A few years ago I tried very tasty and fragrant pickled cucumbers at a party. I took the recipe and now I close several cans of these every year delicious cucumbers with spicy coriander aroma. Try it, you won't regret it!

Cucumbers in this appetizer are cut into slices, insisted for 3 hours in the marinade, and then quickly sterilized. The taste of cucumbers in coriander is very pleasant, slightly sweet with a slight spice and barely noticeable sourness.

Composition and proportions

  • Vegetable oil - 250 g (1 cup + 1 tablespoon);
  • Garlic - 2-3 cloves (passed through a press or finely grated);
  • Table vinegar 6% - 250 g (1 cup);
  • Salt - 100 g (3 tablespoons + 1 teaspoon);
  • Sugar - 250 g (1 cup + 1 tablespoon);
  • Ground black pepper - 1 sachet;
  • Coriander - 0.5 tablespoons;
  • Small onion - 1 (cut into thin rings), but onions are not necessary.

  • pickle cucumbers: cut cucumbers into slices (cutting off the tips), small ones can simply be cut in half. Put in an enamel bowl or pan and add all the other ingredients. Mix well and leave to marinate for 3 hours. Stir occasionally so that the cucumber slices are evenly saturated with the released juice.
  • sterilize: Transfer the salad to prepared clean jars. Cover with boiled lids. Sterilize jars of 0.5 l - 10 minutes, 1 l - 13-15 minutes (put the jars in a pot of water, where a cloth lies at the bottom for stability, the water should reach the shoulders of the jars). Then carefully remove it from the water without moving the roof, roll it up, cool it down and send it to storage.

  2. In each jar, place currant leaves, cherries, dill umbrella, lavrushka, coriander, garlic clove, cloves.
  3. Now the washed cucumbers are tightly packed in jars. Pour vinegar into each jar.
  4. Next, it's time to start preparing the brine. A three-liter jar accounts for about 1-1.2 liters of marinade. Pour water into the pan, into which we pour granulated sugar and salt. We are waiting for the liquid to boil. Now we fill our cucumbers with hot marinade and set them to be sterilized.
  5. For sterilization in a saucepan, we heat water somewhere up to 70 ° C, put a kitchen towel on the bottom of the container (you can just use a wooden board). We put a jar of cucumbers in a saucepan, cover it with a clean lid. After boiling, the jar should stand in the water for another fifteen minutes. After that, we take out the jar, roll it up and wrap it in a blanket. After cooling, cucumbers with coriander are stored in a dark place.

Most of the spices added to canned food are very useful. Cucumbers with coriander for the winter - a great snack for traditional dishes served during the cold season. These cucumbers are very tasty. At home, they can be stored for a long time.

There are recipes for cucumbers with coriander for the winter, where there are no classic spices. For them, they take only salt, sugar, vinegar and coriander.

It is recommended to first make pickled cucumbers with coriander in a small jar in order to taste them, appreciate the taste and aroma. Perhaps not everyone will like the specific smell and taste of coriander. In this case, you can slightly reduce the amount of fragrant seeds by adding, for example, a little more dill with umbrellas.

The stages of pickling cucumbers with coriander are as follows:

  2. Place cucumbers, spices in jars, pour boiling water over them and leave for a few minutes.

This recipe is designed for pickling in jars. You need to prepare the following ingredients:

  • cucumber (for a three-liter jar - about 2 kg), 9 cloves of garlic;
  • 6 pieces of currant leaf, 3 tsp. coriander, 6;
  • 3.5 tbsp sugar, 2.5 tbsp. salt, water, 3.5 tbsp. vinegar (9 percent),.

