Do you want to surprise your friends with something unusual? Or to please the sweet tooth amazing dessert? Then cook coconut candy walnut! Delicate, with a delightful aroma of fresh coconut and creamy taste, they are very similar to the famous Raffaello sweets. But, like any sweets made with your own hands from quality products, these coconut candies will be much tastier and healthier (compared to ready-made ones, of course). And they are prepared with just three ingredients: condensed milk, coconut flakes and butter. Add nuts inside or not - decide according to the situation. Even without the nuts, the candies are delicious!

In the recipe, the basis of sweets is fresh coconut flakes. Do not be too lazy to buy a coconut (they are sold in any large store) and grate the pulp. How fresh the chips will be depends on how tasty and healthy the sweets will be. After all, the recipe does not use any flavor enhancers or other synthetic additives, which means that you need to take all the best for them. Of course, you can buy dry shavings, but the taste will be different.
Making coconut flakes is very easy. You need to open all three eyes of the coconut and drain the juice. Then split the shell (a hammer will help, the coconut opens easily!), peel the flesh from the brown crust and grate on a fine grater. Once you taste the grated flesh of a fresh coconut, you will never want to buy dried shavings. By the way, it is also natural, but there is nothing useful in it anymore - the chips are dried after they have been used for cooking coconut milk, moreover, wring it out at least three times. So think - is there anything left in it, except light coconut flavor? It can be used for breading sweets, and as the main ingredient it is better to take natural product.

Ingredients:

- fresh coconut - 1 piece (or 200 gr. Coconut flakes);
- any nuts;
- condensed milk - 180 gr (0.5 jars);
- butter - 40 gr;
- coconut flakes for breading - 2-3 tbsp. spoons.

How to cook with a photo step by step




Open the coconut as described above, cut off a thin layer of brown skin with a knife (peel like a potato) and grate the pulp on a fine grater. It is more convenient to divide the coconut pulp into several pieces, so things will go faster.





We take high-quality butter, preferably homemade or with a high percentage of fat content (at least 70%. We put the dishes with butter on water bath, melt.





Pour the condensed milk into the hot oil. Tip: take the best quality condensed milk so that there are no questionable additives in the composition, only whole milk and sugar. If the milk is with an abundance of incomprehensible components, it is unlikely to thicken and give the desired consistency.






Stir milk and butter until both products are combined. Gradually add coconut flakes, mixing it with a viscous mass. Continue heating for a few more minutes to evaporate excess liquid.
After heating and stirring, a rather thick lumpy mass will be obtained. It may not seem thick enough, but after solidification, the density will increase. Cool the workpiece to room temperature, after that we send it to the freezer for one hour. Be sure to cover or tighten with foil.





After freezing, the candy mass will become much denser. We collect about a teaspoon with a slide, make cakes. We put any nuts in the middle (cashews, almonds, hazelnuts).





We wrap the edges on the nuts, roll the balls in the palms. The mass will be sticky, but it does not stick to the palms (there is oil in the composition).






We put the coconut sweets in the freezer for 10-15 minutes so that the oil hardens again. Then roll in coconut flakes - natural, if any, or dried. By the way, dry shavings stick to sweets better and stick to them better. After all the balls are rolled in shavings, we again send the sweets to the freezer for an hour. Then we rearrange into the common chamber of the refrigerator, where they will be until serving.





And here are the finished candies! For a “front” serving, stock up on special corrugated molds for sweets and cakes or put sweets on a beautiful plate. Delicious with a cup of coffee!

Cooking process:

Prepare a pot of water. Boil. Place a heat-resistant deep container on top so that the bottom does not touch the water. Pour the cream into the heated bowl. While stirring, heat up to 35 degrees.


Add to warmed cream butter good quality. Stir until the composition is completely dissolved. In no case, do not use margarine, then the sweets will be tasteless.


Use good quality chocolate, black or milk. Chop the chocolate bar into small pieces. Add cocoa powder and chocolate to the creamy mass. Stirring vigorously with a spatula, heat until chocolate is completely melted and cocoa is evenly distributed. You should get a homogeneous, smooth, glossy mass. When the mixture has a uniform color, remove from the water bath.


