The site's readers asked if I had a recipe for Viennese cookies.

There was no such thing on the site, and I asked what kind of cookie it was. In response, the reader Daria sent me detailed recipe with a photo, and it turned out that Viennese jam cookies are very similar to grated pie!

The manufacturing technology and photos of the Viennese cookies were almost the same, only the composition of the dough was slightly different: there is more butter and eggs, but no sour cream. Therefore, the dough turns out to be more sandy, crumbly than in a grated pie.

Ingredients:

  • 250 g butter (originally margarine, but I prefer butter);
  • 1 cup of sugar;
  • 2 eggs;
  • 1 teaspoon of soda;
  • A pinch of salt;
  • 4.5 - 5 cups of flour (in the original 1.5 cups, but this is not enough to knead a stiff dough).
  • 1 glass of pitted jam for the filling, I have currants grated with sugar.

How to bake:

Let's melt the butter.

Add sugar, salt, soda and eggs, mix.

Sift the flour and knead a fairly thick dough.

We separate 1/3 of the dough and put it in the freezer for 15 minutes, and distribute the remaining 2/3 on a baking sheet, greased with oil. It is difficult to roll out the dough, as it crumbles - but it is excellent to distribute it with your hands over the baking sheet, forming a cake about half a centimeter thick from the “latochki”.

Distribute the jam on top of the cake. I bend the edges of the cake a little inward so that the jam does not “run away”.

And on top we rub the dough from the freezer on a coarse grater.

We bake shortbread Viennese cookies at 180-200C 25-30, until golden.

Cut the cooled cake into portioned cookies, you can sprinkle with powdered sugar.

Viennese biscuits with cottage cheese are a very winning combination. The result is something similar to the well-known juicers.

Required products:

  • 350 grams of flour;
  • oil packaging;
  • about 500 grams of cottage cheese;
  • egg;
  • 200 grams of sugar.

Cooking process:

  1. We spread the flour in a deep bowl, if desired, it can be sifted, then the result will be even better. Add cold chopped butter to it and mix until almost a crumb is obtained.
  2. In another container, lightly beat the egg, pour sugar into it and add what happened to the flour, bring to a homogeneous smooth state.
  3. We divide the mass into two parts and roll them into thin layers. We remove one for a while in the cold, and put the other in a baking dish.
  4. We knead the cottage cheese, you can use it immediately, or you can mix it with a small amount of sugar.
  5. We spread it on a layer of dough, and on top we cover it with small pieces made from the second, already frozen part.
  6. We send the baking sheet to the oven, setting the temperature to 180 degrees, and hold for at least 25 minutes.

Jam cookie recipe step by step

In general, for the preparation of this cookie you need to take only sour jam to feel the difference between it and the sweet dough, but if desired, the ingredient can even be replaced with jam.

Required products:

  • a glass of jam;
  • 350 grams of flour;
  • a large pack of oil;
  • 250 grams of sugar;
  • two eggs.

Cooking process:

  1. Crack the eggs into a bowl, combine them with sugar and mix well.
  2. In another container we place flour and butter, which must be cold and cut into pieces. Grind all this into crumbs, and then pour in the egg mixture here. We begin to knead until the dough forms.

  • about 400 grams of flour;
  • 250 grams of chocolate;
  • about 350 grams of butter.

Cooking process:

  1. Put sugar and chopped butter in a bowl, grind everything into crumbs, and then beat in the eggs here, mix until smooth, add flour and bring to a dough state.
  2. We divide the mass into two parts and make two thin layers of different sizes. We put the smaller one in the refrigerator for about 20 minutes. And the one that we put more on parchment paper in a mold.
  3. You can use any chocolate for the filling, rub it or heat it to a liquid state and cover the dough.
  4. We take out the other part from the refrigerator, grind it with our hands or on a grater and sprinkle the filling.
  5. We bring the cookies to readiness in the oven, heated to 180 degrees for at least 30 minutes.

  • two egg yolks;
  • about 25 grams of powdered sugar;
  • a little salt and vanilla to your liking;
  • a package of butter weighing 200 grams;
  • 60 grams of sugar;
  • a glass of flour;
  • marmalade.

Baking process:

  1. Before cooking, the butter must be kept in the refrigerator for some time so that it freezes slightly. Then we put it in a deep bowl, after cutting it into pieces, and with the help of a mixer we bring it to the state of white fluff.

