  • Dry yeast - 7 gr.

  • Vegetable oil - 2 tablespoons
  • Sugar - 3 tablespoons
  • Cinnamon - 20 gr.

For lubrication:

  • Egg yolk - 1 pc.
  • Milk - 2 teaspoons

A simple recipe for making dry yeast dough

1. Pour the yeast into warm milk, at about 30 degrees, put 1 tablespoon of sugar and four heaping tablespoons of flour.

2. Mix then cover cling film or a towel and leave for 30 minutes to activate the yeast and bubble the dough.

3. In the meantime, break the eggs into another container, add vanilla and sugar.

4. Then mix everything and add butter there.

Melt the butter in advance over low heat and let cool.

5. Now add sour cream there.

7. After half an hour, pour this mixture into the risen dough.

9. Now cut in the middle with a knife, without cutting to the end.

1. Cover the baking sheet parchment paper and post them. Cover the top with a clean cloth or towel and leave for 10 minutes. In the meantime, preheat your oven to 190 degrees.

    • flour - 500 g;
    • milk - 250-300 ml;
    • butter - 85-100 g;
    • sugar - 120-150 g;
    • dry yeast - 1 package;
    • cinnamon - to taste.

    First you need to warm the milk, add 3-4 teaspoons of sugar and dry yeast. Mix the mixture and leave for 15 minutes in heat. When the yeast begins to actively foam, send it to a bowl for kneading the dough, pour in the melted butter, break the egg and mix well. After that, you can pour flour into a bowl and knead the dough. The resulting product should be wrapped and put in a warm place for 1.5-2 hours.

    When the dough rises, it must be kneaded and divided into 4 parts. Now you need to roll out the first bun, lightly grease with melted butter and sprinkle generously with a mixture of sugar and cinnamon. Put the second rolled kolobok on top and again fill it with cinnamon-sugar filling. Do the same with the remaining two koloboks.

    The resulting stack can be rolled up and cut into several equal parts, or you can simply cut into 8 triangles. Put the buns on a greased baking sheet and put in the oven for half an hour. The baking temperature should be around 180-185°C. Ready-made buns can be sprinkled with powdered sugar on top.

    Buns with cinnamon and icing

    But who said that you can only cook classic recipe. The buns prepared according to the recipe below are no less tasty than the classic ones. For them, you need to get from the bins:

    • flour - 0.5 kg;
    • vegetable oil - 90 g;
    • dry yeast - 1 sachet;
    • eggs - 2 pcs.;
    • sugar - 150 g;
    • milk - 250 ml;
    • cinnamon - 1-2 tablespoons;
    • starch - 2 tablespoons;
    • butter - 130 g;
    • cream - 50 ml;
    • powdered sugar - 1 tablespoon;
    • vanilla liqueur or essence - 5 ml;
    • salt - to taste.

    Warm milk a little, add vegetable oil and mix thoroughly. Beat one of the eggs together with two tablespoons of sugar and a pinch of salt. Pour flour and yeast into a bowl, pour in milk and egg mixture. Knead the dough. Flour can be added until the dough stops sticking to your hands. finished product leave it warm for an hour to rise. To make the dough come up faster, you can cover the bowl with dipped in hot water and a wrung out towel and send to the oven, heated to a temperature of 45-50 ° C for half an hour.

Distribute the prepared filling over the entire surface, roll the layer into a roll and cut into pieces 5-6 cm wide. Put the buns on a baking sheet and forget about them for 20 minutes. Then grease them on top with an egg and send them to the oven for half an hour. The optimum temperature is 180-200°C.

    For glaze, melt 25-30 g of butter, add vanilla liqueur and powdered sugar, pour in the cream and beat the mixture thoroughly. With the resulting mass, you need to grease the still hot buns.

    Puff buns with cinnamon

    Wonderful cinnamon buns are made not only from yeast, but also from puff pastry. Messing around with them is not so long. The only caveat is that it is better to prepare the dough for such baking the day before. By the way, it can be done several times at once, because puff pastry keeps well in the refrigerator. So, for such baking you need to take:

    • flour - 300 g (2 cups);
    • butter or creamy margarine- 300 g (250 g for the dough and 50 g for the filling);
    • water - 130 ml;
    • ground cinnamon - 1-2 bags;
    • sugar - 100 g;
    • milk - 50 ml.

    Cut the dough butter into small pieces with a knife and mix with flour. Then on flat surface chop the resulting mixture with a knife into crumbs. After that, in the middle of the butter-flour mixture, make a recess, pour water into it and knead the dough. It’s not worth kneading too long, it’s enough to get more or less homogeneous mass. Wrap the resulting dough in a bag or film and send it to the refrigerator for several hours, and preferably at night.

    Further, everything is similar to the previous options. First you need to prepare the preparation of the filling, i.e. rub butter with sugar. Remove the dough from the refrigerator and roll out into a rectangular layer. Sprinkle it with cinnamon and grease with a mixture of butter and sugar. Roll the workpiece into a roll and cut into equal parts. Bake for about half an hour at 180°C.

