for the test:

  • wheat flour of the highest grade - 430 g
  • vanilla sugar - 1 sachet (15 g)
  • salt - 1 tsp
  • butter - 50 g

For filling:

  • strawberries - 400 g
  • sugar - sand - 70 g
  • starch - 2 tbsp. l.

for brushing the buns:

  • yolk - 1 pc.
  • cream - 1 tbsp. l.

Cooking

  1. First you need to prepare the dough. To do this, pour warm milk into a clean cup, add sugar - sand, dry active yeast and sift the flour. Stir the contents of the cup well with a whisk, cover with a lid and put in a warm place for half an hour.
  2. Melt the butter in a saucepan, then pour into a clean deep cup and cool.
  3. Add salt, vanilla sugar, cooked dough to melted butter and mix well.
  4. Sift the flour into the butter mixture, mix, then put it on the cutting table and knead the elastic dough with your hands.
  5. After giving the prepared dough the shape of a ball, place it in a clean deep cup, cover and put in a warm place to rise for 2 hours. During this time, the dough will increase by 2-2.5 times.
  6. Ready dough put on a floured cutting table, knead well and divide into 12 equal parts, about 80 - 100 grams each.
  7. Prepare strawberry filling. Wash the strawberries, dry them, remove the stalks and put in a cup, add sugar - sand and starch, mix.
  8. From each part of the dough roll out a round cake, on the sides, not reaching the edges of the dough, make cuts.
  9. Put 1.5 tablespoons of strawberry filling in the middle of the cake. Form a bun by throwing one edge of the cut to the opposite, and the second to the other side.
  10. Form the rest of the buns in the same way.
  11. Place the shaped buns on a baking sheet lined with baking parchment at a small distance from each other. Cover the baking sheet with the buns with a towel and leave to rise for 30 minutes.
  12. Lightly whisk the yolk with cream.
  13. Lubricate the buns with whipped yolk and cream with a silicone brush.
  14. Place a baking sheet with shaped buns in an oven preheated to 180 degrees. Bake time about 30 minutes, until golden brown.
  15. Remove the baked buns from the oven and cool on a wire rack.

Note to the owner:

  • instead of strawberries, you can use other berries: raspberries, blueberries and others;
  • Ready-made buns can be sprinkled with powdered sugar.

So, for the buns we need:

  • milk - 200 ml;
  • pressed yeast - 40 g;
  • sugar - 180 g;
  • eggs - 3 pcs.;
  • butter - 150 g;
  • vegetable oil - 50 ml;
  • flour - 500-600 g;
  • vanilla sugar - 1 tsp;
  • salt - a pinch;
  • strawberries - 300 g.

Cooking process

I purposely do not now describe in detail how to cook butter dough for buns, already on my blog, read. In short, then make a dough of warm milk, yeast and a spoonful of sugar. Leave for 40 minutes. When suitable, combine with baking (eggs, soft butter, sour cream, sugar) and knead the dough with flour. Leave to rise in a warm place for about 1 hour.
How to make cuts with a knife to form buns

Divide the finished dough into parts, I get about 16 pieces. Roll each into an oval cake, do not roll thinly. Put the berries in the middle and make two cuts along the dough, on the sides. Put the buns with berries on a baking sheet covered with baking paper and put in a warm place for 10-15 minutes.

Brush the risen buns with the beaten egg.

Bake until a beautiful golden color for about 25-35 minutes in an oven preheated to 180 degrees.
