But this dish can, it turns out, diversify, add salted or fresh cucumbers, or even both. And every time it will be Olivier salad with sausage and pickles, but already special.

Peas, it would seem, are an integral part of such a famous dish. But as it turns out, if the ingredient is excluded from the composition, the salad will acquire a completely different taste, more delicate.

Olivier salad with sausage - ingredients:

  • 4 potatoes;
  • 1 carrot;
  • 2 eggs;
  • 150 gr. boiled sausages;
  • 2 fresh cucumbers:
  • 25 gr. onion greens;
  • 100 gr. mayonnaise;
  • quarter tsp salt;
  • quarter tsp pepper.

How to make Olivier salad with sausage:

  1. Carrots and potatoes should be washed in advance, then immediately boiled and cooled. Then peel and cut into neat cubes.
  2. Boil the eggs, then pour cold water and chill. Then clean and grind.
  3. Cut the sausage into cubes.
  4. Cucumbers need to be separated from the ponytails and cut.
  5. The onion must be washed, be sure to dry and chop.
  6. At the final of all stages, move all the components into a salad bowl, add spices and salt, season with mayonnaise.

The only difference between this recipe and the usual one is, of course, the presence among the components of not salty, but fresh cucumber.

For Olivier with fresh cucumbers you will need:

  • 200 gr. boiled sausage;
  • 5 potatoes;
  • 1 carrot;
  • 6 eggs;
  • 1 onion;
  • 3 fresh cucumbers;
  • 300 gr. canned peas;
  • 25 gr. greens;
  • 1/4 tsp salt;
  • 1/4 tsp pepper;
  • 150 gr. mayonnaise.

Cooking olivier with sausage:

  1. Wash potatoes and carrots, boil. When the root vegetables have cooled, they need to be peeled and cut into cubes.
  2. Wash cucumbers, cut into pieces.
  3. Sausage must be cut by analogy with other products.
  4. Free the onion from the husk, chop.
  5. Rinse greens, dry and chop.
  6. It remains only to put all the products in one container, salt, add pepper and mayonnaise, and then mix everything intensively.

Olivier salad with pickled cucumbers

  • 4 potatoes;

  • 2 carrots;
  • 200 gr. peas;
  • 250 gr. sour cream;
  • 1/4 tsp salt;
  • 1/4 tsp pepper.

Olivier salad with fresh cucumber - recipe:

  1. Wash the chicken meat, cut off the films and boil in salted water, then cool and cut into cubes.
  2. Eggs should also be boiled, then immersed in cold water and cooled. Then peel off the shell and chop.
  3. Wash and boil carrots and potatoes. Already cooled roots peel and chop into pieces.
  4. Rinse and peel cucumbers, cut into cubes.
  5. Drain the peas in a colander to drain excess juice.

It is today that we can purchase absolutely any product, and in times of total shortage, even green pea it was difficult to get, so "Olivier" was prepared only for big holidays. No one New Year I couldn't live without this salad.

It would seem simple pickle replaced with fresh. However, the taste of the salad has changed dramatically, it has become spring and light. By the way, you can use fresh cucumbers along with salted ones in the salad.

Otherwise, the Olivier salad with fresh cucumber and sausage is prepared in the same way as the traditional one. Vegetables are boiled in their skins, cooled, peeled and finely chopped. Eggs are hard boiled, peeled and chopped into small cubes.

Vegetables and eggs are laid out in a deep bowl, green peas and finely chopped sausage are added. The salad is usually dressed with mayonnaise, but if you are on a diet, you can use natural yogurt or low-fat sour cream.

Recipe 1. Olivier salad with fresh cucumber and sausage

200 g boiled sausage without lard;

black pepper and salt;

potatoes - five pieces;

300 g canned green peas;

fresh cucumbers - three pcs.

1. Brush potatoes and carrots thoroughly. Put the vegetables in a cauldron, fill with water so that it completely covers them, and put on fire. Boil for 20 minutes over medium heat. Then drain the broth, and cool the vegetables.

2. Place the eggs in a saucepan, fill them with water and salt. Boil over low heat for ten minutes. Drain and immediately place under cold running water.

3. Peel the potatoes and cut into cubes. Peel the carrots and cut in the same way.

4. Wash fresh cucumbers, wipe and chop into small pieces.

5. Chop the peeled eggs with an egg cutter. boiled sausage free from the film and crumble in the same way as the rest of the products.

6. Rinse the onion without the husk and the greens. Finely chop.

7. Open a jar of peas, drain the marinade.

8. Place all chopped products in a deep bowl, pepper, salt, add mayonnaise and mix gently from top to bottom.

Recipe 2. Olivier salad with fresh cucumber and smoked sausage

300 g smoked sausage;

three pickled cucumbers;

potatoes - four tubers;

carrots - two pcs.

