand and manufacturer will have its own mass fraction flour in every recipe. Focus on feelings and everything will work out.
  3. We mix the butter-curd and loose mixtures. We do not tighten it - after all, the oil tends to flow, which means that more flour may be required.
  4. It should be slightly sticky and very soft dough. So that it rolls out well and does not stick to the surface, sprinkle the table with flour. We also pre-divide the dough into 2 or 3 parts - this will facilitate the rolling process. At the same time, the parts that are not involved in the process are stored in the refrigerator.
  5. From a rolled out sheet of dough with a thickness of not more than 0.5 cm, cut out future cookies with a mug or a special round shape.
  6. You may have noticed that sugar was missing from the recipe. This is not entirely true: we will use it for spilling circles of dough. It is convenient to do this by simply pouring sugar into a plate and rolling dough circles on each side, gradually folding in half until a triangle is formed.
  7. We spread the resulting quarters on a sheet of parchment and send it to the oven for 10-20 minutes at a temperature of 180 ° C.

Ingredients

  • sugar (to taste)
  • 2 tbsp. l. liquid natural honey

Cooking

1. We take out the dough from the freezer and let it lie down for a while at room temperature. You can't remove the wrap. The only thing is to make sure it doesn't melt completely. Otherwise, the dough will stick to your hands, and it will be very problematic to work with it. When the dough has become soft and rollable, put the sheet on the work surface, stretch it with your hands or roll it out with a rolling pin. It is better to take the dough, which comes in one large layer. Sprinkle sugar on it and crush it with a rolling pin.

2. Keep in mind, puff pastry does not have any pronounced taste, neither sweet nor salty, simply put, it is tasteless, so if you want the ears to be sweet, put a decent amount of sugar on each layer. We twist it to the middle on both sides.

3. Cut the resulting puff roll into small pieces.

4. Turn on the oven. While you are dealing with the remaining dough, it will just heat up. We cover the baking sheet with baking paper and lay out the ears-semi-finished products on it.
