Ingredients:

For the yeast mash:

✓ 50 ml of water

✓ 1 teaspoon (5 g) dry yeast

✓ 250 ml milk/water/kefir

✓ 2 teaspoons of sugar

Cooking:

Pour dry yeast into a cup, 1 teaspoon of sugar, pour 50 ml warm water and stir. Put in a warm place to rise.

Pour warm milk into a deep container. Add: sugar, salt, yolks, vegetable oil, pour in the risen yeast and mix everything well.

Sift 2/3 of the flour from the total mass and knead (slowly adding the remaining flour) a very soft, sticky dough. Do not hammer the dough with flour, the pies will turn out tough, rubbery.

It is better in the future, when sculpting pies, to use more flour for powdering.

Knead the dough for 10 - 15 minutes (this time is necessary for the flour gluten to start working), carefully, until it lags behind your hands.

Place the kneaded dough in a bowl greased with vegetable oil, tighten the top with cling film and place in a warm place to rise.

I put the bowl of dough in the fridge (overnight). After about 1.5 - 2 hours, make the first stretch, then cover again and leave to rise. After that, you can work with the test.
