Cooking fried bean patties

1. Open the canned beans and drain them in a colander to drain the liquid. Pour into the pan 2 tbsp. tablespoons of vegetable oil, heat it, put the beans and warm over medium heat, stirring occasionally, about 7 minutes. Then mash the beans with a fork and transfer from the pan to a bowl.

2. Wash cilantro, dry and finely chop. Peel the onion from the husk and chop finely. Heat up the remaining vegetable oil, add the onion and sauté, stirring, for 4 minutes. Add the fried onion and chopped herbs to the bowl with the beans. Salt, pepper and mix the stuffing.

3. Prepare the dough. To do this, grind the eggs with butter, add sugar, salt, baking powder. Pour in the milk. Gradually adding the sifted flour, knead a homogeneous elastic dough.

4. Knead the lump of dough well, cover it with a towel and leave to rest for 15-25 minutes. Then form a roller from the dough, cut it into equal pieces, roll out a thin cake from each piece.

5. Place 1 tbsp in the middle of each tortilla. a spoonful of filling, lift the edges to the center above the filling, pinch and flatten slightly (with your hand or a rolling pin), giving the round pies a flat shape, convenient for frying.

6. Heat the vegetable oil in a frying pan and fry the pies until golden brown, 4 minutes on each side. It is better if you fry in plenty of oil so that it reaches half the height of the pies. In this case, the sides will brown evenly.

First you need to prepare a soft and elastic dough for pies with beans. In a bowl in which it will be convenient to knead the dough, pour kefir and pour soda. Stir and add sugar, vegetable oil, salt and eggs in turn. Blend with a blender and then in small portions add the sifted flour and knead soft dough. Cover with a clean kitchen towel and let the cooked dough rest.

The next step is to prepare the filling for the bean porridge. Open jars of canned beans and drain them in a colander. Peel and wash the purple onion heads and carrots. Then chop them, chop the onion, and rub the carrots through a grater. Pour some oil into a saucepan and place it on the stove. After heating the oil, transfer the onions and carrots to fry in a saucepan.

Fry vegetables, stirring for about ten minutes. Add to them tomato paste. Stir and put canned beans on top. Immediately sprinkle with red pepper, salt and mix. Beans insisted? Excellent, drain the old water, pour fresh water, put on the stove and bring to a boil. Cooking time - 40-60 minutes, although it may be more. Just take 1-3 beans for a sample from time to time. If they are soft, then the beans are ready, you can remove them.

Add salt only at the very end, 10 minutes before the end of cooking. If you add at the beginning, then, as practice shows, the cooking time is greatly increased. Someone adds soda, believing that it will help to cook faster, but I personally did not notice anything like that. Maybe add a little.

  1. First, clean and wash the onions and carrots. We rub the carrots on a coarse grater and send them to fry in oil over medium heat. After 10 minutes, add chopped onion rings, tomato paste, salt, mix and fry until fully cooked - until they become soft. The main thing is that nothing burns.
  2. In the meantime, you need to mash the boiled beans with a crush to a state of puree. You can use a blender for this. Add pepper and a couple of tablespoons of vegetable oil.
  3. Now posting fried vegetables into the beans (along with the oil) and mix well. The filling is ready.

1. For the filling, soak the beans in cold water for 6-8 hours, or overnight.

2. Drain water, refill cold water two fingers above the beans, bring to a boil, reduce heat to low, and simmer without salt until soft. The beans should soften slightly. During the cooking process, which will last about an hour depending on the type of beans, add cold water as it boils.

3. Drain the broth, if any, add oil and mash the beans. Then add sugar, honey and mix until smooth. Let the filling cool down at room temperature.

4. For the dough, dilute the yeast in slightly warm milk with the addition of 2 tbsp. spoons of sugar and let the mixture stand for 15 minutes so that the yeast is completely bloomed.

5. Melt the butter in a water bath, adding a teaspoon of salt. If it's hot, refrigerate until lukewarm.

6. Eggs room temperature beat with the rest of the sugar until white foam.

7. Combine yeast, butter and egg mixtures and mix well.

8. Add the sifted flour in small portions and knead the dough. It is better to underfill the flour than to overfill it. The dough should be soft, elastic and not sticky to your hands.

9. Place the lump of dough in a saucepan or deep bowl, cover with a towel and leave in a warm place to rise. The dough should double in size.

10. Punch down the risen dough and knead a little more, adding vegetable oil (it is necessary so that the pies do not get stale for a long time).

11. Put the dough back in a warm place, let it rise again.
