Pour semolina kefir and leave for 20-30 minutes to swell. Kefir is also suitable for any, both fat-free and 2.5%.

Separate the egg whites from the yolks, rub the yolks with a whisk or blender in a bowl with sugar.

Wash the berries, remove the cuttings, seeds and ponytails. If they are very large, like my gooseberries, chop them into several pieces. Take a detachable form, line the bottom with parchment and lay the berries on it. Parchment is needed so that after baking you can easily remove the form.

Beat the egg whites with a blender or mixer into a thick foam.

Melt the butter in the microwave at low power, combine it with the swollen semolina, sweet yolks and all the flour. Mix until smooth, the mass will be thick and should slowly drain from a spoon.

The recipe for berry manna on kefir immediately interested me in that it contains berries. In the summer, we often get berries from the grandmother's garden (those that the children did not have time to eat from the bushes), and I really like pastries with blackcurrants, raspberries, strawberries and other yummy. I even specially freeze them in bags for the winter, both individually and in a mixture - it turns out such an interesting mix. Of course, such exotic dried cranberries, I have to buy when I'm going to bake, but for a berry manna, you can take any berries. Mannik turns out to be simply marvelous - tender, with a velvety texture and simply intoxicating aroma! My family devours it instantly, so I sometimes even bake a double portion to make sure there is enough if guests come.
