You can quickly cook pies with fresh cabbage on a dough made on the basis of kefir. The main advantage of this recipe is that pastries will be stored for a long time and will not get stale.

For the test you should take:

  • kefir - 250 ml;
  • flour - about 650 g;
  • soda - 1 tsp;
  • eggs - 2 pcs.;
  • sugar and salt to taste.

Pour a glass of kefir into the container, add eggs and all other components except flour. Mix everything thoroughly, add flour gradually and knead the dough. It should be infused for about 30 minutes to start the reaction of kefir with soda.

From ready dough you need to roll out the rollers, a little thicker than dumplings, cut them into portioned pieces. Each juicy should be rolled out, filled with cabbage filling and fried in sunflower oil.

  • In warmed milk, stir the yeast with sugar and wait until they rise. Then salt and sifted flour are added, oil is poured. The dough is kneaded and set aside to infuse in a warm place.

    Meanwhile, in a pan, simmer sauerkraut for 15 minutes, after squeezing out excess juice. The dough rolled into small cakes is filled with cabbage, the edges are pinched, and the workpiece is sent to the pan, straight into the heated oil.

    The dough for this recipe can be made in a bread machine or kneaded by hand.

    To prepare it, stock up:

    • flour - 600 g;
    • warm mineral water- 250 ml;
    • refined vegetable oil - 100 ml;
    • salt - 2 tsp;
    • sugar - 1 tbsp;
    • dry yeast - 2 tsp

    For the filling you will need a small cabbage, hard-boiled chicken eggs, onions, garlic, salt and spices. Preparing the dough in a bread machine is quite simple, filling the bowl one by one with all the products and turning on the desired mode.

    While the base is being prepared, the cabbage is finely chopped, the onion is cut into cubes, and the carrot is rubbed on a coarse grater. In a frying pan, onions, carrots and cabbage are fried alternately, spices and salt are added. Cabbage should be cooked over low heat, adding water, for 15 minutes. At the end, add a little garlic, mix and put in a container. Add finely chopped eggs to cabbage.

    Form balls from the dough, roll them out and fill the cakes with filling. Form a pie and fry it in oil. Ready baked goods you need to cover with a clean towel so that it becomes soft.

    Add sugar, yeast and 2 tablespoons of sifted flour to warm kefir, mix, cover the resulting dough and put in a warm place for 20 minutes to activate the yeast.

    Add sunflower oil, salt and egg to the dough.

    Sprinkling parts of the sifted flour, knead elastic, soft dough. Cover the dough and put in a warm place. The dough should double in size (this may take half an hour to two hours).

    To prepare the filling, put shredded cabbage and grated carrots in a pan heated with a little sunflower oil, cover with a lid. Simmer the cabbage until soft on low heat, remembering to stir occasionally. Then remove the lid, pepper the vegetables, salt and fry until golden brown.

    The pie filling is ready.

    The dough came up too. Make a hole in the risen dough, pour in 1 tablespoon of sunflower oil and knead well again. Adding oil will allow you to work with the dough without flour in the future (you will not need to add flour to the dough and the table).

    Roll the kneaded dough into a roller and cut into 10 equal parts (you can cut it into more or fewer parts, the size of the pie will depend on this).

    Roll each piece with a rolling pin into a layer (you can not roll it out with a rolling pin, but simply press it with your palm).

    Put the stuffing from cabbage and carrots in the center of the cakes.

    Pinch the edges of the dough, forming pies, and then press a little on top with the palm of your hand. Cover with a napkin and leave them for 15-20 minutes.

    Spread pies with cabbage in a pan with preheated vegetable oil and fry on both sides.

    Cabbage pies cooked in a pan are both appetizing and satisfying, and very tasty.
