You can use any mushrooms for soup, I used oyster mushrooms. This soup can also be cooked with dried mushrooms. So it is very convenient to cook in the winter. To do this, pre-soak a handful in 1 glass of warm water. dried mushrooms for about 30 minutes. Then wash the mushrooms and cook according to the recipe. Soup - noodles with mushrooms hastily and very good for the stomach. It is a dietary and low-calorie dish.

Cooking method:

Peel the onion and cut into cubes.

  4. After the broth is a little infused, it must be filtered.
  5. Vegetables and roots can be thrown away.

The finished broth is about three liters. It is not necessary to salt it, salt is added later.

Ingredients:

  • flour - 200 grams;
  • 1 egg;
  • 1/3 cup of water;
  • a pinch of salt.

To prepare noodles:

  1. Crack an egg, add water and salt. Whisk gently but thoroughly.
  2. Slowly add flour, mix.
  3. Knead the dough to a plastic, soft state.
  4. Cover and let rest 20-25 minutes.
  5. Divide the mass into small pieces and roll out thinly to the size of the pan.
  6. In a frying pan without oil, heat the noodles for half a minute on both sides.
  7. Cut each of the circles into three equal parts, put the pieces in a pile and cut across into thin strips.

Take a small amount for soup, dry the rest in the air for several hours. Then put in a container and store until the next soup is cooked.

AT mushroom soup noodles are usually not served with potatoes. If there is a strong desire, you can cook with potatoes cut into cubes. You need to put this vegetable in hot broth 5 to 7 minutes before all other components.

Necessary:

  • 250 grams of champignons;
  • 2 potatoes;
  • 100 grams of noodles;
  • 1 onion;
  • 100 milliliters of vegetable oil;
  • salt pepper.

Step by step recipe:

  1. Peel each mushroom from the ground, rinse under running water, put in a colander.
  2. Cut three champignons coarsely, set aside the rest for now.
  3. Cut potatoes into cubes.

  3. After boiling, we will cook the broth from fresh / frozen / pre-soaked dry mushrooms for 30-40 minutes, from champignons and oyster mushrooms - 15-20 minutes.
  4. Let's brew, we'll proceed. Cut the mushrooms into pieces and set aside until the soup is ready. Discard vegetables and roots.

Mushroom broth is usually not salted when cooked. Salt is added already during the preparation of dishes from it. From this amount of products, about 3 liters of broth will be obtained.

Cooking homemade noodles

  1. Break the egg into a bowl, add salt and water. We'll beat everything well.
  2. Little by little we will add the sifted flour, constantly stirring the dough.
  3. We knead the mass well. The dough should turn out quite plastic, soft. Do not make it steep - during rolling, your hands will literally be taken away.
  4. Cover the dough with a bowl or cling film. Let's stand for 20-25 minutes.
  5. Let's take a frying pan. Divide the dough into several small pieces. We will roll out these parts as thin as possible, focusing on the diameter of the pan.
  6. Now dry the noodles. This is necessary so that it does not become sour in the broth. In addition, this procedure allows you to solve the problem of flour “exfoliating” from the noodles during cooking. We heat the pan on minimum heat (without oil!), We will put circles of dough on it and dry it for about half a minute on each side.
  7. If there is excess flour left on the dough, shake it off. Each circle is divided into three parts. We put all the resulting pieces of dough on top of each other and cut across as thin as possible.

This amount of noodles is a lot for one soup. Therefore, we will set aside as much as we need, and spread the rest on a tray and dry it in the air for several hours. Then this noodle can be folded into a jar or a thin linen bag and used next time.

Noodle soup with mushrooms is usually boiled without potatoes. But if suddenly you can’t imagine first courses without this vegetable, add 2-3 diced potatoes. They must be put in a boiling broth before the rest of the ingredients. Let it cook for 5-7 minutes, then we will add the rest of the products in the order indicated in the recipe.
