The recipe is from the category “it would be better if I didn’t bake - I ate it all at once alone.” Now, frankly, I’ll tell you, I don’t really like cookies, I always prefer something creamy or chocolate for tea. Therefore, all the cookie recipes that are on the site are exclusively proven and tasty, such that even I like it. As for this cookie, this is another “wow!” I am sure that the recipe for this simple and delicious treats win thousands more hearts. And on a dank winter evening, not to eat a cookie warming with gingerbread is just a crime :)

This biscuit has a special crumb structure - slightly viscous, and the edges are crispy, with a taste of caramel. If you decide to add cinnamon, then a taste of good quality appears. oatmeal cookies, if you cook simply with ginger, then, accordingly, the taste is honey-ginger. I liked this cookie more simply with ginger, and my son, who loves cinnamon, naturally liked it with cinnamon. Try both options. And if you don’t like spices at all, just make it with honey, it will still be delicious. And those tempting cracks!!!

Necessary:

  • Flour - 225 g
  • Butter (margarine) - 100 g
  • Sugar - 70 g (for sweet tooth - 100 g)
  • Honey - 100 g
  • Salt - 1/3 tsp
  • Soda - 1 tsp without a slide
  • Baking powder - 2 tsp without a slide
  • Dry ginger - 1 tsp
  • Cinnamon - 0.5 tsp (to taste, you can without it)

for rolling:

  • Sugar - approx. 2 tbsp.

Cooking:

The dough for these cookies is ideally kneaded in the bowl of a food processor.

I will immediately turn my attention to important point- the dough should not become viscous, sticky and smearing. The oil in it should not melt.

The dough should be crumbly at first, and then gather into a ball, it doesn’t gather in my combine, I transfer it to a bowl, as you will see below.

If you knead the dough by hand, then the butter should be cold and not have time to melt from the warmth of your hands.

You can try kneading with a mixer, but I haven’t tried it, it seemed to me that the flour would be very dusty when kneading dough of such a structure. But still, the lack of a combine should not stop you from preparing this yummy. Try!

Forming cookies is very easy, the dough is obedient and plastic.

So, first measure and mix all the dry ingredients.

I immediately poured everything into the bowl and “jumped” a couple of times to mix everything.

At first I tried to put 100 g of sugar, as it was in the original source, it was very sweet for me, then I added only 70 g of sugar, the very thing, according to my taste.

If you have a sweet tooth and eat "sugar with sugar", then feel free to put 100 g.

Now oil. It must be well cooled and cut into pieces. You can cut into pieces and put in the freezer for a few minutes. I just have it from the fridge.

Put the butter in a bowl and chop until fine crumbs are obtained. In the combine, everything is kneaded very quickly, less than a minute.

Or you can do it by hand. Only very quickly, I repeat, so that the butter does not melt.

We put honey.

If it is directly solid, then you can melt it a little in the microwave. I have candied, but still retained some fluidity.

Add directly to the total mass and mix so that the honey intervenes in the total mass.

If you continue to knead until the dough is combined into a kolobok, then I was afraid that from intensive mixing the butter would begin to melt and the cookies would not turn out the way they should be.

I poured everything into a bowl and easily, simply and quickly collected the mass with my hands into a ball.

From the dough we sculpt balls the size of a large walnut or a small egg.

Optimal 25-30 g.

It turns out about 20 pieces.

Now we roll the balls in granulated sugar.

You can bake on paper or a silicone mat, I do it differently, as you can see in the photo :)

Leave plenty of space between the balls as the cookies expand quite a bit as they bake.

We put the balls on a baking sheet and slightly flatten them with the bottom of the glass.

Not much, just slightly.

Place the baking sheet with the biscuits in a preheated 180-190 degrees oven.

My cookies take 10 minutes to bake.

How to determine readiness:

when baking, the cookies crack badly, usually in the second five minutes.

The photo below shows that the middle of the cracks is still white - so you need to hold it in the oven a little more.

The cracks should also be slightly reddened.

If you underbake, then the cookies will be too soft, if you overbake, they will be too hard, but still tasty, most importantly, do not burn.

