Blueberry compotes for the winter with the addition of lemon are both tasty and healthy. And for any housewife, cooking compote is not at all a burden, this process is quite simple and labor-intensive. And there is also the opportunity to show imagination and experiment with the ingredients. After all, for example, the person on duty gets bored very quickly - both to the one who prepares it and to those for whom it is made. After all, you can use a wide variety of fruits, berries and additional ingredients, getting very delicious combinations. For example, I really love blueberries - they are both tasty and healthy. Therefore, I definitely cook compotes with it in the season - just drink it - and close it for the winter. But blueberries can be made friends, for example, with citrus fruits - it will be very fresh, bright taste. Don't believe? And you try compote with blueberries and lemon - I think you will fall in love with it once and for all!

Ingredients for 1 liter jar:
- 100 g blueberries (or 3/4 cup);
- 1/3 medium sized lemon;
- 90 g of sugar;
- 850 ml of water.




We sort blueberries. We remove the crushed ones, clean them from small leaves torn off during collection, and needles (most often blueberries grow in coniferous forests). Then wash the berries by immersing them in a pot or bucket of water. Gently stir in the berries. Drain the water, throwing the blueberries into a colander.





Wash the lemon thoroughly and wipe dry. Remove the zest from a lemon on a fine grater (regular or special, for citrus fruits). We try not to capture the white part, which is located in front of the pulp (this layer is bitter in the lemon). We squeeze the juice from the lemon, making sure that the bones do not fall (1 tablespoon of juice should be obtained).





We lay out the blueberries in pre-sterilized jars, in which we will close the compote for the winter.





We put the zest in a jar on top of the blueberries, pour the lemon juice.





Pour water for syrup into a large saucepan (based on the amount of blueberries).
Bring to a boil and put required amount Sahara. Boil, stirring, until the sugar is completely dissolved. Fill jars with berries with boiling syrup, to the very top. As for the ingredients, we have already done everything. But it's still too early to close cans of compote. In order for such a drink to be well preserved all winter and not deteriorate (the jar did not explode), it must be sterilized.

this procedure is frightening, it is not at all as scary as it seems at first glance. To sterilize the compote for the winter, we need a large pot (to fit the jar). But first (before putting the jars in the pan) we put down either a flat stand or a napkin to avoid direct contact between the jars and the bottom of the pan. After we put the jars and pour warm water - up to the very shoulders of the jars.





When the water in the pan boils, the process of sterilizing the compote begins. We are waiting for 15 minutes - and everything is ready, you can close the compote. Whatever lids you use - screw-on or simple, under a seamer, be sure to close the compote hermetically. Hot jars should be placed upside down and cooled in this form. And after that we hide the compote in the cellar or basement - for storage until winter-spring.




Tips & Tricks:
I want to dwell on the process of sterilizing jars - before you put berries in them and pour syrup over them. It is very important that the jars are not only clean, but also sterilized - you must know for sure that nothing extra will fall into conservation. There are two ways to sterilize jars - over steam (on the stove) or in the oven. If you have few cans (1-2), and there is not much time, then it is better to steam sterilize - it will be faster.



And if there are enough cans, then I advise you to sterilize them in the oven - and there will be less hassle. In addition, for steam sterilization, you will need a special stand-holder for cans, and for the oven - nothing, only the oven itself. Over the steam, one jar needs to be sterilized for 5 minutes, and the jars are in the oven for 15-20 minutes at a temperature of 160-170 degrees.




I forgot to mention that the lids also need to be sterilized. To do this, you can simply hold them in boiling water for 4 minutes.

We sort the berries and rinse well under running water. While the rest of the liquid drains, take a jar, iron cover for rolling and wash them with soda. Then rinse thoroughly and pour boiling water over the inside. Pour the blueberries into the prepared jar.

Now close the jar with a lid using a seamer. Gently turn the jar upside down and check for liquid leaks. If not, then all is well. And if droplets appear, then the seaming process must be repeated with a new lid. We turn the jar upside down and leave it in this position until it cools completely.

Blueberry compote for a child

Children, especially young children, should not use canned food even handmade ones. Therefore, to brew compote, use fresh or frozen berries, less sugar and make the drink less concentrated.

Ingredients:

Blueberries: 0.5 cups;

Sugar: a quarter cup;

Water: 1 l.

Select only fully ripe berries for children's compote.

Wash blueberries thoroughly under running water. Boil water in a saucepan (but not aluminum!) After boiling, pour the berries, bring to a boil, cook for 5 minutes. Add sugar and boil for another 5 minutes. Compote is ready. After cooling (under the lid), we filter the drink into another container. Young children should not be given compote along with berries.