1. Under the tap, we wash the potatoes and carrots with a brush. We put in a cauldron, fill it with water and boil until soft. We check the readiness with a fork, if it freely enters the vegetable, you can remove it from the heat. Drain the broth and cool the contents.

2. Put the eggs in a small saucepan, pour drinking water and boil for ten minutes. Drain the water and place the eggs under running cold water.

3. Peel the boiled vegetables and chop them into small pieces. Eggs are peeled and chopped with a knife or a special tool.

4. Remove the film from the smoked sausage and crumble it into small cubes.

5. Rinse fresh and pickled cucumbers under the tap and finely chop.

6. We combine all the prepared products in a deep bowl, salt, add mayonnaise and mix. We spread the salad in a beautiful plate and decorate with dill sprigs.

Recipe 3. Salad "Olivier" with fresh cucumber, sausage and olives

300 g boiled sausage without fat;

four potato tubers;

100 g canned peas;

100 g canned pitted olives;

eggs - four pcs.

1. Remove the film from the boiled sausage, cut it into circles, then into long strips and chop finely.

2. Boil the eggs for ten minutes. Drain hot water. Cool eggs in cold water and peel. Chop with a sharp knife or with an egg cutter.

3. Boil the washed potatoes and carrots in their skins for half an hour. Check the readiness with a fork, if it freely enters the vegetable, then it's time to remove from heat. Drain the broth, and cool the contents of the cauldron.

4. Remove from boiled vegetables thin skins and finely chop them.

5. Open jars of peas and olives. Drain both marinade. Take out the olives and cut into rings.

6. Rinse cucumbers and chop into small pieces.

7. Rinse the greens, dry and chop. Put all products in a suitable dish, pepper, salt and add mayonnaise. Mix well. Put in a salad bowl, garnish with herbs and olive rings.

Recipe 4. Salad "Olivier" with fresh cucumber, sausage and capers

canned green peas;

1. Boil potatoes and carrots until soft. Drain the broth, cool the vegetables, and remove a thin peel from them.

2. Boil the eggs for ten minutes. Cool them in cold water and peel.

3. Peel the cucumber. Remove the film from the sausage and crumble it into small pieces. Open a jar of capers.

4. Finely chop potatoes, carrots, capers and cucumber. Chop the eggs in the same way as the vegetables.

5. Combine all chopped products in a deep container. Salt, season with freshly ground pepper and add mayonnaise. Stir gently. Leave to infuse for half an hour. Then put the Olivier salad with fresh cucumber and sausage in a beautiful salad bowl and garnish with green sprigs.

Recipe 5. Salad "Olivier" with fresh cucumber, sausage and apple

black freshly ground pepper;

50 ml of natural yogurt;

200 g boiled sausage;

200 g of fresh cucumbers;

80 g canned green peas;

1. Remove the film from the boiled sausage. Cut it into thin circles, then into thin strips and crumble into cubes.

2. Wash carrots and potatoes with a brush under running water. Put in a cauldron, pour drinking water and cook for half an hour. As soon as the fork is free to enter the vegetable, drain the broth, and cool the contents of the cauldron completely. Peel the vegetables from the skin and chop into medium-sized cubes.

3. Wash the apple. To peel it from the peel or not - decide for yourself. Cut and remove the core. Wash cucumbers, wipe with a napkin. Grind apple and cucumbers in the same way as boiled vegetables.

4. Boil the eggs for ten minutes. Then drain the hot water, and place the container with the eggs under a stream of cold water. Remove the shell and chop into cubes.

5. Open the jar with canned peas, drain the marinade. Place all chopped products in a deep bowl. Throw in the green peas as well. Season with salt and freshly ground pepper. Add mayonnaise and natural yogurt. Mix gently. Serve salad "Olivier" in a beautiful salad bowl.

Recipe 6. Salad "Olivier" with fresh cucumbers, sausage and quail eggs

five fresh cucumbers;

400 g smoked sausage;

50 quail eggs;

two cans of canned green peas;

1. Wash potatoes under running water with a brush. We put it in a cauldron and boil it for half an hour. Then cool completely, remove the thin peel and finely chop.

2. Rinse the cucumbers, wipe and chop into small cubes.

3. Boil the eggs for eight minutes, drain the hot water and place them under a cold stream. We clean and chop with an egg cutter.

4. We clean the onion and chop it as small as possible.

5. Remove the film from the smoked sausage and cut it into thin, short strips.

6. Open a jar of peas, drain the liquid. Pour the contents into a deep salad bowl. This is where we send the rest of the ingredients. Season with black pepper and salt. Add mayonnaise and mix gently.

To make the salad delicious, chop vegetables and sausage into small pieces.

Scald the chopped onion with boiling water to get rid of the harsh taste.

Mix the salad in a large bowl, do it from the bottom up, so as not to crush the chopped vegetables and green peas.

It is desirable to salt after the salad is seasoned.

If the cucumbers are not young, it is better to remove the peel from them, so the salad will turn out more tender.