    Buns with apples and cinnamon

    This sweet delicacy is best prepared not just from puff pastry, but from puff pastry. It can also be purchased at ready-made, or you can knead with your own hands. Moreover, the principle of the process is almost identical to the preparation of a conventional puff product. To serve delicious buns with apples and cinnamon, you need to prepare:

    • flour - 450-500 g (3 cups);
    • yeast - 1 sachet;
    • water - 85 ml;
    • milk - 135 ml;
    • butter - 200 g;
    • sugar - 3 teaspoons;
    • egg - 1 pc.;
    • salt - 1 teaspoon;
    • apples - 2-3 pcs.;
    • sugar, vanilla, cinnamon - for the filling.

    Yeast and 1 tablespoon of sugar diluted in warm water and leave to "come to life" for 15-20 minutes, then mix thoroughly. Sift flour and mix with two tablespoons of sugar and salt. Finely chop or grate the butter on a shredder and mix with flour. Chop the resulting mixture again with a knife or grind with your hands to form a crumb. Form a hill from the resulting mass and make a recess in the middle.

    Crack an egg into the revived yeast and carefully pour warm milk into it. Mix the mixture, pour into the recess of the flour slide and knead the dough. Wrap the resulting product in a film or bag and put it in the refrigerator for a couple of hours.

    Boil a glass of water, add 80-100 g of sugar and vanilla. Bring to a boil again. Cut apples into thin slices and dip in syrup. It does not take long to cook - about 1-2 minutes. Then apple slices remove with a slotted spoon from the syrup and put in a colander to drain excess liquid.

    Remove the dough from the refrigerator and roll into a thin layer. Cut it into strips 3 cm wide. Place apple slices on each, sprinkle with cinnamon and roll into a roll. Put the resulting buns on a baking sheet and let stand for 15-20 minutes, then bake in the oven at 180 ° C for half an hour. Ready-made buns, if desired, can be sprinkled with powdered sugar.

    In general, cinnabon is not so much a cinnamon bun, but a chain of bakeries. This brand appeared relatively recently - in 1985, in Seattle. And they serve not only buns with coffee. But it was cinnamon rolls, poured with a special sauce, that became signature dish bakery cafe. Cinnabon is now the most famous pastry with cinnamon.

    Of course, making real cinnabon at home will not work. And it's not the complexity of the technology. It's just that the authors strictly keep their proprietary recipe, and especially the method of preparing the famous cream sauce. However, 90 percent of the secret has already been solved. So now every housewife can cook a la cinnabons in her own kitchen.

    It’s worth warning right away: this dish is very high-calorie, so it’s better for young ladies who follow their figure to exclude such a delicacy from their diet. The rest need to prepare the following products:

    • flour - 750-800 g;
    • milk - 250 ml;
    • eggs - 3 pcs.;
    • butter - 210 g;
    • sugar - 100 g for the dough and 200 g for the filling;
    • yeast - 1 sachet;
    • vegetable oil - 2 tablespoons;
    • vanillin - 1 sachet;
    • cinnamon - 4-5 tablespoons;
    • curd cheese - 100-150 g (preferably Philadelphia or Almette);
    • powdered sugar - 150 g;
    • salt - 1 pinch.

    Warm the milk slightly (38-40°C), dilute the yeast and a tablespoon of sugar in it. Let the mixture stand for 10 minutes to allow the yeast to revive. Beat eggs with half a glass of sugar and pour into milk, put a third of softened butter, salt, vanillin and vegetable oil there. Mix everything well. Add flour and knead the dough, which then must be wrapped and left for an hour in a warm place.

    The risen dough must be rolled out into a thin square layer, greased with the second third of the softened butter and sprinkled liberally with a mixture of sugar and cinnamon. Roll the layer into a tight roll and cut into pieces about 4 cm wide.

    Place the resulting buns on a baking sheet lined with foil and let stand for 15 minutes, then put in an oven preheated to 180-200 ° C and bake until they acquire a light golden hue (about 30-40 minutes). Times are, of course, relative. It is advisable to monitor baking in order to prevent the flour products from drying out.

    Now it's time to start the confectionery sauce. To do this, you just need to mix together the cheese, powdered sugar and the remaining third of the butter. Cover the still warm buns with the finished mixture and ... you can serve them to the table.

    Little tricks

    There are no super secrets in making cinnamon buns. However, here are some suggestions, for example:

    • for cinnamon rolls, you need to take exclusively wheat flour and definitely premium. Before use, the product must be sifted through a sieve. And a couple of times is better. This will saturate the flour with oxygen, and the baking will turn out to be more airy;
    • you can take absolutely any yeast for dough, i.e. both dry and pressed, to whom it is more convenient. However, in any case, before preparing the dough, they must be activated in warm water (38-42 ° C) with sugar. This process is short in time and takes about 15-20 minutes. But the dough in this case will definitely rise;
    • cinnamon bun dough must contain fat. Options can be very different: butter or vegetable oil, margarine and even sour cream. When using butter or margarine, they must first be softened, but it is better to melt and cool to room temperature. The exception is puff pastry. It’s just not worth melting butter here;
    • if there is a fear that your own dough will not work out or there is simply no time to cook it, then you can buy a store-bought version this product. However, it is necessary to ensure that the dough is fresh, and that it contains only natural and quality products;
    • cinnamon can be put not only in the filling. To make the buns even more fragrant, a little spice can be added directly to the dough. But the amount of cinnamon can be very different. It all depends on the preferences of the hostess and her family members.
