Chicken meatballs with mushrooms in sour cream sauce. Meatballs with rice and mushrooms

Turkey meatballs, by definition, cannot be tasteless, and in mushroom sauce they are even better. The dish is simple in execution and dietary. Mushroom gravy with sour cream and tomatoes deserves a special place in these meatballs.

To prepare meatballs in mushroom sauce, I used the following products: minced turkey, carrots, onions, White bread, sour cream, mushrooms (champignons). tomatoes, salt and spices.

Take ready minced turkey, you can also cook it yourself from breast fillet and thighs. Add chopped onion and bread pulp to minced meat.

Whip the ingredients for minced meat with a blender. Add chopped garlic, salt and pepper to minced meatballs. We mix.

Now let's prepare the mushroom sauce for the meatballs. Peel the carrots and onions. Carrots must be grated, and the onion finely chopped. Fry onions with carrots in refined vegetable oil.

Mushrooms champignons, wash, peel and cut. Add to sauté with onions and carrots.

Stew mushrooms with vegetables over low heat for 10-15 minutes, then add tomato paste and sour cream. You can also use fresh tomatoes instead of tomato paste.

Salt to taste, put a mixture of dry herbs (I have Italian), add 250 ml of water and mix all the ingredients.

From minced meat we form small meatballs and put in a pan in the sauce.

Cook covered over medium heat for 20-25 minutes.

Sprinkle the finished meatballs with herbs.

Meatballs in mushroom sauce are ready. We serve for lunch or dinner.

Meatballs with rice and mushrooms, a recipe with a photo of which I offer, perfect option main course for the whole family. Various additives in minced meat (rice, mushrooms, vegetables) allow you to save a lot on products without compromising quality and taste, and all kinds of sauces and various ways cooking makes it possible to cook something new every time from almost the same products. Like cutlets, meatballs can be baked in the oven (see recipe), stewed in sauce, steamed, fried in a pan with or without breaded butter.
To reduce cooking time, it is recommended to add already boiled rice to minced meat. Then all that's left is to fry meat balls and stew them a little in the sauce. Or immediately put in a deep form, pour sauce and bake in the oven. The sauce can be anything - sour cream, creamy, tomato with pieces of fried vegetables or a mixture of tomato and sour cream. Thicken the sauce with flour or leave it liquid - you can also use it here different variants cooking.
In the proposed recipe for meatballs, champignons fried with onions and boiled rice are added to minced meat. And the gravy will be from tomato sauce with sour cream. Make more gravy, it is so tasty that you can eat meatballs without a side dish, dipping slices of fresh bread in a fragrant thick gravy.
How to cook meatballs with rice and mushrooms
Ingredients:

- beef + pork - 300-350 gr;
- boiled rice (until cooked) - 4-5 tbsp. spoons;
- fresh champignons - 150 gr;
- onion - 1 large onion;
- egg - 1 pc;
- black and red pepper - half a teaspoon each;
- dried dill - 3-4 pinches;
- thyme or oregano - 1 teaspoon;
- vegetable oil - 3-4 tbsp. spoons;
- salt - to taste;
- flour - 1 tbsp. a spoon;
- water - 1-1.5 cups;
- sour cream - 150 gr;
- tomato sauce - 3 tbsp. spoons.

How to cook with a photo step by step




We clean the mushrooms from pollution, pour over cold water. We cut into plates or medium-sized pieces. Cut half a large onion into small cubes.




Heat a tablespoon of oil in a frying pan, add the onion. Fry for a couple of minutes so that it softens a little, and add the mushrooms.




Stirring, fry the mushrooms with onions for several minutes until the mushroom juice evaporates. You can sauté the mushrooms a little.






Cut the meat into pieces and, together with the remaining onion, scroll through a meat grinder.




Following the minced meat, we pass the fried mushrooms with onions through a meat grinder. We shift chopped meat and mushrooms in a spacious bowl, drive in the egg and mix everything thoroughly.




Boil rice in advance until fully cooked, but do not boil it into porridge. Add to stuffing with mushrooms right amount rice, mix.






From spices you will need red and black pepper, any dried herbs for flavor (your choice). Add salt to taste, knead the minced meat with your hands. If it is very dense, pour in one or two tablespoons of water and continue to knead, bring the minced meat to a viscous consistency so that rounded meatballs can be molded.




We wet our hands, collect the right amount of minced meat and sculpt round meatballs. We spread in portions in a well-heated oil, fry over medium heat on one side, without turning until a golden crust forms.




With a spatula or fork, pry the meatballs, turn over. Fry the second side. If necessary, add oil, heat it up and lay out the next portion.




