Preparing cabbage. It can be done traditional way. Rinse the cabbage, cut the stalk, place the head of cabbage in boiling water and, as it softens, remove the leaves, cut off the thickenings. Be careful, you can get burned.

I want to offer you a less troublesome and safer option for preparing cabbage for making cabbage rolls.

We wash the cabbage, wipe it dry and put the head of cabbage in the microwave for 5-10 minutes, depending on the size of the cabbage and the power of the microwave. The leaves of cabbage after such a procedure are easily separated. If you removed a few cabbage leaves easily and simply, and then they do not separate well, repeat the procedure.

  • 500 ml of tomato juice;
  • 2 tbsp. l. tomato paste;
  • 3-4 st. l. soy sauce;
  • 1 st. l. Sahara;
  • ground paprika;
  • salt;
  • red and black peppers.

  1. Disassemble the cabbage into inflorescences and bake the sheets in the microwave until lethargic, about 3-4 minutes. Then, along each sheet, walk with a knife, carefully cutting off the hard sections.

  1. Remove the stalk from the head of cabbage. Then we lower it into boiling salted water and cook over low heat. Remove from it as it softens. finished leaves in turn. We cut off thickenings from cabbage leaves.
  2. Next, prepare the filling. Fry finely chopped onions, grated carrots and chopped porcini mushrooms in a pan with vegetable oil until the liquid evaporates. During the frying process, add cream, salt and pepper. You can also add chopped parsley and dill. Add minced meat, salt, pepper, add a little broth and knead well.
  3. We put the minced meat on the cabbage leaf and spread it in the center of the leaf, put it on it mushroom stuffing and fold it into an envelope.

  • Seasonings to taste: salt and ground black pepper

How to cook stuffed cabbage "under a fur coat":

Put fresh cabbage with a whole fork for 5-8 minutes in a microwave oven (power about 800 W), and then immediately place the forks under a stream of very cold water. Let the water drain and easily separate the cabbage leaves from the head.

Rice in cold water boil for 5-7 minutes until half cooked. Cut onions and carrots into small squares and fry in a small amount of vegetable oil. Mix the cooled vegetable fry and rice with the finished minced meat, add salt, pepper to taste.

We twist classic cabbage rolls and carefully place them on a baking sheet, which is first lightly greased with vegetable oil. Add a little water, cover the baking sheet with stuffed cabbage with foil and put in the oven, preheated to 180 ° C for 45 minutes.

For a “fur coat”, we scald the tomatoes, remove the skin from them and cut them very finely, rub them on a medium grater hard cheese, chop the garlic and herbs. Add sour cream to this mixture, salt and pepper, mix everything.

We evenly spread our “fur coat” on top of the cabbage rolls, carefully level it and bake it in a preheated oven for 10-12 minutes.
