Cheese sticks recipe from cheese dough. How to cook cheese sticks according to a step-by-step recipe with a photo

soft buns with crispy cheese crust- that's what cheese yeast sticks are. Yummy!!!

It is once again confirmed that almost all baked goodies that are sold in stores can be baked at home! At home, you can easily make a chocolate cake, and choux pastries, and succulents, and biscuit cookies, and now - cheese sticks!

Ingredients for Yeast Dough Cheese Sticks:

  • 50 g fresh yeast;
  • 1 glass of water or milk;
  • 1 tablespoon of sugar;
  • 50-70 g butter;
  • 3 eggs;
  • 1 teaspoon of salt;
  • 3.5-4 cups of flour;
  • 150 g hard cheese.

How to bake cheese yeast sticks at home:

As a base for the dough, we take a proprietary recipe for rich yeast dough, only changing it a little, because our buns will not be sweet.

We grind the yeast with sugar, pour in warm milk, mix, sift 1 cup of flour, mix again and put in heat, covered with a towel.

After 15 minutes, when the dough rises and bubbles appear in it, add warm melted butter, salt and 2 eggs (and leave the third for lubrication).

Little by little, in 3-4 doses, sift the rest of the flour, kneading a soft dough that does not stick to your hands. Having kneaded the dough well, again put it in heat for 15-20 minutes.

Then we crush the dough, divide it into 7-8 parts and roll out oblong cakes up to 0.5 cm thick.

Three 100 g of cheese on a coarse grater and sprinkle the cakes. We leave a small piece of cheese, we will need it later.

Roll up the cakes.

And pinch the edges well.

Place the cheese sticks on a greased baking sheet. vegetable oil, at a distance of 4-5 cm from each other, so that they do not stick together during baking when they come up. Let rise slightly warm while oven preheats (5-10 minutes).

We put in warm oven and bake at 180-200C for about 20 minutes. In the meantime, the sticks are baking, beat the egg with a fork for lubrication and grate that small piece of cheese that we left on a fine grater.

Then we look: is the crust on the buns dry? So it's almost ready! We take out a baking sheet, grease the sticks with a beaten egg (or even better - with a bright homemade yolk!) And sprinkle with grated cheese.

We put it back in the oven, increasing the heat, for 5-7 minutes.

The sticks-buns will brown beautifully, and the cheese will melt appetizingly!

Cheese sticks are ready!

Great with a cup of coffee and tea!

Great option for an appetizer.

  • a sheet of finished puff pastry;
  • 50 gr grated hard. cheese;
  • egg yolk;
  • 2-4 pinches of ground pepper.

Beat the yolk a little with a fork.

Defrost a sheet of dough in advance. Roll out on a piece of parchment. Lubricate with yolk on top, rub with cheese and sprinkle with pepper.

Heat up the oven to 180 degrees. We send parchment with blanks of cheese sticks into it and bake for 5-7 minutes.

Recipe for cooking in batter

Cheese sticks in batter are quite juicy and very tasty:

  • 250 gr hard. cheese;
  • 2 eggs;
  • a glass of water/fresh milk;
  • a few pinches of salt;
  • stack flour;
  • oil for frying.

We cut the cheese into cubes approximately 10 cm long and 1 cm thick.

For batter in a bowl with a whisk, beat water, eggs, salt and flour.

Next, it remains to prepare the sticks themselves. To do this, heat the oil, dip the cheese sticks in batter and immediately lower them into the hot oil. Fry for a minute or two. Then remove all the sticks with a slotted spoon, put on paper towels to drain excess oil.

Breaded

Breaded cheese sticks turn out to be unusually tasty: when warm, the cheese filling retains a slightly liquid state, which makes the delicacy even more appetizing.

The recipe is very tasty and simple.

Based on two servings, you will need the following amount of products:

  • hard cheeses - 200 gr;
  • egg - 1;
  • flour - ½ cup;
  • breadcrumbs - ½ stack;
  • postn oil refined.

On two saucers we pour crackers and flour separately.

Whisk the egg with a fork.

Cut a slice of cheese into strips, roll well in sifted flour.

Pour the oil into a frying pan and heat it up.

Dip the cheese sticks in flour into the egg mass, then roll in breadcrumbs.

Put the sticks in oil and fry on all sides until golden brown.

A simple version of pita bread

Lavash cheese sticks are prepared as follows:

  • 2 eggs;
  • 2 processed cheese;
  • 2 table. l. drain. oils;
  • garlic clove;
  • a couple of sprigs of dill;
  • Armenian lavash.

We freeze the curds in the freezer for 5-7 minutes, then cut into thin ribbons.

Whisk the eggs in a bowl.

Separately, squeeze the garlic and finely chop the dill, mix everything well.

Lavash with a sharp knife is divided into wide strips (approximately 8-9 cm long and 10-11 cm wide). In each strip we put a couple of cheese ribbons, a little garlic with herbs. Then we wrap the filling in pita bread to make a roll.

Dip them in the egg mixture and fry butter until delicious golden.

Snack for beer with sesame

Cheese snack to beer with the addition of sesame will become a favorite delicacy home cooking. Cheese sticks with sesame seeds are well suited not only to beer, but also to wine (preferably white).

Appetizer goes well with beer.
  • hard cheese - 200 gr;
  • drain. oil - 150 gr;
  • flour - 1 stack;
  • sugar - ⅓ tsp. l.;
  • coarse salt;
  • egg;
  • sesame - 15 gr.

We put the butter at least an hour before cooking in the freezer - it will need to be grated, and it will be easier to do with frozen butter.