Focus on the color of the cracks and you will understand how long it will take to bake in your oven.

honey biscuits compares favorably with the usual one in that it does not get stale for a long time. These cookies can be stored for up to two weeks. Unfortunately, medicinal properties honey is not preserved in such pastries, but this does not make it less tasty.   • cinnamon - 1 tbsp. l.;
  • eggs - 2 pcs.;
  • granulated sugar - 6 tbsp. l.;
  • soda - ½ tsp;
  • butter - 100 g;
  • wheat flour - 2 tbsp.

Cooking process:

Beat the dough with a mixer. Soft butter does not mix well with other ingredients, so the bowl of dough must be cooled. To do this, it should be covered with a film and put in the refrigerator for 45 minutes or in the freezer for 30 minutes.


Then gradually add flour to the dough. It should turn out almost not sticky, elastic, homogeneous mass. It must be laid out on a floured table and rolled into a cake 4-5 mm thick. For convenience, you can divide the dough into 2-3 parts and roll them out in turn. The rolling pin must also be dusted with flour. The cake should have the same thickness at the edges and in the center.


Then you should cut out the cookies of the desired shape.


The rest of the dough must be collected and rolled out again.


Sliced ​​cookies must be laid out on a baking sheet covered with baking paper and sent to the refrigerator for 20 minutes.

In the meantime, preheat the oven to 180 degrees. Chilled cookies should be immediately sent from the refrigerator to the oven. honey dough bakes very quickly. It is important not to dry it out. After 7-10 minutes, the edges of the cookies will begin to darken. After that, the oven must be turned off and the pastry left in it for another 2-3 minutes so that it dries.

Transfer the finished honey biscuits to a wire rack to cool.

To prepare honey cookies, you will need a deep bowl in which the cookie dough will start.

Butter should be softened, so it makes sense to keep it at room temperature, removing it from the refrigerator in advance.

If the honey is too sugary and thick, it can be melted in microwave oven, turning on the power, closer to the minimum. With a high oven power, honey can bubble up and escape from the container.

So, put butter and sugar in a bowl.

Beat the ingredients together, you can do this either with a mixer or with a regular fork.

Then add honey, egg and salt to the mass.

Mix everything until smooth.

It's time to add the flour along with the baking powder.

  5. Next, gradually add flour and knead a soft lump of dough. In the course of kneading, we control the rate of flour - you may have to use a little more or less than the portion indicated in the recipe. It depends on the qualities and properties of a particular flour, the density of honey and other factors. To the touch, the dough should turn out to be very plastic, pleasant, not steep. It is not necessary to knead the mass for a long time.
  6. We crush the nuts to crumbs in the blender bowl, then pour them into a convenient flat plate.
  7. We divide the dough into 15-16 koloboks the size of a small walnut. Lightly press the blanks, forming cakes. Its structure will depend on the thickness of the cookies - if you make the products thicker, they will remain soft inside, and if you form thin cakes, the pastries will come out crispy.   10. Fragrant homemade honey cookies are ready! These pastries are appropriate with any drinks - tea, coffee, milk, cocoa and even alcoholic cocktails based on hot wine.

This cookie recipe is completely suitable for vegetarians, it does not contain any eggs or dairy products. Butter can be replaced with margarine.

It cooks very quickly, but I have a comment on the amount of flour. It seemed to me that it was a bit too much (recipe, if anything, not my own). Keep in mind that the amount of flour from durum varieties wheat needs to be reduced, because the biscuits were conceived to be more flattened. When baking, it should spread and become flat, but I left plump. The quality of honey also matters, natural is the most preferable.

To prepare a quick honey cookie, take all the products on the list. We add spices for gingerbread at will, you can also add cinnamon - for lovers.

In a suitable container, mix flour, salt, baking powder, soda, sugar and spices. Mix.

Chop the hard butter, and then grind it into small crumbs.

Put on a baking sheet with parchment. Bake at 180 degrees for about 10-15 minutes. The time depends on the capacity of your oven. The cookies should brown well. Be careful not to burn the bottom, which can happen very quickly as the sugar browns well on the bottom.