  5. When the thickened mass ceases to succumb to the mixer, we proceed to kneading manually. As a result, you need to get a fairly thick and crumbly shortbread dough that does not stick to the palms. Since flour can be of different quality, it may take you a little more or less than indicated in the recipe - we focus on the state of the dough.

  6. We remove about 1/3 of the dough for 15-20 minutes in the freezer, and distribute the rest in an even layer (0.5 cm thick) over a large baking sheet covered with parchment paper. It is more convenient to do this manually, since the dough crumbles a lot and it will be difficult to roll it out with a rolling pin to the desired size.
  7. Spread the jam over the flour base. Also, any jam, jam, berries grated with sugar are perfect for Viennese cookies. Just pay attention to the consistency of the filling you have chosen: if it is not very thick, the edges of the lower layer of dough must be slightly raised up, forming sides so that the sweet additive does not spread over the baking sheet during baking.

Step by step recipe for Viennese pastries:

Tip: First of all, I want to warn you that if you take sweet jam, for example, strawberry, raspberry, then take a little less sugar, about a third. To make it dissolve faster and easier, I immediately grind it into powder.

  1. Combine powder, eggs in a bowl and beat for two or three minutes so that the mass turns a little white and bubbles appear.
  2. Add vanilla and salt, stir again and put the butter. Take it out of the fridge early and let it sit for 20 minutes to soften. After that, chop it into pieces and add to the mass.
  3. Continue whisking the mixture, and when it becomes homogeneous, start adding flour. Don't rush, take it easy in small portions- so it will be better kneaded.
  4. Add baking powder along with flour and continue kneading the dough. It will become soft, smooth and not sticky to your hands.
  5. Divide the test com into three parts. Send one to the freezer - then we will rub it. From the remaining two, blind one and roll it into a cake.
  6. Place this cake on a baking sheet lined with parchment. Straighten the dough with your hands so that the layer is even, and be sure to make low sides around the edges for jam. Approximately: the thickness of the cake is approximately 0.5 - 0.7 centimeters.
  7. Spread the jam over the base. Don't make it too big. This is the case when it is better not to overdo it - the excess will run away and burn. By the way, another piece of advice: if the house is not found thick jam, lay out what you have, but sprinkle the cake with starch - the jam will “grab”.
  8. It remains to get the frozen lump of dough and rub it on the base of the cookies. Do not bother, rub directly over the baking sheet - then it will not stick together and will immediately be well distributed.
  9. While working on the dough, turn on the oven to warm up to 180 ° C.
  10. After 25 minutes, remove the baking sheet and cut the base into squares.

Do not transfer the pieces to a plate until they have cooled - you risk crumbling.

Viennese cookies with cottage cheese

Take:

  • Flour - 500 gr.
  • Egg.
  • Butter - 200 gr.
  • Soda - ¼ teaspoon.
  • Sugar - 150 gr.
  • Salt.

Viennese cookies with lemon - homemade recipe

Take:

  • Flour - 400 gr.
  • Egg.
  • Sugar - 200 gr. + 50 gr.
  • Butter - 200 gr.
  • Lemon.
  • Soda - a pinch.

Step by step recipe:

  1. Combine the egg with sugar (200 gr.), Rub it and add the butter (soften it a little and chop it into pieces). Mix everything thoroughly.
  2. Introduce flour in small portions and knead the dough. Divide it into two parts, send the smaller one to freeze for 15 to 20 minutes.
  3. Roll out the larger piece into a cake and spread it on a baking sheet (do not forget to lay parchment), making small sides.
  4. The lemon should be grated directly with the zest and mixed with 50 gr. sugar - this will be our filling. Spread the lemon mass over the cake and rub the dough frozen by this time on top.

Take:

  • Vegetable oil - a glass.
  • Flour - 4 cups (or rather, how much dough will take).
  • Sugar is a glass.
  • Kefir or yogurt - half a glass.
  • Salt - half a teaspoon.
  • Eggs - a couple of pieces.
  • Jam - a glass.

Cooking:

  1. Mix flour with vegetable oil and mix well.
  2. Add soda quenched with vinegar, eggs, sugar or powder and pour in kefir.
  3. Knead the dough - it will come out pliable, soft, but dense.
  4. Divide the dough into two approximately equal pieces, send one of them to freeze for a quarter of an hour, and continue working with the second.
