Pour one liter of water into a deep saucepan (preferably enameled), add tomato paste and boil for 5 minutes. Next, add vegetable oil, sugar and salt, black peppercorns, bay leaves to the tomato "broth" and boil again for 5 minutes. The fill is ready.

Now in the tomato filling we fall asleep asparagus beans (how much will go in). And leave to boil for another 20 - 25 minutes. After this time, add vinegar and boil for another 5-7 minutes.

We lay out the finished hot beans in pre-sterilized ones and roll them up with lids. We turn the jars upside down, wrap them up and leave them to cool completely.

Products:

Green beans - 1 kg

Tomatoes - 800 g

Onion - 200 g

Carrots - 200 g

Parsley - 10 sprigs

Vegetable oil - 50 g (to taste)

Salt - 1 tbsp. a spoon

Sugar - 2 tbsp. spoons

Vinegar 9% - 2 tbsp. spoons

From this amount of vegetables, 4 jars of green bean salad with vegetables, 0.5 liters each, are obtained.

Wash young fresh pods thoroughly.

Trim the tails, remove the threads and cut into large pieces (about 2-3 cm long).

Pour 2 liters of water into a saucepan, put on fire and bring to a boil. Dip prepared beans into boiling water. Blanch in boiling water for 5 minutes.

Then recline in a colander, cool quickly and let the water drain.

Peel and wash onions and carrots. Chop the onion into cubes, carrots into thin strips.

Heat up the pan, pour vegetable oil. Put onions and carrots, fry in vegetable oil over medium heat, stirring occasionally, 3-4 minutes.

Wash the parsley and finely chop.

Wash tomatoes.

Then grind the tomatoes in a meat grinder, put in a cauldron, put on fire, bring to a boil. Cook over medium heat for at least 15 minutes with the addition of 1 tablespoon salt, 2 tablespoons sugar, 2 tablespoons 9% vinegar.

Put beans, onions with carrots, herbs, allspice and bay leaf in a boiling tomato. Boil the green beans in the tomato for 25 minutes over low heat, stirring occasionally.

Meanwhile, put in a bowl tin lids, add water, bring to a boil. Boil 2-3 minutes.

Rinse the jars well with soda. Put in the microwave, turn on full power for 2 minutes.

Transfer the finished green beans with vegetables in a tomato to clean, heated jars (0.5 or 0.7 l).

Cover the jars with lids, quickly roll up hermetically and leave to cool.

  7. The beans, which were previously placed in jars, are poured with tomato and boiled for half an hour. After that, the banks can be twisted.

To make the beans softer during cooking, you can add a little vinegar.

Bean salad is quite tasty and interesting dish, which is good to use as a side dish for meat or fish.

Required Ingredients:

  • asparagus beans - 2 kg;
  • onion - 1 kg;
  • carrot - 1 kg;
  • tomato sauce - a tablespoon;
  • tomato paste - 200 gr;
  • spices to taste;
  • sugar - 1 tbsp. l;
  • bunch of parsley.

Cooking:

  1. First you need to rinse and sort out the pods, cut them into even strips.
  2. A glass of water is poured into the pan and put on fire. After the water has warmed up, it is necessary to fill the beans there.
  3. In the meantime, you need to peel and grate the carrots, and cut the onion into large half rings. Then the vegetables are also sent to the pan along with tomato sauce, pasta and spices.
  4. After 10 minutes of cooking, you need to add sugar and herbs, boil for another 2 minutes and the dish is ready.
  5. Now it remains only to seal the banks.

  4. Now every 10 minutes until cooking, you need to add half a glass of cold water. When using this trick, the beans cook much faster.

Prepare tomato sauce from ripe tomatoes, it's easy, besides, the dish will turn out organic, it will not contain any harmful additives and preservatives. Add vinegar if you store blanks in a warm apartment. For storage in a cool pantry or cellar, tomato acid, salt and sugar are enough. These products, even without vinegar, will perfectly preserve your workpieces.

Method for preparing canned green beans in tomato for the winter

We make tomato sauce from ripe red tomatoes. Coarsely chop the tomatoes, put in a blender, grind until a homogeneous mass is obtained.


Pour the chopped tomato puree into a brazier, bring to a boil over low heat. Stir until the puree boils evenly.


Then we throw red bell pepper cut into large cubes into the brazier, close the brazier with a lid and simmer for about 10 minutes over medium heat.


We cut the pods of asparagus beans from both sides. It is better to use early vegetables with undeveloped seeds for harvesting. We take out a tough vein from mature pods, it is fibrous and can ruin the whole dish.

Wash vegetables thoroughly under running water.


Cut the pods into pieces 4 centimeters long, throw into the brazier to tomato puree with pepper.

Add vegetable oil table salt without additives and granulated sugar.


Cook for 20 minutes on low heat, pour in 5 minutes before readiness Apple vinegar. As I wrote above, if the blanks are stored in a cool place, then adding vinegar is not necessary.


Wash jars and lids for canning with hot water and soda, rinse thoroughly and sterilize for 10 minutes over steam. We boil the lids. Also, the container can be dried in the oven - put the jars on the wire rack and gradually heat the oven to 100 degrees.

Arrange hot beans with sauce in jars, cover with lids and put in a large saucepan filled with hot water. At the bottom of the pan, do not forget to put cotton cloth! We sterilize the jars for 12 minutes after boiling, twist tightly, turn upside down.