Let cool to room temperature, stirring occasionally with a spatula. To speed up the process, you can type in a saucepan cold water and lower the bowl with the chocolate mass. Mix with a spatula until cool.


Add half of the coconut to the cooled mass, mix. Shelter cling film and refrigerate until thickened, for a couple of hours.


With a spoon, take a portion of the chocolate mass, press the nut into the center and quickly form a ball with your hands. Dip in coconut flakes. Send to the refrigerator for 20-30 minutes.


Coconut candies are ready.

We only need three ingredients:

Coconut - 1 pc.

Dates - 20-30 pcs. depending on the size. The ratio of dates to coconut pulp should be approximately 1:1.

Dry coconut flakes (for sprinkling) - a few tablespoons.

I'll tell you a little about how to choose the right dates. In markets and shops, dates are most often sold in sticky sugar syrup. I try not to buy these. Read about how dried fruits are processed and how to distinguish natural dates from chemical ones. I really like Iranian Kaspiran dates. They are sold in small boxes weighing 600 grams. These are:

So, how to make coconut candy:

1. Soak the dates for 20 minutes in water at room temperature. Remove the bones before soaking. If these are dates of the Kaspiran variety, which I wrote about above, then they do not need to be soaked, since they themselves are super soft.

2. When the dates become soft, they need to be ground into a thick, homogeneous gruel. This can be done with a blender, meat grinder or grinder. In the case of soft Kaspiran dates, you just need to mash them with a fork! Right along with the skin, although if you get confused, you can remove the skin from each date. I do not do this.

3. We open the coconut. See my separate article. If you read the article and did it right, you should end up with two neat halves of coconut meat.

As a result, you will get these headings - date pulp and grated coconut:

5. Mix dates with coconut. You should get a fairly dense, thick mass.

6. From this mass we sculpt small balls with our hands. This is done simply - by rolling the ball in the palms of your hands until it becomes smooth and round. Then it remains only to roll the resulting balls in dry coconut flakes. The fresh shredded coconut you grated is not good for sprinkling, as it is not dry. Dry shavings can be bought in a store or on the market. Or you can make your own by drying fresh coconut flesh in the oven or dehydrator. By the way, you can add purchased dry coconut flakes to the sweets themselves, it's much easier. But the taste of sweets will not be so delicate.

That's it, delicious coconut sweets are ready! It is better to put them in the refrigerator for a while. There they finally “grab” and become especially tasty. These sweets are very delicate in taste, literally melt in your mouth) Be sure to try it!

In a coffee grinder or chopper (a blender will not work), grind the coconut to a wet-sticky state. With stops, shaking the cup after 1-2 seconds.


Spoon periodically stir the mass, removing it from the walls to the center.

Grind to a semi-liquid paste-like state until it stands out. By the way, do not be afraid of the fat contained in coconut, it is very useful!

Put the pasta into a bowl. Add 1 tbsp. l. agave syrup. Alternatively, you can choose maple syrup, Jerusalem artichoke syrup or honey. True, the latter has a rather high glycemic index, take this into account.

The resulting paste is divided into 2 equal parts.

In one - add 1 tbsp. l. almond flour. Instead, you can use almonds, ground in a coffee grinder or powdered milk, which, together with coconut flakes, gives the sweets the taste of "Raffaello". Thoroughly grind the "white porridge".

In the other half of the mass, add 1 tbsp. l. cocoa. (We use carob, as these candies are made for children).

The resulting mass is no longer sticky, it crumbles.

Two bases for homemade sweets are ready.

We form homemade diet sweets.

Half-fill a semi-circular measuring spoon (7.5 mg) with white mass, tamping well with your thumbs so that coconut oil comes out.

We put a dark base on top and again, press well.

We press on one edge of the candy, and it leaves the mold itself.

On a plate or on a surface covered with cling film, lay out homemade diet coconut candies.

To prepare a beautiful topping, use a mixture of 25 g coconut flakes, the zest of half a small lemon and a pinch of turmeric and in a coffee grinder whack-whack.

Put the finished sweets in the cold (not in the freezer) to harden for 3 hours.

It turns out 9-10 diet sweets. Cooking time 20-25 minutes.