Therefore, for medicinal purposes, it is better to collect berries from young bushes. For those who are primarily interested not in medicinal, but in the gastronomic properties of this plant, this factor does not matter.

To prepare blueberry compote, we only need water, sugar, citric acid, and blueberries themselves in sufficient quantities. You should also think about jars in advance - there should be a lot of them, they should be equipped with appropriate lids. You will also need a jar-capping tool. It can be purchased at stores that sell dishes and all sorts of household items.

Compote with sterilization

The following blueberry compote requires a sterilization process. For him you need:

Blueberry.

Sugar - 0.5 kilograms.

These proportions of sugar are given per liter of water. That is, to cook blueberry compote in a 3-liter jar, you need to triple the amount of sugar.

The berries must first be carefully sorted out, cleaned of leaves and any debris, and then rinsed well. The prepared berry must be put in jars, which should be sterilized before that. You need to fill the vessels to about half their volume. Next, you need to take sugar and pour it into clean water. Then the right blueberry compote requires citric acid to be added there too. Boil water to make hot syrup. With this very syrup, while it is hot, you need to pour jars of blueberries. Banks should immediately be put in a saucepan with hot water. At the same time, in order for the blueberry compote to turn out, and the jars not to crack, you need to put a special stand on the bottom of the pan, or a thick towel. Containers with blueberries also need to be covered with lids, which also have previously undergone a sterilization process. In this form, they should stand in boiling water for about ten minutes, after which the lids can be rolled up.

The more blueberries in your jars, the more concentrated the compote will turn out, it can then be diluted with water. This is very convenient if you are preparing blueberry compote for the winter in large quantities. First, because banks are saving. Secondly, because the fewer cans, the more storage space will remain in the cabinets.

Blueberry compote: a recipe without sterilization

I must say that the technology for making compote without sterilization is simpler. At the same time, the drink turns out to be no less tasty. This recipe will require:

Blueberries - 700 grams.

Sugar - 500 grams.

First you need to prepare the berry. In this part, the technology is no different from that described above, in relation to the recipe with sterilization. After your berry is ready, you need to boil water in enamelware. When the water boils, feel free to pour all the berries and sugar into it, then cook for about twenty minutes. Ready drink, if you are preparing blueberry compote for the winter, roll it into sterilized jars. Twisted containers must be turned upside down and left until cool. For safety, you need to immediately check if the covers are leaking somewhere. It is best to store the finished drink before use in a dark and cool place.

Blueberry compote is very useful, you can also say a decoction of berries. It contains all the vitamins and useful material, so it can be cooked for consumption immediately and, if possible, prepare blueberry compote for the winter. Compote can be cooked from fresh berries and of course frozen blueberries. After all, in fresh blueberries are not available to most. It simply does not come to many regions fresh. Therefore, for both compote and jelly, in most cases we use frozen blueberries. Blueberries, if you notice, have no aroma or smell at all, both fresh and in the same compote and jam.

Therefore, when cooking blueberry compote, you can add various aromatic fruits and spices having a pleasant smell - just like in. Sort and wash the berries, put them in prepared jars on the shoulders. Prepare syrup for filling based on 800 g of sugar per liter of water. Pour jars with hot syrup, put a sprig of mint in each jar. Sterilize half-liter jars for 10 minutes, cork.

Sort the berries and wash them into jars. Prepare sugar syrup per liter of water 800 g of sugar and hot pour blueberries, cover jars with lids and a towel. Hold for 5 minutes, drain the syrup from the jars to boil and refill the jars to the top. Cork jars with compote and turn over, cover with a blanket and keep it until it cools.

Seal, turn over and wrap to let cool.

Compote of blueberries own juice, sugarless. Pour the prepared blueberries into a saucepan, pour in a little water. Bring to a boil and, stirring, steam over low heat until the berries are covered with juice, cook for 15 minutes. Then transfer to jars and seal immediately.

Compote of blueberries with sugar, without pouring. Take 500 g of sugar for 1 kg of blueberries. Prepare the berries to sprinkle with sugar and leave until the juice is given. Then transfer to jars and sterilize half-liter jars for 15 minutes. Cork.

Blueberry compote with apples. Cut the apples into slices, remove the core. Put 5-6 leaves of black currant on the bottom of the jar, put apples, sprinkling them with blueberries. When the jar is full, prepare syrup based on 400 g of sugar per liter of water. Pour jars with hot syrup and sterilize. Cork.

    We put the jar in a container for sterilization, covering the bottom with a silicone mat or a napkin made of natural fibers. We cover with water room temperature at the base of the neck of the jar. Cover the pot with a lid and place over medium heat. Heat water to a boil and sterilize compote for 8 minutes for liter jar and at least 20 minutes for a three-liter bottle.
