The name of barley porridge comes from the word "pearl" - this is how pearls were called in Russia. This name went to porridge for noble favor. Since ancient times, barley porridge has been valued for its medicinal properties and invaluable ingredients. Today I propose to cook barley porridge with pork - a hearty and healthy dish. In addition to this porridge, it will be important to serve various pickles, as well as fresh vegetables.

To prepare barley porridge with pork, we need pearl barley, onions, garlic, pork pulp, salt and water.

We wash the cereal well and fill it with water in the evening. Take 1 liter of water for a glass of cereal.

In the morning, we wash the cereal well, pour 2.5 glasses of water, salt and cook until cooked for about 50 minutes.

While the porridge is cooking, we are engaged in meat. Cut the pork flesh into small oblong pieces.

Heat up in a frying pan vegetable oil, fry a little meat, add onion and garlic. Onions can be cut into cubes or quarter rings, it does not matter. Add a little water and simmer the meat until tender under a closed lid.

Add the finished meat to the pan with the already prepared porridge, mix.

Cover the pan with a lid and wrap with a towel for half an hour.

Ingredients:

  • 300-400 g of pork;
  • 2 onions;
  • 1 sweet pepper;
  • 1 carrot;
  • 1 glass of pearl barley;
  • vegetable oil;
  • parsley (I have frozen) - 2 tablespoons;
  • salt, spices to taste.

Cooking:

Rinse a glass of pearl barley, then pour cold water over it and leave for 4-6 hours. Then rinse for 3-4 times, add water and cook in salted water over low heat for 1-1.5 hours. Rinse again with cold water, drain.

Pork cut into cubes. Onions, carrots and peppers wash, peel, cut into cubes.


Heat vegetable oil in a frying pan, fry the pork until golden brown. Add carrots, fry for another 5-7 minutes, stirring, then add onions and after 3-4 minutes add pepper, salt, spices (I added "curry" and a mixture of peppers), frozen parsley, mix.


Pour a little vegetable oil into an earthenware brazier, spread over the walls, put half of the pearl barley, then pork with vegetables, put the rest of the pearl barley on top. Pour in some water, cover with a lid, send to the oven preheated to 200-220 degrees for 40 minutes.


Remove the finished barley from the oven, mix, leave under the lid for 5-10 minutes. Then arrange on plates and serve.

How to cook delicious barley porridge

Measure out required amount pearl barley and fill it with 3 cups of cold water. Leave overnight to swell.
The next day, throw the barley in a colander, rinse under running water. Transfer to a thick-walled saucepan with a volume of at least 2.5 liters, salt and pour in 1.2 liters of water. Bring to a boil, cook over low heat for about 1.5 hours.
Remove the pan from the stove and leave for half an hour under a closed lid.

Wash the pork, dry it, cut into small pieces.

Pour into the pan 2 tbsp. l. oil, brown the meat on all sides over high heat.

Cut the onion in half, each half into 3 more parts, then chop finely. Grate carrots on a large grater.

Add a little more oil to the fat formed when frying the pork, and sauté the vegetables on it.

Rinse prunes in warm water, chop finely.

Throw the porridge on a sieve and rinse again. Add meat, browned vegetables, prunes, salt and pepper to the pan with porridge.

Preheat oven to 180 degrees. Stir and spread the porridge in pots, place in the oven for 30-40 minutes.

Serve barley porridge with homemade preparations and pickles: sauerkraut, salted or pickled cucumbers, vegetable salads and sauces.

pearl barley - 2 cups;

pork - 600 g;

carrots - 2 pcs.;

onion (large) - 1 pc.;

vegetable oil - 2 tbsp. l.;

garlic - 1 head;

salt, seasoning for pilaf - to taste;

Cooking steps

Wash the meat, pat dry. I cooked pilaf with pork pulp, but lamb, beef or chicken is perfect.

Cut pork into medium sized pieces.

Cut the peeled onion into half rings.

Peeled carrots cut into cubes.

Heat vegetable oil in a cauldron or deep frying pan, put the onion and fry over medium heat for 3-4 minutes (until transparent), stirring occasionally.
Then send chopped pieces of pork to the onion, fry for another 3-4 minutes.

To the meat, fried with onions, put the carrots.

Mix and add salt, seasoning to pilaf.

Pour in cold water(water should completely cover all ingredients except garlic), bring to a boil and cook covered over low heat for 30-40 minutes.

During this time, the pork and vegetables should become soft.

Rinse pearl barley well again and put it in a cauldron over pork and vegetables, level it.

Pour enough water into the cauldron so that it is 2-2.5 cm above the level of the cereal.

Remove the finished pilaf from the heat and let it brew under the lid for 10-15 minutes. Then mix barley pilaf with pork, arrange on plates and serve.