At the same time, prepare the sauce. Mix sour cream and wheat flour, rubbing into a thick mass without lumps.






Adding tomato sauce or twisted tomatoes (fresh or own juice). Stir, add water. Sauce base is ready.




When all the meatballs are fried, put them in layers in a deep pan or cauldron, pour the sauce. Salt to taste. Bring to a boil, simmer over very low heat for 6-7 minutes. If the gravy is thick, add more water or add sour cream, tomato sauce - to your taste.




Serve meatballs with rice and mushrooms with any side dish or just with gravy and bread, adding fresh vegetables, lettuce and greens. Enjoy your meal!

"I once had such a story, thanks to which potatoes with meatballs and mushrooms cream sauce, cooked in the oven forever remembered. At that time my husband and I were not yet married, but we already lived together, and his parents had been divorced for a long time and my father came quite rarely. And so, it means that I never saw his father in the eyes, and one fine day my husband calls me from work and says "My father arrived in Kharkov, in an hour he will be with us. I also leave work, you cook something quickly on the table."

At first I was confused, there was not enough time. Yes, and after all, my father-in-law has never seen the future, because I want not to lose face, to prove myself from the best side, as a hospitable hostess. I thought, what would be so wonderful to cook, so that it would be absolutely stunning. I read the recipe book. And then I remembered that I only had an hour. Rather, and that is no longer there, while I leafed through the book, time passed.

In general, I decided, they say, the richer they are, the more they are happy, you can warn, in the end, and decided to cook boiled potatoes, and make meatballs in mushroom sauce for it. Just the right ingredients were at hand.

I put the potatoes to boil, took up the meatballs, it’s elementary to cook them - mix a pound of minced meat with one egg, pepper, salt, give the shape of meatballs and fry over high heat until golden brown.

For mushroom sauce finely chop one onion and peeled champignons (300 g), fry, salt, then add a little flour to the pan, mix and pour in the milk in a thin stream until the sauce thickens. Such a kind of Bechamel.

When I did all this, put the meatballs in a baking dish and poured sauce on top, the potatoes were already boiling. I planned that boiled potatoes I’ll put it on a large baking sheet, put the meatballs on top, sprinkle with grated cheese and herbs, and there will be an overeating. And fast, too.

And then the doorbell rings. I, realizing that it was unlikely that my husband managed to get there so quickly, open the door and along the way get acquainted with the future father-in-law. The husband was still on his way. At first, the situation bothered me a little - not only did I not warn you in advance, but I still couldn’t, perhaps, meet my husband at the metro and come together?

However, the father-in-law turned out to be a talker. I thought it was hard to talk to me. But no, he outdid me! He suggested that while the food is being prepared, go to the balcony to smoke, talk about this and that. And he chatted me so much with his stories that we had already left the balcony when my husband entered the apartment, and his first question was "Why does it stink so much ??". A characteristic culinary feature of meatballs with mushrooms is their serving. Very often they are served with a thick gravy or sauce. Sometimes the sauce is prepared separately, but more often they use a sauce in which they stewed meatballs with mushrooms.

We decided to experiment in the kitchen and used not only the usual rice, but also mushrooms as a culinary supplement. Mushrooms were pre-fried, fearing that they simply would not have time to cook during the stew.

Ingredients for meatballs with mushrooms

  • Minced meat - 500 g.
  • Mushrooms - 300 g.
  • Rice - 50 g.
  • Chicken egg - 1 pc.
  • Carrot - 1 pc.
  • Onion - 1 pc.
  • Tomato paste - 100 g.
  • Salt - to taste
  • Pepper - to taste
  • Greens for decoration
  • Flour for breading
  • Sunflower oil

How to cook meatballs with mushrooms

  1. Boil rice until tender. Cool down.
    We pour 2 times more water than rice.
  2. Chop the onion and sunflower oil fry in a pan until transparent.
  3. Grate the carrots on a medium grater and add to the onion. Fry everything together until golden brown, and then remove from heat.
  4. Cut the mushrooms into slices. Fry in a skillet until half cooked.
  5. In one bowl we combine minced meat, chicken egg, frying, mushrooms and rice. Salt and pepper to taste. Mix well.
  6. With wet hands form a ball of minced meat and coat in flour. We do the same operation with all minced meat.
  7. Fry in a skillet over medium heat until golden brown on both sides.
  8. Transfer the meatballs to a stew dish. tomato paste diluted in 150 ml. water and fill the meatballs.
  9. We extinguish meatballs with mushrooms over low heat for 25-30 minutes.
