6. We start baking pancakes. Lubricate the pan for pancakes once with oil, heat it well and fry like ordinary pancakes - pour the dough, level it all over the pan, and bake on both sides.

7. Lubricate the finished pancakes butter and stack it up.
Pancakes are plump, but perforated, openwork. It is best to eat warm, like all pancakes, with sour cream and jam.

8. I baked the second part of the dough in a cast iron pan.
The pan needs to be very hot, reduce the fire to medium, grease the pan (I greased with a piece raw potatoes on a fork, dipping in a saucer with vegetable oil).
Scoop the dough and pour into the middle of the pan, cover with a lid.

9. Do not level the dough, it will spread a little in the pan by itself. Bake for 2-3 minutes, then flip the pancake to the second side and fry also under the lid for another 2 minutes.

It's a pity to pour out good, and I decided to make pancakes. But, unfortunately, there were problems on our forum (there was no access), so the all-knowing Internet attracted to search for a recipe. And the first thing that the search engine gave me was this one. Written by Mumuka from Cooking. The most important thing in this recipe is a certain technology, so there is no point in retelling the words of the author. I post the original text, and then I will write my comments.

"Whey milk

flour (only premium, good quality. It is important)

And no eggs! The recipe is simple, but requires compliance with some rules.

Pour flour into warm whey. So much so that the dough turns out like good sour cream. But at the same time, it should pour, and not be placed in a pan. Add some salt and quite a bit of sugar. The dough should not be sweet. Yes, it is advisable to beat with a whisk.

And now the most important thing is soda. Its amount depends on the acidity of the whey, which, in turn, depends on when it was thawed from the curd.

Therefore, you will have to focus on taste. Soda should be enough. Pour a little into the dough, stir well, try. You should stop when it is slightly felt in the test. Do not fill up - the dough will not be lush. Sprinkle - the taste will deteriorate and the pancakes will become reddish (try the first pancake - and you will understand what else you can report).

Now add a few tablespoons of vegetable oil, stir, and leave to rest for an hour in a warm place.

By the way, the dough can be made in the evening. And bake pancakes in the morning.

Fire is medium. Frying pan - preferably cast iron. Well calcined, lubricated with oil (lard). Lubricate periodically and during baking.

Pour batter into the middle of the pan. Let it spread itself, you don't need to help it. We will have fluffy pancakes.

And now the main thing - COVER THE PAN WITH A LID. A certain regime of temperature and humidity is created, and they are BAKE, and at the same time they rise. About a minute or two. Now open the lid, turn the pancake over, and cover with the lid again. How wonderful they smell.

My comments: I didn't have to heat the whey, I had it still warm. Since it was from cooking cheese, it was already salty, so I didn’t add any salt. I made the dough in the afternoon, baked in the evening. I don’t have a cast iron pan, I baked it on a regular Teflon pan, there were no problems with flipping pancakes. Lubricate the pan every 1-2 pancakes. Indeed, the pancakes turned out to be very tasty, beautiful and very satisfying.
