Greetings, dear readers. Today we will talk about soup with meatballs. This soup is popular with many housewives, but because it is prepared quickly enough. Another advantage of this soup is its versatility. It can be cooked with any meat, with vegetables, with any kind of noodles, you can add anything you like.

But less often, legumes, or other ingredients that increase the cooking time, are added to these soups. But still, you can add whatever you want.

I tried to choose the most interesting and delicious recipes. Let's get down to the review, but first let's talk about the soup itself, listen to the advice of experienced chefs.

What is the main this soup? Of course meatballs. They differ from meatballs not only in size (meatballs are smaller), but also in that there is no rice in minced meat. Minced meat itself can be made from any meat, but it is best when meatballs are made from different kind meat. You can, for example, add chicken to minced pork. If you love fish, you can make minced fish balls.

To make the soup lighter, you can add the pulp of a soaked loaf to the minced meatballs, but this is not necessary. By the way, you don’t need to put a lot of eggs in the minced meat for bonding, knead it well enough.

The soup itself is hearty, light with melting pieces of meat in your mouth. Therefore, such soups are loved not only by adults, but also by kids.

Minced meat is used only fresh. A real mistress will never take frozen meat. If you buy minced meat in the store, then you need to take it chilled. Add to mince breadcrumbs, or bread crumbs, previously soaked and squeezed.

Crackers can be replaced with semolina, it swells well and holds the minced meat together. Do not overdo it with cereals, it should be no more than 1-2 tablespoons per 0.5 kg of minced meat. After you add the semolina to the minced meat, let it brew for 15-20 minutes.

Bones are used to prepare meat broth, tail, heads, skin are used for fish broth, and any vegetables that are at hand are used for vegetable broth. Mushrooms, carrots, onions, various herbs are ideal for vegetable broth. Thanks to the broth, the soup with meatballs will be more rich and fragrant, it will acquire a richer and brighter taste.

Before adding the meatballs to the boiling water, reduce the heat to a minimum so that your broth will not be cloudy. Do not boil the meatballs separately, the soup will have a completely different smell and taste. If you are not on a diet, you can fry the meatballs in a pan, so your soup will taste even better.

Prepare the meatballs ahead of time and freeze them. This is very convenient, as it will save you time on their preparation next time. Spread the meatballs before freezing on a special parchment paper, thanks to which they will not stick, and you can easily separate them.

I called this recipe the main one, since we cook it often, but we prepare other recipes based on it. And so let's get started.

We will need:

  1. chopped meat- 200-300 gr;
  2. potatoes - 3 pcs. medium;
  3. carrots - 1 pc;
  4. onion - 1 pc. average;
  5. greens - 20-30 gr;
  6. butter- 20 gr;
  7. vegetable oil - 2-3 tablespoons;
  8. water - 2 liters;
  9. salt to taste;
  10. bay leaf - 1 pc;
  11. black ground pepper taste.

Step 1.

AT this recipe We used ground beef, but you can use any. Peel and chop the onion on a grater or blender. 1/2 medium onion goes to 200 grams of minced meat. The butter must be melted or softened.

Add chopped onion, butter, salt and black pepper to taste, as well as a small amount of water to the minced meat, so the minced meat will be more juicy.

In addition to these ingredients, you can add a small amount of fried onions and carrots to minced meat, grated cheese parmesan, chopped greens, finely chopped bell pepper.

After you knead the minced meat, throw it with all your strength on the board, then pick it up, and throw it again. Do this 10-15 times until it becomes smooth and uniform. This is necessary so that the meatballs do not fall apart during cooking.

Now we take the meat with a teaspoon, put it on our hand and roll the balls. At the same time, it is better to moisten your hands with water, so less meat will stick to your hands. It is desirable that the meatballs are the same size, and you need to lay them out at a distance from each other so that they do not stick together.

Pour water into a saucepan and bring to a boil. There we add bay leaf, salt to taste and black pepper, peas or ground. You can also add allspice.

Put meatballs into boiling water and bring to a boil again.

After you put meatballs in the soup, foam will begin to appear, which must be removed. Stir the soup so that the meatballs do not stick together. Once the meatballs float to the top of the soup, they are ready.

Meatballs are cooked for 7-10 minutes in boiling water. Then we take them out of the water. This is the broth we made.

We clean the potatoes and cut them into cubes, or in any way convenient for you. Then put it in the broth and bring to a boil.

In addition to potatoes, rice can be added to the soup, buckwheat, pasta, semolina or other cereals to your taste. Accordingly, pasta and semolina should be added at the end of cooking, and rice and buckwheat along with potatoes.

Step 8

We taste the broth and, if necessary, add salt and pepper to taste. If desired, you can add any more seasoning you need.

Step 9

Now three carrots on a grater. Onion cut into cubes. Let's do the roast. Pour vegetable oil into a frying pan, heat it up, add carrots and onions. Fry until golden or translucent.

Now, after the potatoes have boiled, we cook them for 10 minutes, then add our “frying” and then the meatballs.

  8. bay leaf - 2 pcs;
  9. salt and pepper to taste.

Step 1.

We put water on the stove, turn it on. While the water is heating, peel the potatoes and cut them in a convenient way for you. Then we put it in water.

We make meatballs. Minced meat must be defrosted. We rub the onion on a grater, add to the minced meat. There also salt and black pepper to taste. mix everything thoroughly and form meatballs, as in the first recipe.

Now add the dumplings to the soup. To do this, take a teaspoon, moisten it in water, take half a spoonful of dough and dip it into boiling soup. After that, add peppercorns and parsley.

Mix well so that all the dumplings can float.

Dumplings do not need to be made large, they will still swell when cooked in soup.

Now let's do the frying. We rub the carrots on a grater, and cut the onion into cubes. You can fry everything at the same time as in the first recipe. But more often, I first fry the onion in a pan until half cooked, then add the carrots.

Now put the fried vegetables in the soup, salt and pepper. Mix everything thoroughly.

5 minutes before the soup is ready, do not forget to put spices and herbs in it, so it will become more fragrant and spicy. Well complement the taste of soup with meatballs dill, parsley, celery, green onions.

We will need:

  1. minced meat - 200 gr;
  2. potatoes - 2 pcs;
  3. vermicelli - 3-4 tablespoons;
  4. carrots - 1 piece;
  5. onion - 2 pcs;
  6. bell pepper - 1 pc;
  7. bay leaf - 1 pc;
  8. salt and pepper to taste.

Step 1.

Defrost minced meat. Grate the onion, add to the minced meat, salt and pepper to taste. Mix thoroughly and make meatballs (as in the first recipe).

Step 2

We clean carrots, onions and potatoes. We rub carrots, cut onions and potatoes in a way convenient for you.

Step 3

Now we turn on the multicooker in the "frying" mode, pour a little oil. Pour onions and carrots there, fry until cooked.

  3. small vermicelli - 1/2 cup;

  5. zucchini - 1 pc. (average);
  6. onions - 1-2 pcs;
  7. white bread - 2 slices;
  8. milk - 100 ml;
  9. olive oil;
  10. dill - 3-4 sprigs;
  11. salt and pepper to taste;
  12. greens.

Step 1.

Let's get the meatballs ready to start. Cut off the crust from the bread, and soak in milk for 5 minutes to swell well. Then squeeze out the excess milk.

Step 2
