  • Wheat flour 550 gr
  • Serum (can be replaced with water or milk) 220 ml
  • Water 120 ml
  • Olive oil 2 table. l.
  • Yeast (fresh or 1 tsp dry active yeast) 12 gr

  • Salt 0.5 tsp. l.
  • For filling:
  • Salmon (salted) 150 gr
  • Mozzarella 300 gr
  • Arugula (a small bunch of greens) 15 pcs.

  1. Test ingredients.
  2. Combine whey and water together and warm slightly (the temperature of the liquid should not exceed 40 C, so be careful not to overheat it). Pour a tablespoon of sugar into a warm liquid and add yeast.
  3. Stir thoroughly so that the yeast is completely dissolved in the liquid.
  4. Pour in the olive oil.
  5. Add salt and add sifted flour in portions.
  6. Thus knead the dough. First, knead the dough in a bowl for a few minutes so that it comes together in a non-uniform bun.
  7. Next, go to the desktop and knead the dough well for 7-8 minutes. It should become smooth and very tender. If necessary, lightly dust the table with flour while kneading, but do not get too carried away so as not to clog the dough.

  11. And stir. The consistency of the sauce should be close to that of ketchup, so if needed, you can add a little more or less water, depending on the thickness of the pasta. That's it, the sauce is ready.
  12. Also prepare the cheese - grate it on a coarse grater. By the way, instead of mozzarella, you can take any other cheese, as long as it is tasty and melts easily.
  13. Cut salted salmon into thin slices.
  14. After an hour, set the oven to warm up to 230-250 C along with a baking sheet or pizza stone and remove the dough that has already risen.
  15. Turn the dough out onto a floured board and divide it into 3-4 pieces, depending on the pizza size you want.
  16. Roll each part into a ball, cover the koloboks with a towel and leave to rest for 5-10 minutes.
  17. After the right time, take one bun (keep the rest under a towel so that they do not become weathered) and put it immediately on baking paper.
  18. Roll out or stretch with your hands a ball of dough into a cake 5 mm thick (choose the thickness of the dough to your taste, you can roll it thinner or thicker).
  19. Brush the cake with the sauce.
  20. Sprinkle a generous amount of grated cheese on top.
  21. From hot oven Carefully remove the preheated baking sheet and drag the formed pizza onto it. Bake the pizza until done, about 7 minutes or more, depending on the capacity of your oven. The pizza should be browned on all sides.

To make pizza with fish, you need:

  • dough - 1 portion;
  • mayonnaise (fat content 50-70%) - 2-3 tbsp. spoons;
  • mozzarella cheese - 100 g;
  • lemon - 1/2 whole lemon;
  • raw salmon - 2 steaks;
  • ground black pepper - 1-2 pinches;
  • salt - to taste;
  • dried sage - 2-3 pinches;
  • fresh dill - a few branches.

Cooking step by step:


  • Let's start cooking fish pizza with fish: remove the skin and bone from the steaks, and cut the flesh into thin layers. If you have fish fillet- so much the better, it's even easier to cut.
  • We rub the cheese on a coarse grater, and if it is too soft, then you can cut it into small cubes.
  • We turn on the oven so that it heats up to 220 degrees C while we prepare the dish for baking.

Today - pizza with fish. Just recently, I was going through my old recipe notes and found a recipe that a friend of mine gave me a long time ago. This was secret recipe: at one time it was presented to her by a friend who worked in a Moscow restaurant. She said that he gave her this recipe in secret.

In truth, I never cooked it, and therefore I kept the secret stoically. Then I just collected recipes. And then I decided to try to cook, especially since I had no other ideas for lunch today.

  • While the dough reaches the condition, prepare the filling. To do this, steam mackerel. In a double boiler, I cooked it for 10 minutes - very quickly.

  • While the fish is in a double boiler, peel, wash and cut the onion into half rings. I used red to add color to the dish, but any can be used. And finely chop the onion and parsley.

  • Once the fish is ready, remove the bones and disassemble it into small pieces.
  • Grease a baking sheet with olive oil and place the dough on it. My dough was quite soft and I just formed a circle with my hands. Top the dough with tomato sauce.
  • Then lay out the half rings of red onion. They have pieces of fish on them. Salt, pepper and sprinkle with Italian herbs. And then - green onions and parsley.

  • While we were preparing all this, the oven heated up to 200-220 degrees. Put the prepared pizza in the oven and bake for 15-20 minutes. Check and take out when the test is ready.

I must say that the pizza exceeded all my expectations. The dough turned out fluffy and soft. And the fish filling also goes very well with onions and cheese. I will now retire my previous pizza recipe and will now cook the dough according to this recipe.

  • a glass of wholemeal flour;
  • 2 pinches of salt;
  • a glass of warm water;
  • a glass of ordinary wheat flour;
  • two tea spoons of sugar.

We mix two types of flour, previously sifted through a sieve. Add salt, sugar and dry yeast. Stir thoroughly (it is more convenient to do this with a fork). We slightly heat the water from the tap (not boiled!) So that it is slightly warm. Separately, beat the egg in a bowl, mix it with oil and warm water. We interfere. Pour the egg-butter mixture into the flour with sugar, salt and yeast. Knead the dough quickly. We “work” with the dough for 10 minutes until it stops sticking to our hands. We make a ball out of it, cover and put in heat for about an hour.

To prepare the sauce and filling we need:

  • two branches of basil;
  • 150 g salmon;
  • 3 tbsp olive oil;
  • 100 g parmesan;
  • one medium bulb;
  • 6 pieces of cherry tomatoes;
  • one large tomato;
  • red Bell pepper;
  • garlic clove
  • black pepper, oregano, salt (to taste).

We clean the pepper from seeds. Scald the tomato, remove the skin and stalk. We clean and wash the garlic. We put all the products in a blender and grind to a puree state. Then pour into a heated pan with olive oil. Pepper, salt. Simmer until sauce thickens.

Chop the onion into thin strips and marinate in a tablespoon of vinegar for about 30 minutes. After this time, rinse it with water. Three cheese on a fine grater. We clean the salmon from the skin and remove all the bones. We cut into thin slices. Cut the cherry tomatoes in half and remove the seeds with a teaspoon. We decorate the finished pizza with basil leaves and immediately serve it on the table, since pizza with fish is most delicious when hot.

Pizza with mushrooms, tuna and tomatoes

To create a test, you will need to take:

  • a glass of warm water;
  • a bag of dry yeast;
  • 0.4-0.5 kg whole grain flour(you can even add a little buckwheat);
  • ½ teaspoon fructose;
  • a teaspoon of salt.

Pour the yeast with warm water and add a few tablespoons of flour here. We put in a warm place and wait 30 minutes until the dough rises. We mix the remaining flour, fructose and salt, pour the fermented dough, knead well and put the dough in heat for half an hour or an hour.

  • 200 g of champignons;
  • three large tomatoes;
  • two pieces of baked (canned) sweet pepper;
  • 75 g of tomato paste;
  • 150 ml of natural yogurt;
  • one onion;
  • spices (to taste).

Stew mushrooms with onions (in water without oil), after 10 minutes add spices, yogurt, tomato paste, salt, tuna and black ground pepper. Spread the fish and mushroom mixture on a browned base, put on top thinly sliced ​​​​tomatoes, sweet peppers and again send the pizza to the oven for 5 minutes.
