Recently, a friend, a summer resident, treated me to sweet peppers from her garden. Gave, as they say, from the heart. A week later, it became clear that my family would not be able to eat such an amount of pepper simply by adding it to salads. The peppers began to wilt. But do not throw away such a gift!
The peppers were all variegated, stuffing is inconvenient. And I thought, if there is lazy cabbage rolls", then why not be "lazy peppers"? I would not be surprised if such a dish already exists in cooking. After all, ideas are in the air. But I this recipe invented no later than today. I decided that if the family appreciates it at dinner, I will post it on Otzovik.
My pepper.

We remove the insides, cut off the ugliness from the skin.

If you find a rotten or moldy (even slightly) fruit, do not feel sorry for it - throw it away. Take pity on your health: rot and mold are extremely harmful.
We cut the pepper into rings of 7-5 mm thick.

Salt and pepper mince to taste. We mix.

Add rice to minced meat. I do not boil it in advance, I pour it dry.

Finely chop the onion.

We take a larger pan so that the products do not lie in it under the very lid. We lay in layers: half of the sweet pepper, minced meat, onion, the second half of the pepper.

Fill with boiling water so that the water does not completely cover the products.

And on the stove. We add a little water.
Add a little more ground pepper. We put tomato paste. Right during cooking, I found out that mine was over, I added ketchup.

We close the lid. When it boils, we will make the fire smaller, but we will not remove the lid. Now you can forget about the pan for 45 minutes.
After 45 minutes, add mayonnaise and simmer for another 15 minutes.
The dish is ready. Sprinkle with parsley.
And - on the table.

We eat with sour cream, ask for more!

Lazy stuffed peppers are a very tasty and quick dish to prepare, for every day. It is incredibly easy to prepare, and tastes exactly like stuffed peppers. By the way, in a plate, the cooked dish looks incredibly appetizing. Serve such peppers ideally with sour cream, but you can also without it.

List of ingredients

  • minced meat - 500 g
  • steamed rice - 1.5 cups
  • carrots - 3 pcs
  • sweet bell pepper- 6 pcs
  • large tomatoes- 5-6 pcs
  • onions - 1-2 pieces
  • vegetable oil- 150 g
  • lemon juice - to taste
  • salt - to taste
  • sour cream - for serving
  • spices - zira, ground black pepper- taste
  • greens - to taste

Cooking method

Peel and wash carrots and onions. Wash tomatoes and peppers. At the same time, clean the pepper from the seeds.

Finely chop the onion, and cut the carrot into cubes or grate on a coarse grater.

Pepper cut into strips.

Pour vegetable oil into the pan (preferably immediately into the cauldron where the dish will be cooked) and put the prepared vegetables. Stir and simmer until carrots are cooked.

If the rice is not parboiled, I usually wash and heat the rice in oil or just in a dry frying pan.

Pour boiling water over the tomatoes and peel them (you can skip this step). Cut into rings. Finely chop the greens with a knife (I love the combination of pepper and celery, so in the photo - he, my favorite).

Transfer the vegetables from the pan to a cauldron or pot (like mine). Add minced meat, herbs, salt and season lemon juice and add spices to taste. Mix thoroughly and pour 3 cups of boiling water into the cauldron. Pour the steamed rice, put the tomato rings and cover tightly.

Bring to a boil and simmer, without stirring, over low heat until tender (at least 40 minutes). Wrap something warm and let it brew. Then arrange on plates, flavor with sour cream and serve.

Enjoy your meal!
