Cooking instructions

    It is better to choose a small zucchini, with a young tender skin, then it will not have to be peeled. Be sure to wash, cut into rings, 0.7 cm wide, seeds can be left. Approximately the same, only even thinner (on average 0.3 cm) cut the tomatoes.

Baking vegetables under a hat of cheese is increasingly becoming a recipe for everyday, and not just festive cuisine.

A zucchini in such a neighborhood also turns out to be “five plus”.

The vegetable does not require long heat treatment and therefore the dishes are usually put in the oven already sprinkled with cheese crumbs.

Such dishes can be made quite spicy, or more moderate spices can be dispensed with.

Zucchini under cheese in the oven - general principles of cooking

It is preferable to choose zucchini young and medium-sized. These vegetables have a soft skin and small soft seeds. From more mature ones, the rough peel must be cut off and all the seeds are selected. The vegetable is cut according to the recipe, and further preparation depends on the particular dish.

For quick baking, zucchini is cut into rings of various widths or plates. So that the pulp does not turn into porridge during baking and does not fall apart, the mugs are pre-blanched in water or baked in the oven. For stuffing, the fruits are cut in two and the middle is chosen. In this case, pre-heat treatment is not resorted to.

To cook zucchini under cheese in the oven, use hard varieties of natural fermented milk product. Sprinkle grated cheese over cooked vegetables before roasting. It melts well and forms a steam-tight crust, which allows you to keep the juiciness of the cooked dish. Often zucchini in the oven is cooked with pickled cheeses, but even such dishes are still sprinkled on top with chips of hard cheeses.

To improve the taste of zucchini dishes with cheese, various vegetables, mushrooms or minced meat are added to them. Seasoned with spices, which are purchased according to the recipe or selected according to their preferences.

Zucchini under cheese in the oven is baked at 180 degrees, and the baking sheet is placed only in a well-heated oven.

Zucchini under cheese in the oven with sour cream and garlic

Four medium zucchini;

180 gr. medium-fat sour cream;

Several sprigs of dill;

1. Wash the zucchini with cold water. Cut off the edges and cut the vegetables into centimeter-thick rings.

2. Grate cheese on a medium grater, garlic on the smallest one.

3. Combine sour cream with grated cheese. Add garlic, salt a little and mix thoroughly.

4. Cover the brazier with parchment and put the zucchini rings on it. Smear each circle cheese sauce and put the dish in the preheated oven.

5. Remove when the top is well browned, about 20 minutes later.

6. When serving, sprinkle the dish with finely chopped herbs.

Zucchini with cheese in the oven with tomatoes in a creamy sauce

800 gr. young medium-sized zucchini;

40 gr. butter 72% butter;

small pinch nutmeg;

A spoonful of white flour;

A glass of homemade milk.

1. Wipe the washed zucchini dry with a towel and cut into circles, a little thicker than a finger. Place on a wire rack, drizzle with oil and place in preheated oven. The temperature in the oven should not exceed the recommended 180 degrees.

2. When brown spots begin to appear on the surface of the rings, remove them. You need to bake the zucchini so that they retain their shape during further cooking.

3. Take a small saucepan and melt in it over low heat butter. Pour flour there and, mixing thoroughly, fry.

4. As soon as the flour begins to darken and acquire a soft creamy hue, immediately add milk. Do not rush, pour in the milk in a thin stream, and stir the contents of the saucepan vigorously. Take a whisk for this.

5. Add ground pepper and powdered nutmeg. Season with salt and bring to a boil, but do not boil. The sauce will be quite thick.

6. In a deep form, lay out the baked zucchini in a single layer, and spread the tomatoes on them, cut into centimeter-thick rings. The mold does not need to be oiled.

7. Put the remaining zucchini on top of the sauce and sprinkle them well with large cheese crumbs.

8. Place the dish in the oven with a temperature of 180 degrees. and bake until you get a delicious crust.

Zucchini with cheese in the oven - "Vegetable zucchini casserole"

One kilogram of young zucchini;

70 gr. "Kostroma" or other hard cheese;

Olive or sunflower oil, well refined, oil - 50 ml.

1. Grate the washed zucchini with the largest vegetable grater. If the vegetables you got are not the youngest, cut off the peel from them and select the seeds. Chop the onion into small pieces, chop the garlic.

2. Pour one and a half tablespoons of oil into a thick-walled pan, and lightly fry the zucchini over low heat. Then put it on a sieve and leave it in it so that the juice comes down.

