At the end of the 17th century, by order of Peter the Great, the Rostov voevoda Prozorovsky planted vineyards, the vine for which was brought from Astrakhan, Greece, Germany, France and Hungary. Local residents made sparkling wine from unique red grape varieties, according to the technology that was traditionally used by the Cossacks. A feature of its production was that the berries were harvested in late autumn, when the grapes were fully ripe. After that, the grapes remained for some time in special wooden barns or in attics, where they gradually lost moisture and turned into a dried state.

Then the grape berries were ground using special wooden graters. The resulting raw material was placed in special containers. Due to the low autumn temperatures, the fermentation process was extremely slow. And only when subzero temperatures were set, the future champagne was placed in new barrels and left to infuse in them until spring. With the onset of spring, sparkling wine was bottled, the neck of which was wrapped with twine and corked, dipped in melted resin. Bottles were stored in pits or cellars covered with a layer of straw.

Traditionally, in the Russian Empire, Tsimlyansk sparkling wine was a festive drink that marked the greatest milestones in the history of the state. On the table of Mikhail Illarionovich Kutuzov there was just such champagne on the day of the celebration on the occasion of the victory over the Napoleonic army.
