Poiret tea useful properties. Pu-erh tea: useful properties and contraindications

In this article, we will look at some of the questions that our clients have asked us more than once. Which Puer more useful - Shu or Shen Puer? How is Pu-erh tea different from other teas? What are the health benefits of Puer tea?

Tea has the peculiarity of extracting useful substances from the earth that have accumulated in it for centuries, and giving useful microelements to the infusion. The tea leaf is a real chemical laboratory. Pu-erh tea includes a whole complex of amino acids, vitamins and microelements, which, penetrating into the blood, help to maintain the balance of metabolism in the human body.

All teas from the tea plant (Camellia sinensis) have undeniable health benefits as they contain polyphenolic compounds. It should be noted that Pu-erh tea contains the same chemicals as green, white, oolong or red tea.

What is the uniqueness of Puerh tea and what distinguishes it from other teas?
For years Puerh has been touted mainly as a safe weight loss aid due to its ability to burn fat and improve stomach function. However, beneficial features Pu-erh tea can only be considered as an aid. You should not expect to get any result just from drinking tea. Nevertheless, tea does have a number of exceptional properties that can be useful for achieving active longevity and improving the quality of life.

Pu-erh is made from broad-leaved varieties of the tea bush. Tea leaves have antimicrobial activity that is considered a medical benefit, including antifungal and anti-inflammatory properties. Pu-erh tea also has the ability to break down fats, which contributes to weight loss and the prevention of cardiovascular disease. The chemical composition of the tea leaves of broadleaf trees grown in Yunnan Province provides a unique aroma and taste of tea, making Puerh leaves suitable for aging, which contributes to its quality. Pu-erh starts life as a green tea, but in a different way. green tea during processing, enzymes remain in Shen Pu-erh (there is no final drying). In the process of aging, these enzymes turn Shen Pu-erh into a dark tea. Puer is a tea that ages naturally (Shen Puer) or artificially (Shu Puer) over time. Tea leaves, which retain a certain amount of moisture, undergo fermentation, which occurs due to the action of various microorganisms. The unique healing properties of Pu-erh tea are associated with the activity of these microorganisms.

Tea (Camellia sinensis) has been used for medicinal purposes since about 5,000 years ago. It should be noted that Pu-erh from different areas of Yunnan Province will have different chemical composition, the amount of catechins as well as theine will vary.

In the 80s of the last century, scientific studies of Pu-erh tea were carried out, during which it was proved that the chemical composition of tea leaves of other varieties is significantly inferior to the leaves of Pu-erh tea from Yunnan province. Tea from this province contains more polyphenolic organic compounds, which are the most powerful antioxidants - epigallocatechin and epigallocatechin-3-gallate.

Catechins
Catechins are polyphenols. Due to their astringent and bitter taste, they also have a great influence on the taste of the drink. Catechins can be divided into three types in free form (catechin, epicatechin, epigallocatechin) and two types of esterified gallic acid (epicatechin glalate, epigallocatechin gallate). The content of gallic acid has the most significant content in mature Pu-erh.

Microorganisms in Pu-erh tea create not only the final taste of tea, but also endow it with beneficial properties.
During the fermentation of Puer tea, large molecules of carbohydrates break down into small molecules of soluble sugar. Soluble sugar is a key factor that contributes to the taste and body of Pu-erh, often referred to as a "sweet" flavor. The polyphenols in tea are some of the most special and beneficial substances. During fermentation (fermentation), these substances in the process of biochemical transformations form a pigment, which gives the liquid a unique red-brown color.

Microorganisms
Pu-erh tea contains microorganisms, which not only endow it with useful properties, but also create good taste, providing sweetness, softness and unique flavor to aged Pu-erh. In addition, the interaction between these organisms creates beneficial compounds that give Puerh tea its unique health benefits. The health benefits of Pu-erh tea are the result of microbial activity. The following microorganisms are involved in the fermentation of Pu-erh tea: aspergillus niger, penicillium, rhizopus, aspergillus glaucus, saccharomyces and other bacteria... The latter bacteria are found in Pu-erh in very limited quantities and do not contain pathogenic species. The following microorganisms are mainly involved in the Vodui fermentation process: Aspergillus Niger and Saccharomyces ocuppy.

