Indeed, in this case, New Year's celebrations, which fall just on the Filippov (Christmas) fast, literally unsettle those who try to "hold" the post, tempting them with all sorts of temptations. For truly believing Orthodox Christians, such a question seems far-fetched - they simply do not celebrate the official New Year, but live according to the "old" calendar and celebrate, as expected, first Christmas, and then the New Year. Albeit two weeks later than the rest of the world. I have immense respect for the choice of these people, but I understand that the vast majority of our fellow citizens will move their glasses on the night of the 31st to the 1st. Among them will be those who are trying to keep the Advent fast.

In fact, no one forbids celebrating a fun holiday with family and friends. If you are fasting, then just cook delicious Lenten dishes and have fun! Fish, vegetables, fruits - from this variety you can cook so much delicious dishes! Only without fanaticism in terms of alcohol - even if you have a bite of vodka lean pie It won't cure a hangover.

Ingredients:
3 bell peppers
3 tomatoes
8-10 olives (or olives) pitted,

Ingredients:
500 g fish
300 g crayfish
2 bulbs
50 g agar-agar,
bay leaf, peppercorns, herbs, salt - to taste.

Cooking:
Boil the cleaned fish in salted water with one onion head. Cool, remove the skin. Boil crayfish in boiling water with spices, cool and clean the necks and legs. Fish broth pre-clarify egg white(Pour the protein into the cold strained broth and heat until flakes appear, which should be removed immediately). Strain, cool and pour agar-agar for 1 hour. After that, warm over low heat until the agar-agar is completely dissolved. Hot dishes for the Lenten table are also numerous. You can bake fish in foil or a roasting sleeve, make great steaks from halibut or other large fish, or cook vegetable cabbage rolls. Let's start with the simplest: appetizers. Among the wide variety of lenten snacks, we chose a delicious and at the same time simple recipe. Let's consider it in more detail.

Rolls with eggplant and peppers. To prepare this simple and amazing tasty snack we will need the following ingredients: red and yellow peppers (2 each), medium-sized eggplant, a can of olives (pitted), canned tomato puree(150 g), olive oil, salt, spices (basil, oregano, black pepper). Cut the eggplant into small cubes, salt well and leave under load for 20-30 minutes.

We clean the peppers from the stalk and seeds and cut into three or four parts (if they are too large). Then lightly grease the outer part with vegetable oil and send to the grill / oven for 7-10 minutes until the skin turns black. Remove from heat and peel off the skin.

Prepared eggplant must be thoroughly dried. Then we send them to a preheated pan, fry in vegetable oil until golden brown. Add tomato puree, finely chopped olives, salt, spices. Simmer over low heat for about 10 minutes. We spread the cooled finished mass in small portions on slices of pepper and twist into rolls. Serve the finished snack chopped on skewers / toothpicks.

  • Salad with shrimp and avocado. A dish with a minimum set of products, but at the same time very healthy, satisfying and tasty. To prepare it, we need: 3 avocados (the number varies depending on the number of guests), 300 g of small shrimps, 3 medium cucumbers, lemon, cilantro, salt, pepper. Cut the avocado in half and remove the pits. Boil shrimp in salted water for about 5 minutes. We throw it away in a colander. Now let's get to the cucumbers. We peel the vegetables, cut them into small cubes, salt and send them to the refrigerator for ten minutes. Squeeze the juice from the lemon, add salt, pepper, a couple of tablespoons of olive oil and cucumber juice. We beat with a whisk. Sprinkle avocado halves with dressing, shrimps - mix well with dressing. Then we spread the shrimp on the avocado, and on top - the mixture whipped with a whisk. We take the cucumbers out of the refrigerator, put them in a colander and beat them into a light mousse along with cilantro. Watering ready salad the resulting mixture.
  • Salad with beans, mushrooms and garlic. This excellent lean salad is served warm. The recipe for its preparation is very simple. Red beans must be boiled, mushrooms fried in vegetable oil with onions.   • (1/2 medium head);
  • a few medium-sized tomatoes;
  • parsley;
  • vegetable oil;
  • spices (turmeric, curry, cumin, ground coriander and ground black pepper) - each spice in a third of a teaspoon;
  • sugar (1 teaspoon);
  • salt.

First of all, thoroughly wash vegetables and herbs. We divide the cabbage into small inflorescences. Pour turmeric and cumin into a frying pan heated with vegetable oil. After 20 seconds, add cabbage inflorescences there. Mix thoroughly and keep a few minutes under the lid.

While the cabbage is fried, proceed to the tomatoes: blanch them and cut them into medium cubes. Then add to the cabbage, mix and simmer under the lid for about 10 minutes. After this time, salt the vegetables, add ground coriander and simmer over low heat for another 20-30 minutes (until the cabbage is fully cooked). At the end, add curry, pepper and sugar. Add the parsley last and remove the dish from the heat.

Advice. It is better not to add all the sugar at once: pour some, try it - if it is still sour, then add the rest.

Vegetable strudel. The well-known second course comes from Germany in the form of dough rolls and a side dish. Most often cooked with meat, but we will consider the recipe for vegetable, lean strudel. For the dough, we only need a glass of water, twice as much flour and half a teaspoon of salt (you can add a little paprika if you wish). For the filling: 5 medium potatoes, 300 g pumpkin, 2 medium carrots. Spices: asafoetida, ground ginger, ground black pepper, mustard seeds.

We knead the not very steep dough and leave it to “rest” for 15 minutes. We proceed to prepare the vegetables. We clean the pumpkin from seeds and peel, cut into medium-sized cubes, peel the carrots and three on a coarse grater.

In a frying pan with heated vegetable oil, fry the mustard seeds until they stop crackling, then add the rest of the spices and fry them for a few seconds. Add vegetables to the spices and fry for about 10-15 minutes over medium heat.

Put a small part of the vegetables on a baking sheet greased with vegetable oil. The remaining vegetables are mixed with potatoes cut into small slices. Divide the dough into two parts and roll out into two thin circles (thickness no more than 2 mm). Lubricate the dough with vegetable oil, sprinkle with pepper and asafoetida. We spread the filling on the dough and roll it into rolls. We cut them into several parts.

We put the strudel on the vegetables laid out on a baking sheet, grease them on top with vegetable oil, pour salted water almost to the top, leaving only the “tops”. We send the strudel to the oven preheated to 250 degrees for 45 minutes.

Best Lean Dessert

Very easy to make and amazing delicious dessert. To create this sweet masterpiece, we only need a kilogram of sugar and plums, as well as 200 grams of sugar for powder.

Boil two cups of water in a saucepan, add sugar there and keep on fire, stirring constantly, until it is completely dissolved. Plums must be thoroughly washed and dried. Gently squeeze the seeds out of them, trying not to damage the integrity of the fruit. We lower the plums into the syrup, bring it to a boil, keep it on the fire for several minutes and remove from the heat. We leave the plums for 10 hours. Then repeat the procedure 2 more times with a ten-hour interval.

After the last “procedure”, we leave the plums in a colander so that the syrup drains. Finely chop the nuts and stuff the plums with them. Then put them on a dish and sprinkle well with sugar. We leave for a few hours. Dessert is ready.