3. In a separate frying pan, sauté the onion and garlic until lightly browned.

4. Grind the "Feta" with a fork, chop the dill with a knife.

5. In a separate bowl, break the eggs and beat well with two pinches of salt.

6. Combine "Feta" with zucchini. Add toasted onion and dill. Pour in the eggs and mix thoroughly.

7. Put the vegetable mass in a greased form and gently level the surface. Sprinkle generously with cheese crumbs and put in the oven for half an hour.

Zucchini under cheese in the oven with tomatoes and sweet peppers

300 gr. small zucchini;

A couple of ripe tomatoes;

Two tablespoons of pasteurized milk 3.2% fat;

One chicken egg;

1. Wash vegetables cold water. Cut off the edges of the zucchini, remove the stem from the tomatoes. Remove all seeds from peppercorns and wash off any remaining seeds with water.

2. Cut the vegetables into circles. It is desirable that their thickness does not exceed half a centimeter.

3. Arrange the vegetable rings in a small roasting pan with high boots, alternating with each other. Do not lay the rings flat, but install them vertically, on the narrow part.

4. Sprinkle a little spices on top, you can add a little salt, but not much.

5. Break an egg into milk, add a pinch of ground pepper and a small pinch of salt, beat.

6. Grate a medium-sized cheese crumb and cover the sour cream layer well with it. Top everything with milk-egg mixture and bake for 40 minutes.

Zucchini with cheese in the oven - "Mushroom boats"

Two large zucchini;

200 gr. forest mushrooms(permissible and champignons);

100 gr. smoked cheese.

1. Wash the zucchini and cut each lengthwise in half. Take a sharp knife or a large spoon and carefully remove the middle of the vegetable halves. Then rub the inside of each part with the vegetable spices and set aside.

2. Cut the onion into small pieces and place in a pan with heated sunflower oil. Fry at medium temperature for 3 minutes, add chopped mushrooms and chopped zucchini pulp, selected from a vegetable. Seeds, if they are large, do not need to be added. When all the moisture has evaporated, put the minced mushroom from the pan into a separate bowl.

3. Fill the zucchini halves with minced meat and place them on a baking sheet. Be sure to grease the fryer with oil before doing this.

4. Smoked cheese rub into a coarse grater and sprinkle with stuffed vegetables.

5. Bake the "boats" for 40 minutes.

Zucchini with cheese in the oven with tomatoes - "Vegetable casserole with minced meat"

Half a kilo of lean minced meat;

1.2 kg of medium-sized zucchini;

Eight red tomatoes;

Two tablespoons of unsalted tomato;

150 gr. low-fat sour cream;

Half a mixed bunch of herbs (parsley, dill).

1. Dip the finely chopped onion into the oil heated in a pan and lightly fry. As soon as the slices become transparent, put the minced meat in the pan and gently mash it with a fork. On low heat simmer the onion with meat until fully cooked. To ensure that the meat is fried evenly and does not burn, do not forget to stir occasionally, while crushing the minced meat that has strayed into lumps. Pepper a little at the end.

2. Mix the tomato with 50 ml of water and pour into the fried minced meat. Stir and taste for salt. Add more if needed and remove from heat.

3. On a fine grater, grate the zucchini without removing the peel. Salt a little, mix and put on a sieve. After 10 minutes, squeeze out the remaining juice and leave it there.

4. Wash the greens, dry well and chop. Cut the tomatoes into rings, and grate the cheese on a grater, medium or large.

5. Lightly beat the eggs with a small pinch of salt. Enter sour cream and mix well.

6. Grease a small baking sheet or a high-sided dish with oil and lay out half of the zucchini in an even layer. Put all the minced meat on them and evenly distribute it over the vegetable layer. Then put the zucchini layer again, smooth it out.

7. Lay the tomato rings on top, pour the sour cream and egg mixture. Sprinkle everything with herbs and spread the grated cheese evenly over the entire surface.

8. Place in the oven preheated to 180 degrees. for 40 minutes.

A simple recipe for zucchini with cheese in the oven

Six young zucchini;

100 gr. fat heavy cream, or homemade butter.

1. Cut the zucchini into longitudinal thin plates. The width of one should not be more than 0.5 cm.

2. Into the pan large volume add water and boil over high heat. Dip the vegetables for five minutes, then remove and cool well.

3. Put the blanched plates on a roasting pan greased with vegetable oil.

4. Melt the cream or butter in a small enamel bowl and immediately brush the zucchini slices spread over the roasting pan with it.
