To begin with, we choose a fish, in principle, any one will do, boneless or with bones, it all depends on your desire and capabilities, in my case these are two small trout. We bring the selected carcasses home and thoroughly rinse them under streams of cold running water, at the same time removing scales from them with a knife or a special scraper in the direction from tail to head. Then we rip open the abdomen of each fish, gut them from the insides, rinse again, dry with paper kitchen towels, rub salt from all sides, crush with black ground pepper, move to a clean dish and leave alone for 15–20 minutes.

At the same time, turn on and preheat the oven to 180 degrees Celsius. After that, using a clean knife, peel the onion and wash it thoroughly with lemon, parsley or dill. We cut the citrus into two equal halves, one of which is set aside, it will be needed later, and the second is chopped into rings 5 ​​to 7 millimeters thick. We leave the sprigs of greenery whole or finely chop and proceed to the next step.

Step 3: Prepare the fish for baking.


Again we spread the trout soaked in spices on the cutting board, stuff it with rings, as well as dill or parsley, sprinkle with an additional portion of spices if desired and sprinkle with juice from the remaining half of the citrus.
