Today I have three in one. This note is not for experienced housewives. I’ll tell you a little about how to choose a herring, I’ll tell you in detail how to clean it. I do not like to buy herring in the form of fillets in plastic containers or vacuum packaging. I once read that they almost soak it in formalin to get rid of small bones. I prefer barrel-cured herring. On our beautiful, such a herring is sold in the fish rows, the most diverse, from the Atlantic and Ivasi to the Don. Herring should be taken smooth, plump, without damage to the skin and rusty spots. It should be very elastic, dense. If she has reddish eyes, then she is very slightly salted, very tasty, but I am afraid to buy this. I choose medium-salted herring, with whitish eyes, then soak it until lightly salted, put it entirely in cold water for a couple of hours. And look at the back! The wider the back, the fatter and tastier the herring.

For now, I put the potatoes to boil. Everything is as usual, peel, if large, cut, put in cold water, bring to a boil and cook until tender (about 20 minutes). I don't salt. If the knife or fork pierces the potato without effort, drain the water.

I cover the whole table cling film, I cut the herring on thick paper. Cut off the head, cut the abdomen with a sharp knife and remove the insides. Don't cut off the tail! Rinse the herring inside with running cold water.


On the back of the fish, along the dorsal fin, make an incision.

Now take the herring with both hands by the tail and pull in different directions. The herring will begin to be divided into three parts - the two lower ones, with a cut along the abdomen, and the back.

For herring, you can quickly prepare mustard sauce, the mustard you need is spicy, homemade, here's how to cook it. And the sauce is nowhere easier to make, mix a tablespoon of ready-made mustard with a teaspoon without a hill of sugar, add a tablespoon of fragrant, market-bought sunflower oil. Mix everything well until the sugar dissolves and pour in a couple of tablespoons of water. Put pieces of herring in this sauce for a few minutes, mmmmmm! Yummy ... But just spread mustard on fresh black bread, put a piece of herring on top and sprinkle with onions - it will turn out no worse!

We spread in a deep plate (I make it for the house, for myself in a container, it’s more convenient) a layer of boiled potatoes, cut into slices, then a layer of onion in half rings, slices of herring on top and the rest of the onion on top of the herring and sprinkle with herbs.

Then you need to pour plenty of vegetable oil, who likes to add vinegar to taste (1-1.5 tsp). Put in the refrigerator, let it brew for a couple of hours. By the way, when we pickle herring in vinegar, the small remaining bones soften and are less felt.

The main difficulty of the dish is cutting the herring. But if you do not want to mess with this work, then you can buy prepared herring in oil in jars. You can serve food on a plate in different ways, as your imagination and ingenuity will tell you. Also, a classic Russian snack can be transformed if it is served in the form original salad. Ingredients:

  • 0.5 kg of potatoes;
  • tomatoes - 3 pcs.;
  • onion - 2 pcs.;
  • cheese - 200 g;
  • 1-2 eggs;
  • sour cream - 1 tbsp. a spoon;
  • herring - 2 pcs. medium size;
  • 100 ml of water;
  • salt;
  • vegetable oil (for greasing the baking dish).

Cooking time: 40 - 60 minutes.

The calorie content of the dish is 182 kcal per 100 g.

We clean the fish, remove the bones and cut the fillet into small portions. Cut the onion into large rings (as thin as possible so that it has time to cook). Chop the tomatoes into cubes or circles. Three cheese and potatoes on a coarse grater. We make a filling for fish. In a separate container, mix eggs, sour cream, pour in a little water, salt and pepper. Beat everything until a homogeneous mass is formed.

We turn to the preparation of the herring itself. Pre-lubricate the form with oil and lay out all the ingredients in layers. The first layer is potatoes. For cooking you will need:

  • 1 medium herring (400 g);
  • 2 large potatoes;
  • 1 medium sized onion;
  • fresh greens;
  • hard cheese - 50g;
  • salt, pepper to taste;
  • sunflower oil (for lubricating the foil).

Cooking time: one and a half hours.

Calorie content per 100 g - 184 kcal.

We clean the fish, remove the insides, gills and bones. Wash the potatoes and onions and cut into medium-sized cubes. Finely chop the herbs and add to the vegetables. Mix all the ingredients in a separate bowl, salt and pepper. Sprinkle the fish with salt and pepper (if desired, additional seasonings can be used). Put the herring on the oiled foil and lay out the vegetables.

We wrap the foil and carefully pinch the edges so that the juice does not flow out. We place the foil sleeve on a baking sheet, edges up, and send it to the oven for 1 hour at a temperature of 200 degrees.

After an hour, unfold the foil, sprinkle the fish with grated cheese and back, without wrapping, put in the oven for another 5 minutes. Done - herring with potatoes in foil in the oven turned out to be excellent. Try!

Herring salad with potatoes and eggs

Very easy to prepare, but at the same time tasty and satisfying salad.

Ingredients for 6-8 servings:

  • a few medium sirloin pieces of herring;
  • 300-400 g potatoes;
  • 2 eggs;
  • fresh greens;

  • mayonnaise (oil can be used).

Cooking time: 20-40 minutes.

Ingredients:

  • 1 fillet of slightly salted herring;
  • 2 eggs;
  • 2 cucumbers;
  • 1-2 boiled potatoes;
  • green onion;
  • mayonnaise;

Cooking time: 1 hour and a couple of hours for the salad to cool and infuse.

From above we rub the eggs on a coarse grater and grease everything with mayonnaise (instead of a continuous layer, you can make a grid of mayonnaise). The remaining cucumbers and herbs can be used for decoration. We send the salad in the refrigerator for a couple of hours to cool it, and then serve it on the table. Salad ready!

  1. When choosing a herring, make sure that it has a thick back. Such fish will be tastier.
  2. Checking the freshness of fish is very easy. Just drop it into the water. If the product is fresh, it will immediately sink.
  3. It is best to give preference to the Pacific herring, it is considered the most useful.
  4. Always buy fish with a head and gills, they can determine the quality of the product.
  5. Fish should be stored in brine and a glass container.
  6. During cooking, do not immediately remove the head of the fish. This will add richness to the sauce and give it more flavor. bright taste vegetables. The main thing is not to forget to initially remove the gills, otherwise the dish will be bitter.
  7. Do not clean herring on a wooden surface, it will quickly absorb the smell of fish.

To decorate the salad, we use green onion feathers and dill sprigs. By the way, if you wish, you can add pickled mushrooms - say, mushrooms. Very tasty!
