But you don’t always have enough time and energy to cook them, then I offer a simpler, simplified version - rolls from dumpling dough with minced meat in the oven. The dish turns out to be incredibly tasty, juicy and fragrant, but it takes much less time, because the modeling process is much simpler here. These rolls will undoubtedly please you, they can be safely prepared not only for family dinner, and for holiday table. The filling, in theory, here can be the most diverse, I suggest preparing meat rolls, I am more than sure that no one can refuse the additive, it turns out so tasty, appetizing and tender! My minced meat is pork, but any other that you have available will do. Salt and spices are added according to taste, as well as greens. Do not be afraid to experiment and you will definitely succeed!

Ingredients:

for the test:

  • 1 chicken egg.
  • a pinch of salt.
  • 200 ml of water.
  • 0.5 kg. wheat flour.

For filling:

  • 0.5 kg minced meat.
  • 1 onion (turnip).
  • fresh herbs - to taste.
  • salt and spices - to taste.

additionally:

  • 1 onion (turnip).
  • 1 carrot.
  • 1 bell pepper.
  • tomato paste - to taste.
  • salt - to taste.
  • water, in fact.
  • vegetable oil - in fact.

Servings Per Container: 5.

How to cook dumplings dough rolls with minced meat:

First of all, we will prepare the usual dumplings dough. You can use your favorite recipe or cook mine. Whisk the egg with salt and water. We sprinkle flour. First mix the dough with a spoon, then continue kneading with your hands. Add flour as needed to make the dough elastic and not too tight. Cover the dough and let it rest for 20-30 minutes.

For the filling, we combine minced meat, salt, spices, herbs and chopped onion. Mix and set aside for now.

We chop the Bulgarian pepper into strips, onion with feathers, chop the carrots on a grater. Saute vegetables with salt for literally three minutes, until al dente.

Cut the dough into pieces and roll each in flour.

We roll out pieces of dough in the shape of a circle, about the size of a small saucer, thickness, as in sculpting dumplings. In general, the size here can be absolutely any, you can make rolls a little larger and vice versa small. In my opinion this the best option but this is a matter of taste. We put the filling on each rolled piece of dough, distributing it in an even layer, only slightly stepping back from one edge.

We turn the edges on both sides. And we roll up according to the principle of a roll, just as in theory we twist pancakes or cabbage rolls.

We do the same with the rest of the dough until the stuffing is over. I got ten pieces. If you suddenly have leftover dough, do not worry, just put it in the freezer until the next time, it tolerates freezing perfectly.

Now we take a suitable form and put the fried onions, carrots and peppers on the bottom, distributing the vegetables in an even layer.

Lay the rolls on the fried vegetables. We put the dough rolls so that they are at some distance from each other. If you have a small form, then either reduce the ingredients, or cook in two stages.

Connecting tomato paste, salt and water. I take 2 tbsp. l. tomato paste in 0.5 liters of water. Reduce or increase the amount of pasta as desired. Pour the mixture into the mold. As a result, the liquid should cover the rolls by a little more than half.

We put the form in the oven preheated to 200 * C for one hour, covering the top tightly with foil.

Serve hot rolls with minced dumplings on the table in portions along with vegetables. It turns out very tasty, juicy and nutritious dish. If you cook this dish, I am sure that you will be more than satisfied!

Zeppelins (Lithuanian cuisine)

Recipe Ingredients:

Minced beef - 250 g
Pork - 250 g
Onion - 150 g
Raw potatoes - 1.2 - kg
Boiled potatoes - 350 g;
Spices (salt, ground black pepper)
Garlic - 5 - 6 cloves

For sauce:
Smoked lard - 200 g;
Onion - 150 g
Sour cream (10 - 15%) - 500 g; Zeppelins (Lithuanian cuisine)

Cooking method:

Potatoes 350 gr. boil, peel the remaining potatoes and grate. Grind the meat through a meat grinder. Peel 2-3 medium heads of onions, peel a few cloves of garlic and finely chop or grate.

We put the minced meat in a deep bowl, add very finely chopped onions, garlic, half a glass of ordinary water, salt, pepper to taste and mix the mass thoroughly. You can add some mild curry. After mixing the minced meat until smooth, cover with a lid, leave it for now in the refrigerator.

For sauce:
Salo or boiled-smoked bacon cut into thin strips, and run it on a heated frying pan. After 2-3 minutes, throw in finely chopped onion. Salt, pepper and mix. When the onion is lightly browned (after 5 minutes), pour the sour cream, bring to a boil and turn off the heat under the pan. The sauce is ready.