We will mainly consider these two types:

aspergilius niger- This is a species of fungi from a number of lower eukaryotes, it is recognized worldwide as safe for consumption. These mushrooms play an important role in determining the quality of Pu-erh tea. The percentage of aspergillus niger in Pu-erh tea is higher than other microorganisms. During fermentation, these microorganisms produce glucomylase, cellulose and pectinase. These three substances can break down many organic compounds, including polysaccharides, proteins, organic fibers, pectin and insoluble carbohydrates, as well as natural fibers. As a result of the breakdown of these substances, monosaccharides, amino acids, hydrated pectin and soluble carbohydrates are released. This makes it possible to isolate useful substances from tea leaf and easy to dissolve them. This process underlies the emergence of a soft, pleasant and rich taste Puer. This is why aspergillus niger is credited with a key role in determining the quality of Pu-erh. In the process of metabolism, this fungus produces organic acid and many enzymes.

Benefits of Saccharomycetes in Puer Tea. Microorganisms in tea not only improve nutritional value Puer tea, but also affect the quality. During fermentation, moisture and temperature provide best conditions for Saccharomycetes. As a result of these factors, enzymatic activity increases. Other microorganisms in the course of their metabolism use carboxylic acid and polysaccharides, producing a large number of poly and monosaccharides, which are necessary for nutrition and acceleration of the metabolism of Saccharomycetes. A fast metabolism results in a sweet and mild tea taste.

Why does pathogenic microflora not multiply during fermentation?
This is due to the fact that during the fermentation process there is a struggle between organisms. For example, metabolic products of saccharomecetes and other microorganisms limit the growth of pathogenic microflora.

Which Puer is healthier than Shu or Shen?
As a rule, the following main useful properties of Pu-erh can be distinguished:

  • helps prevent cancer
  • protects the stomach
  • strengthens tooth enamel
  • prevents the effects of radiation
  • It also helps in the fight against aging at the cellular level.

These properties are manifested differently in Shen and Shu Puer. In Shen Puer, the weight loss effect is due to the large amount of polyphenols, chlorophyll, vitamin C and other substances. As you know, the Yunnan tea bush variety contains a large amount of polyphenols, especially a lot of this substance in fresh leaves. The polyphenol-rich leaves help detoxify the body and protect against radiation. Polyphenolic compounds, namely catechin and theaflafin, a product of its oxidation, help lower cholesterol and triglycerides (fats). That is, Shen Pu-erh helps to control the level of fats in the blood, which helps to reduce weight and blood pressure. Moreover, tea polyphenols kill lactic acid and other bacteria that form between teeth and inhibit glucose activity. This helps prevent the growth of bacteria in the mouth. In this way, polyphenols prevent the growth of bacteria, which usually occurs due to the fact that food remains between the teeth. Such beneficial properties of polyphenols help protect not only teeth from decay, but also prevent periodontal disease.

With the use of Shu Puer, weight loss occurs for a different reason. This occurs as a result of the combined action of several types of microorganisms. They reduce the absorption of triglycerides and glucose in the small intestine, which leads to the fact that fat deposits at the waist become smaller. During the fermentation of Shu Puerh, microorganisms break down high molecular weight polysaccharides into soluble monosaccharides and oligosaccharides. In addition, the fermentation process doubles vitamin C. As you know, these substances are of great importance for improving immunity. Microorganisms also provide one of the main properties of Shu Puer, it does not irritate the gastric mucosa. Shu Puer creates a protective film on the walls of the stomach. Very often, the use of Shu Puerh has a beneficial effect on the health of the stomach and digestion in general.

The name of the tea comes from the place where the very leaves of the bushes were found. They are still brewed all over the world today.

Unlike the preparation methods of other varieties, pu-erh tea leaves become fully fermented as a result of careful processing. First, the leaves are collected from the bushes, then the raw materials are laid out in piles and periodically irrigated with water. When the leaves dry out a little, they are laid out in a uniform thin layer and left for a period of 1.5–2 months for natural fermentation. Tea can also be prepared artificially, but with the loss of some properties and aroma. Harvesting tea in a natural way takes about 7-8 years. During such an exposure time, global changes occur not only in taste and smell, but also in composition. This tea is called "shen", it has a dark color. Artificial drying takes much less time, as a result, a year later, a tea called “shu” will be ready, the shade of which is an order of magnitude lighter than that of “shen”.

After 2-3 years of additional aging, the roughness and bitterness of fresh leaves will go away from the pu-erh.

Shu pu-erh or earth tea is created by artificial, accelerated aging, the leaves of the raw material become dark brown. It turns out after brewing a dark infusion with a touch of cognac, a hint of mint and chocolate. If you store earthen tea longer, the taste of dampness will disappear.