Cucumbers for the winter with coriander in jars are prepared by performing the following actions:

  1. Wash jars and lids, place in boiling water to sterilize. Wash the cucumbers, pour them with water, leave for several hours.
  2. Soak greens in salted water for about 20 minutes. A liter of water will require a tablespoon of salt. Then rinse it with water.
  3. Put green spices, garlic and a little coriander in a jar. Add a bay leaf to each jar.
  4. Insert cucumbers. Pour boiling water over them for 20 minutes. Drain the water, measuring its volume.
  5. Boil the resulting amount of water, add salt and sugar. Pour in the vinegar while stirring. Next, pour the finished marinade into jars, roll up.
  6. Turn the cans over and cover. After cooling, place in a pantry or cellar.

Pickles with coriander

They can be eaten as soon as they are salted (lightly salted). They are also prepared for storage for a long time (in this case, the jar is sterilized).

Before salting, vegetables need to be poured with water for a short time. Then they are filled with brine, covered with lids and stand until the water becomes cloudy.

Pickling cucumbers with coriander for the winter occurs according to this recipe (based on the capacity of a three-liter jar):

  • cucumbers (you need them to fit tightly), horseradish root;
  • 1 or 2 sprigs of tarragon, half a teaspoon of coriander;
  • a few umbrellas of dill, a head of garlic;
  • some leaves of currant or cherry, brine.

For a liter of water, you should take 70 g of food salt. A jar of cucumbers can be closed with a regular lid, steamed in boiling water. After closing them, you need to turn them over, set for 12 hours. You can store it in the basement or in the refrigerator.

Cooking pickled cucumbers with coriander

For one three-liter jar of cucumbers, we need:

  • 2.5-3 kg of fresh cucumbers
  • 1 teaspoon coriander seeds
  • 5-6 garlic cloves
  • 20 gr green cilantro
  • 20 gr dill greens
  • 1 young horseradish leaf
  • for brine, taking into account 1 liter of water: 1 tablespoon of salt, 2 tablespoons of granulated sugar and 50 ml of vinegar 9%

Cooking:

Step 1. Wash cucumbers thoroughly cold water and soak for 2-3 hours, periodically renewing the water.

Step 2. Prepare jars and lids. Wash the jars with soda and sterilize in a way convenient for you (you can do without sterilization). Wash the lids and boil for 2-4 minutes in boiling water.

Step 3. Rinse the greens and spread them on a towel, let them dry a little. Peel the garlic and divide into cloves, you can cut into slices.

Step 4. Put the cucumbers in jars, shifting with spices, and pour boiling water over them for 5-10 minutes.

Step 5. After 5-10 minutes, drain the cucumber water from the jars into enamel pan, boil, add sugar and salt. Stir the composition until the crystals are completely dissolved, turn off the gas and add 9% vinegar.

Step 6. Pour cucumbers in jars with boiling marinade. Put the jars in a prepared large saucepan or an enamel basin on a towel, pour water. Sterilize jars with cucumbers from the moment the water boils for 25 minutes.

Step 7. After 25 minutes, remove the jars from boiling water, turn them over onto the lids, wrap them in a blanket and let them cool slowly.

I offer a salad of cucumbers with coriander for the winter. I usually prepare such salads when large cucumbers remain. My husband especially likes this salad. From this amount of vegetables, I got 3 jars of 500 ml and one jar of 700 ml.

Ingredients:

  • cucumbers - 2 kg
  • tomatoes - 100 g
  • onion - 300 g
  • refined sunflower oil - 170 ml
  • vinegar 9% - 100 ml
  • sugar - 80 g
  • salt - 1.5 tbsp.
  • ground coriander - 1 tsp

Cooking:

Large cucumbers are best peeled. Cut into circles.

Put the cucumbers in a saucepan, add the onion cut into half rings. Also add tomatoes.

Add sugar, salt, sunflower oil, ground coriander and pour vinegar. Mix all contents. Leave the salad for 2.5 hours, covering the pan with a lid.

Prepare jars and lids, sterilize. After a while, put the saucepan with the salad on the fire, let it boil. From the moment of boiling, cook the salad for 7-8 minutes, stirring occasionally. Cucumbers should change color.

Arrange the hot salad in sterile jars, immediately roll up and turn over on the lid. Wrap until completely cool.

In winter, salad can be served with any side dish.