Strain raw potatoes through a fine sieve or gauze. All the juice, and, consequently, the starch flows into the plate, and the squeezed raw potatoes we mix with grated boiled potatoes. Then carefully drain the liquid. Starch should remain at the bottom of the plate. We scrape it off and send it to a bowl with squeezed potatoes.

Now the whole mass must be thoroughly mixed until homogeneous mass.

Making Zeppelins. Rolling up potato ball, flattening evenly over the entire plane. Thus, we will get a "flat cake", with a palm diameter, on which, in turn, we lay out a little minced meat. Now we just have to connect the edges of the "dough" so that the stuffing remains inside. At the same time, the molded zeppelin should resemble the shape of an airship.

After making several blanks, put on a heated frying pan, fry for 5-7 minutes over medium heat on each side.

We spread the finished zeppelins on portioned plates (2 - 3 pieces per serving) and pour the previously prepared sauce on the side.

Sometimes ordinary sour cream is preferred to a special sauce. Well, tastes, as you know, do not argue. traditional recipe cooking "Zeppelins" means boiled zeppelins, but, due to their unattractive appearance in the process of this technological processing and complexity of preparation potato dough, some still recommend frying in a pan or baking in the oven.

But still, real zeppelins in a pan are only warmed up, these are those that were boiled and left uneaten, and they are simply boiled like dumplings in boiling water until they float up, stirring gently so that they do not stick to the bottom and burn.





The ingredients are for one medium roll. Mince - any to your taste. You can mix several types of meat.


Prepare the dough like dumplings. Mix eggs with water for this, salt, add sifted flour, knead elastic dough. You need as much flour as the dough will “take”. Add flour in small portions so that the dough is not too hard. Once the dough has been thoroughly kneaded, cover and set aside. It should "rest". The dough can be prepared only on water, if suddenly there were no eggs. Then you need to take a little more water than indicated in the ingredients. The water should be boiled. While the dough is settling, make minced meat. Twist the meat and 2 onions in a meat grinder, chop the remaining onion very finely and set aside. Mix minced meat and twisted onion, salt and pepper. For juiciness, you can add a little water to the minced meat.


Roll out the dough into a thin layer.


Put the minced meat on top in a thin layer, leaving a little space from the edges of the dough. Minced meat should be well smeared over the dough.


Sprinkle the finely chopped onion on top of the minced meat. It will do ready meal more juicy. And then evenly spread small pieces of butter on top of the onion. This should be done only if you do not have fatty meat.


Roll up seam side down. Pinch the edges.


I cook such a roll in a pan, so I immediately give it a rounded shape so that it fits later in the dish.


Cut the vegetables for the sauce. In addition to these ingredients, you can add sweet pepper and tomato. Onions need to be cut into half rings, carrots, tomatoes and Bell pepper in small pieces. This time I didn't have tomato and sweet pepper, but they taste better with them. Even if I cook with tomato, I still add tomato paste.


Fry in a deep frying pan or saucepan for sunflower oil onion and carrot for 1 minute, add pepper and tomato, fry everything together for another minute, add tomato paste, mix, pour water or broth so that later the roll is half in liquid, salt. Bring to a boil, lower the heat to a low simmer, and place the roll in the pan, seam side down. Cover and simmer over low heat for 30-40 minutes.


Put the finished roll in a large dish, pour over the vegetable sauce, sprinkle with your favorite herbs, cut into portions. This roll goes well with sour cream. But delicious without it. It does not need a side dish, it is an independent dish. You can steam this dish like manti. But stew, for my taste, it turns out more juicy and tasty. A roll stewed with vegetables is also suitable for a festive table, and is good as an everyday meal. Sometimes I serve a cut roll to guests as a cold appetizer. It is very convenient to cook 2 or 3 rolls at once and freeze part of it in the freezer, and cook it if necessary. The process of preparing a frozen roll is absolutely identical.

Simple solutions for those who do not like to stand at the stove and at the word "minced meat" they only imagine meatballs and pasta in a naval way. You have every chance to surprise yourself and your loved ones.

If there is minced meat in the refrigerator, and a baguette in the closet, then in half an hour you can cook an excellent dinner.

Ingredients

  • 500 g ground beef;
  • 350 g of tomatoes in their own juice;
  • 250 g mozzarella;
  • 1 baguette;
  • a bunch of basil;
  • vegetable oil.

Cooking

Minced meat is better to take beef. But you can use a mix of pork and chicken. Fry the minced meat in a well-heated pan for 5-8 minutes. Then add the tomatoes and simmer for about 15 more minutes, until the liquid has evaporated.

Cut the baguette lengthwise, remove the pulp from the middle. Dry both halves in the oven for 2-3 minutes. Cut the mozzarella into cubes. Chop the basil.

