To prepare a festive snack, we need a large, fatty herring.

Cut off the head of the herring. We cut the abdomen and clean it.

Cut the fish lengthwise along the spine. Remove bones with tweezers. We will get 2 boneless herring fillets.

We spread the fillet on food film. We got herring with caviar. Caviar can also be used to prepare this snack. Cut the caviar lengthwise and lay it on the herring.

Let's start preparing the filling. We pre-boil the carrots for 5-7 minutes, then send them under cold water. Peppers, onions, carrots, eggs cut into small cubes. Cucumbers are cut lengthwise into thin slices.

Gelatin diluted in 40 milliliters hot water. Do not boil! When boiled, gelatin loses its properties. We filter. Combine gelatin with sour cream and mix thoroughly.

Gelatin with sour cream should stand for about 10 minutes, until the mass begins to thicken. The resulting mixture of sour cream and gelatin is lightly salted, peppered, seasoned to taste lemon juice, add carrots, onions, peppers, eggs and herbs, mix. We apply half of the mass of sour cream and vegetables to one herring fillet.

Lay cucumber slices on top.

Spread the remaining mass of sour cream and vegetables on the cucumbers. Cover with the second fillet.

Peel the beets, cut into circles about 0.5 cm thick.

  • 2 small boiled or baked beets
  • salted herring pieces
  • Rye bread
  • 1 garlic clove
  • small handful of walnuts
  • 1 tsp wine vinegar
  • salt pepper
  • parsley, dill or green onions

Peel the beets, grate. Add the garlic passed through the press, chopped nuts, salt and pepper. Mix or grind with a blender.

Bread cut into small pieces. Spread beetroot mixture on bread, put a piece of herring on top. Decorate with greenery. For convenience, you can chop on skewers. By the way, rye bread slows down the absorption of fats.

This spectacular and tasty herring appetizer for the festive table will decorate any celebration. But, you need to do it in advance, because it is prepared on the basis of gelatin, which takes time to solidify. It is best to prepare an appetizer 12 hours before the start of the feast. very satisfying, from one herring and the amount of products indicated in the recipe, 7 - 8 large servings are obtained.


Ingredients:

- salted herring - 1 pc. (large),
- fresh cucumbers - 1 pc. (long thin)
- Bell pepper- ½ pcs.,
- boiled eggs - 1 pc.,
- turnip onion - 1 pc.,
- boiled carrots - 1 pc.,
- dill and parsley (greens) - a little,
- mayonnaise - 4 tbsp. l.,
- gelatin - 1 tbsp. l.

How to cook with a photo step by step





Boil an egg and a carrot in advance (1 each). While they are cooking, soak a spoonful of gelatin in seven tablespoons of cold boiled water.




While the gelatin swells, cut the herring. Cut off the head and tail, open the belly, take out the insides. Cut the skin on both sides along the spine of the herring. Starting from the head, hook the skin and pull it off first from one side, then from the other. Cut the fillets off the bones with a thin knife. Take out the remaining small bones with tweezers, because it will be unpleasant to stumble upon a bone in a finished snack. You got two pieces of herring fillet.
Cut the cucumber into several thin slices. Cut half a sweet pepper into small squares. Chop parsley and dill.




Cut the onion into very small cubes. Set aside 4 tbsp. l. mayonnaise. Peel the boiled carrots and eggs, cut them into small cubes. Mix carrots with egg and herbs with mayonnaise. Heat the swollen gelatin in the microwave for 5 seconds without boiling, and pour into the mayonnaise.






Everything is ready for assembly. In a long narrow dish (herring box) place a wide strip of cling film so that it hangs wide on all sides.
Lay one part of the herring fillet on the bottom of the herring box. Pour half of the resulting mayonnaise mixture on top. Then lay flat two plastic cucumbers, sprinkle half of the total amount of red pepper on the cucumber. Now pour the remaining mayonnaise mixture, put two more plastic cucumbers on it, on the cucumber - the rest of the sweet pepper. And finally, lay the second part of the herring fillet on top of all this splendor. Now ask you for help, because you need to contrive and wrap all this splendor in a roll, first bending the film along the long side, then twisting it from the ends. My assistants and I did not have enough hands to photograph this process. If you have coped with this task, feel free to put the resulting "sausage" in the refrigerator or take it out to the balcony for 12 hours, in short - at night.




