It always seemed to me that pies made from ready-made puff yeast or yeast-free dough so common that it is not worth spending time writing recipes for them - everyone already knows how to cook them so well. It would seem, well, what's so difficult - to buy dough and make pies out of it?

The example of my sister-in-law showed that this is far from the case, especially if young cooks are forced to use untested and poorly balanced recipes from the Internet. It’s so easy to do something instead of pies, but at the same time spoil both the food and the mood.

It was for beginners that I decided to write in more detail a step-by-step guide to pies from purchased frozen puff pastry, which we will cook in a pan or in the oven according to a classic family recipe.

Pick up all the necessary utensils, tools and fixtures for the successful production of puff pastry pies according to simple recipe: a standard baking sheet with a non-stick coating with a diagonal of 25 cm or a frying pan if you decide to fry your products, several voluminous bowls with a capacity of 350 to 750 ml, parchment paper(a cut to fill the baking sheet), a piece of plastic wrap about 30 cm long, teaspoons and tablespoons, a measuring cup or kitchen scales, linen and cotton towels, kitchen gloves, a fine sieve and a steel whisk. Important! If you have a choice, then use yeast puff pastry for such baking, as products from it are more fluffy and tender. In addition, the filling for puff pastries can be made not only salty, but also sweet, with jam or other filling.

  1. Cut the creamy margarine into pieces and let it stand for about half an hour at room temperature.
  2. We clean the onion and finely chop it, you can also chop it in a food processor.

  3. Remove the egg from the refrigerator and lightly beat with a blender.

  4. Defrost the dough completely, using the microwave or just putting it in a warm place.
  5. Then we cut it into two parts and put it in the refrigerator.
  6. We rid the cabbage of rotten leaves and chop with a knife.

Did you know? At this stage, you can prepare some other components for adding them to the filling. I prefer to enhance the taste of pies with spices, which are ideally combined with the filler. In this case, it is cardamom, dried garlic and marjoram. Provencal or French herbs are also well suited.

The first stage of preparation

  1. Pour the chopped onion into a hot frying pan, poured with sunflower oil.



  2. Stirring with a spatula, cook it for about three minutes, then pour the prepared cabbage into it.

  3. Cover the pan with a lid and simmer the mass for about ten minutes, stirring occasionally.
  4. Then remove the lid and fry the filling for about another five minutes.
  5. After that, add pepper, salt and other seasonings of your choice, then mix thoroughly.
  6. Take the roast off the fire and let it cool down Otherwise, the pies will not turn out.

Important! If you decide to cook sweet puff pastry pies, prepare the jam correctly: chop it in a blender and remove excess liquid with cheesecloth, as it can adversely affect the structure of our pies. In addition, you can mix a tablespoon of corn or potato starch to increase its viscosity.

The second stage of preparation

  1. Line a baking sheet with parchment paper and smooth the surface well.
  2. Then generously coat the paper creamy margarine or oil.

  3. We remove the first part of the dough from the refrigerator and roll it into a square layer about three millimeters thick.

  4. We divide the resulting layer into several squares or diamonds.

  5. On the wide base of each triangle, lay out a tablespoon of roasted cabbage.

  6. After that, we wrap our pies, trying not to press them too hard.



  7. We transfer the prepared blanks to a baking sheet, placing them at a distance approximately 3 cm apart.
  8. Then we do the same with the second half of the dough from the refrigerator.
  9. The next step is to coat each pie with a pre-beaten egg.

  10. We allow our blanks to "rest" a little, approximately five minutes.

Did you know? It is not necessary to dwell on the oval shape of the pies, you can come up with your own, depending on your imagination. For example, my children, who are always actively involved in the process of forming any dough products, often sculpt arbitrary figures and even entire compositions (for example, on the theme of certain cartoons).