Spread the minced meat with tomatoes and cheese on both halves of the baguette. Sprinkle with basil and bake for another 5 minutes.

Ingredients

  • 500 g ground beef;
  • 2-3 medium bulbs;
  • 2 slices of white bread;
  • 2 cloves of garlic;
  • 1 egg;
  • 4 tablespoons chopped parsley;
  • 4 tablespoons of milk;
  • 1 tablespoon red wine vinegar;
  • 1 teaspoon dried oregano;
  • 10 mint leaves;
  • salt and black ground pepper- taste;
  • vegetable oil.

Cooking

Soak bread in milk. Squeeze and add minced meat, egg, chopped onion, garlic, parsley and mint to it. Mix well. Salt, pepper, add oregano, drizzle with olive oil and vinegar. Mix again - better with your hands.

Cover bowl with minced meat cling film and send for an hour in the refrigerator. During this time, the spices will give off flavor, and the meat will give juice (it will need to be drained). If you don't have ground beef, use lamb or pork with chicken (50/50).

Shape the minced meat into balls and fry them in in large numbers hot vegetable oil. Place the finished keftedes on a paper towel to remove excess fat.

Wellington beef is an expensive, festive dish. But it can be simplified by replacing beef tenderloin minced meat. The result will not be worse.

Ingredients

  • 1 kg of ground beef;
  • 500 g puff pastry;
  • 200 g mushrooms;
  • 100 g of tomato sauce;
  • 25 g butter;
  • 4 eggs;
  • 3 onions;
  • 3 cloves of garlic;
  • parsley and other herbs - to taste;
  • vegetable oil.

Cooking

Mix minced meat with chopped onion, 2 cloves of garlic and herbs. Add 3 eggs and mix well. Put in a baking dish and put in an oven preheated to 180 ° C for 20 minutes. Cool down.

Saute the mushrooms with the remaining garlic. Mushrooms will give liquid - fry until it evaporates.

Ingredients

  • 500 g minced meat;
  • 5 tomatoes;
  • 4 burger buns;
  • 2 cloves of garlic;
  • 1 medium onion;
  • 1 medium carrot;
  • 1 teaspoon Worcestershire sauce;
  • 1 teaspoon apple cider vinegar;
  • salt, ground black pepper and chili pepper flakes - to taste;
  • vegetable oil.

Cooking

Peel onions and carrots. Finely chop the onion, grate the carrots. Roast vegetables for vegetable oil, and then add minced meat to them.

While it is roasting, remove the skin from the tomatoes and mash the flesh with a fork. Peel and mince the garlic. When the liquid has evaporated from the minced meat, salt, pepper it and add chopped garlic.

Stir, let warm for a minute, then pour in the Worcestershire sauce and vinegar. Stir again. Finally, add the tomatoes and simmer until most of the moisture has evaporated from the sauce.

Toast the burger buns in a hot dry frying pan. Pour the sauce over the bottom halves of the buns and cover with the top halves.

Ziti is a type of pasta (large long or short tubes) that Italians use for casseroles. This dish is also sometimes called lazy lasagna.

Ingredients

  • 450 g pasta ziti or penne;
  • 450 g of low-fat minced meat;
  • 200 g parmesan;
  • 200 g mozzarella;
  • 600 g of tomato sauce;
  • 1 onion;
  • 1 tablespoon of olive oil;
  • 1 tablespoon dried oregano;
  • 1 tablespoon basil;
  • salt and pepper - to taste;
  • butter.

Cooking

Fry minced meat with chopped onion olive oil. Then salt, pepper, add tomato sauce and simmer for about 15 minutes more.

Boil pasta in lightly salted water until tender.

Grease the baking dish butter. Lay the casserole in layers: half the boiled ziti, half the grated parmesan and mozzarella slices, half meat sauce, more pasta and the remaining cheese. Sprinkle oregano and basil on top.

Bake for 30 minutes at 180°C.

A very simple recipe, as the ingredients do not require additional processing. If there is ready-made in the refrigerator minced chicken, you will assemble the roll in 20 minutes, and after another 40 you will get a delicious dinner.

Ingredients

  • 500 g minced chicken;
  • 200 g of thick sour cream;
  • 150 g of hard cheese;
  • 1 egg;
  • 2 thin pita bread;
  • salt, pepper and herbs - to taste.

Cooking

Salt and pepper the mince. Add chopped greens of your choice to it.

Sprinkle one pita with a small amount grated cheese, put another one on top. Mix minced meat with sour cream and spread pita bread with this. Roll up tightly.

Lubricate the resulting roll with a beaten egg and sprinkle with grated cheese. Place the roll on a baking sheet parchment paper. Bake for 40-45 minutes at 180°C.