And in the morning it remains to unfold the frozen roll, remove the film and cut the snack into portioned pieces. Believe me, you will not regret that you spent a lot of effort on the construction. Ingredients:

  • Fillet salted herring(finely chopped) - 2 pcs.
  • Cottage cheese - 150 gr
  • Tomatoes - 2 pieces
  • Mayonnaise - 2 tablespoons
  • Boiled potatoes - 2 pcs.
  • Cheese hard grade- 100 gr.
  • Dill
  • Ground black pepper

Boil potatoes in their skins, peel, cool and cut into circles.

Break up the egg yolks with a fork. Add cottage cheese, black pepper mayonnaise and chopped herring fillet to the yolks. Mix well.

Cut the tomatoes into circles. We rub the cheese on a fine grater.

Rolling balls from curd mass, roll them in cheese and put on potatoes and tomatoes. Add dill and a piece of herring on top. Everything, a simple and tasty snack is ready.

Ingredients:

  • Salted herring fillet - 2 pcs.
  • Boiled beans - 100 gr
  • Hard boiled egg - 1 piece
  • Olive oil or butter - 3 tbsp. l
  • Red Caviar - 3 tsp
  • Rye bread
  • Pepper
  • Greens for decoration

Soak the beans and boil until tender and grind in a blender. (By the way, if you don’t want to mess with the beans, you can replace them with boiled eggs.) Add butter or olive oil, herring and an egg to the bean puree.

Again, we knock everything down in a blender until homogeneous mass. Salt and pepper to taste and add red caviar.

Cut the bread, remove the crusts. And smear with herring-caviar cream. Put another piece on top and again coat with cream. And again a piece of bread on top.

We decorate each herring cake with the remaining cream using a pastry bag.

Ingredients:

  • Herring - 1 pc.
  • Boiled potatoes - 2 pcs
  • Processed cheese - 100 gr
  • Hard boiled eggs - 2 pcs.
  • Butter - 50 gr
  • Dill
  • pomegranate seeds
  • Ground black pepper

Finely chop the herring fillet, rub the potatoes and eggs on a coarse grater. Mix in this mass. processed cheese.

We put chopped herring, butter, pepper there and mix again. Put in the refrigerator for 15 minutes.

Put 3 pita bread together and cut in half.

We coat the second layer of pita bread with mayonnaise and lay out half the carrots in a thin layer. Again we close with pita bread.

We smear the third layer of pita bread with mayonnaise and lay out the eggs grated on a grater - exactly half.

We roll up the roll, spread it on foil, wrap it in foil and put it in the refrigerator for half an hour.

Appetizer with herring on puff pastry

Ingredients:

  • Salted herring fillet - 1 piece
  • Puff pastry (buy at the store) - 500 gr.
  • Leek - 35 gr
  • Mayonnaise - 2 tbsp. l.
  • Boiled beets - 2 pcs.
  • Egg for greasing cakes - 1 pc.
  • Fresh cucumber - one
  • Dill and parsley greens
  • radish for garnish
  • parchment paper for baking

First you need to bake their base puff pastry. To do this, we divide the dough layer into about 33 equal parts. Spread on a baking sheet - covered parchment paper for baking.

Beat the egg and brush the dough pieces. We put it in the oven, wait until our shortbreads become golden in color and take it out of the oven.

We grind the fillet of salted herring in a meat grinder or in a blender. Add chopped onion, mayonnaise to the ground fillet and mix with a spoon.

Three beets on a coarse grater, add 1 tablespoon of mayonnaise to it, salt and mix.

Sprinkle the dish for serving the herring appetizer with finely chopped herbs. Slice fresh cucumber.

We place baked pieces of puff pastry on a dish, put a circle of cucumber on top. And we lay out the herring mince on one half of each piece, on the other beet mince directly on the cucumber circles.

We decorate the dish with finely chopped and folded radishes with roses and can be served on the table.