In a wide bowl, three butter and cheese, sift the flour and add sugar. Knead the dough by hand - first appearance it will resemble more oily crumbs than soft, airy, elastic dough. After a few minutes, when the butter melts, the dough will become tender and soft to the touch, will not stick to your hands, and you can roll a ball out of it. The dough turns out obedient. To make it convenient to form products from it, we make the ball a little flat, wrap it in a film or bag and send it to the freezer so that it freezes a little.

In the meantime, beat the egg until foam appears and the liquid is more or less homogeneous.

We take the dough out of the freezer, remove it from the film and roll it out a little. Next, you need to form cheese sticks - they should be approximately the same so that they can bake equally well inside.

There are two options:

  1. Pinch off approximately the same pieces of dough and roll them into sausages of the same length and thickness.
  2. Squeeze identical circles in a stack, which are then rolled into sausages.

Put the appetizer on a baking sheet with a parchment sheet. Lubricate from above egg mass, lightly salt and sprinkle with sesame seeds.

The snack is baked for 10-15 minutes. You need to focus on the golden hue.

Fried cheese sticks

  • 500 gr hard. cheese;
  • 2 eggs;
  • 50 gr cream;
  • stack flour;
  • 2 stack bread crumbs;
  • postn. oil for frying snacks.

Cut cheese into sticks.

Whisk cream with eggs until smooth.

Separately, pour flour and crackers on saucers.

Heat oil in a frying pan. Roll the cheese stick in flour, then dip in the creamy egg mass and then roll in breadcrumbs. Pour immediately into hot oil. When the product acquires a delicious golden hue on all sides, remove from the pan to a plate with paper towels.

Options with crab sticks

Cheese appetizer with crab sticks can be made in the form of appetizing balls. An appetizer is suitable in case you need to quickly set the table or just to festive feast.

This dish will decorate any festive table.
  • 100 gr crab sticks;
  • 50 gr cheese hard. varieties;
  • 3 eggs;
  • 1 garlic clove;
  • 2 table. l. mayonnaise;
  • a few sprigs of fresh dill or onion feathers;
  • a few pinches of salt.

Hard boil eggs, cool cold water, clean.

Grate cheese, eggs and sticks into a bowl for preparing snacks, squeeze garlic with a press, season with salt and mayonnaise.

Using a tablespoon, scoop out some mass and roll into a ball by hand. Put them on a dish, sprinkle with chopped herbs.

With the advent of private bakeries and ready-made food departments in large supermarkets, our, so to speak, culture of bread consumption has changed. If earlier it was just an addition to dishes that added satiety to a meal (because the choice was simple - black bread, a loaf, a bun), today we are learning to appreciate bread in itself and choose it for different dishes.

However, this pleasure is not cheap, since any “special” bread of non-mass consumption has a special price, despite the fact that its cost is almost the same as the cost of plain bread, because the technology changes more than the composition.

Therefore, gourmets who want to eat deliciously for the same money should learn how to bake their favorite types of bread at home: there will be fresh bread for dinner, savings and enjoying the process are a solid positive.

An example of such a delicious and simple bread is cheese sticks. Normal yeast dough on the water, a little hard cheese- and you have fresh crispy salty bread that will decorate your usual dishes.

Ingredients

  • water - 170 ml
  • flour - 2 tbsp. (250 ml each)
  • dry yeast - 1 tsp
  • salted hard cheese - 50-100 g
  • honey - 1 tsp
  • salt - 0.7 tsp
  • sunflower oil - 1 tsp
  • milk - 1 tbsp. l.

Cooking

1. Mix all the ingredients except milk (milk is needed to lubricate the sticks) and knead a thick, non-sticky dough. Knead it for 5-10 minutes.

2. Leave the dough to rise 3-4 times in a warm place. This will take 2-4 hours, depending on the room temperature.

3. Punch down the dough, gather into a ball and roll out on a floured surface.

4. Sprinkle a layer of dough with a piece of finely grated cheese.

5. Gather the ends of the dough together.

6. Roll it out again and sprinkle with the second piece of cheese.

7. Gather the ends of the dough, knead it a little so that the cheese is distributed over the entire thickness, and roll it out again.

Cut the dough layer into strips.

8. Make a spiral out of each strip by turning it by the ends.

9. Put the sticks on a baking sheet, let them grow a little, brush with sweetened milk and sprinkle with the rest of the grated cheese.

10. Bake the sticks at 150°C until golden brown.

Note to the owner

1. Among semi-hard cheeses there are brackish varieties - such as are required by the recipe. Along with hard varieties, they can be used in cooking. Only there is a problem: when rubbing them, sticky lumps are obtained, but crumbly chips are needed. Freeze will correct the problem. Small cheese bars, after lying for a quarter of an hour in the freezer, will easily succumb to the sharp teeth of the grater. The crushed product will be the desired configuration.

2. Do not refuse to bake these breads if there is no honey at home. Let sugar (40 grams) or some thick and viscous syrup, such as rose hips (a teaspoon), go into the batch instead. True, the dough will darken a little from it, but this is even original. The crust will turn light brown and the crumb will become beige. A similar effect will provide molasses.

3. For receptions they always try to pick up bakery products that do not crumble. Cheese sticks are ideal in this regard. Therefore, buffet sandwiches are made on their basis, baking even and large products that look like elongated buns. They are more convenient to eat than open sandwiches. Guests are always more willing to take food from the table that guarantees the cleanliness of their hands and the accuracy of its use.

How to cook cheese sticks in the oven

  1. Softened butter is combined with one raw egg. Thoroughly stir the mixture with a fork.
  2. Three small chips of hard cheese.
  3. Next, we rub the cheese in the same way.
  4. Add two types of cheese to the butter mass and carefully mix until smooth. Brynza will make the sticks quite salty, so there is no need to add additional salt to the dough in this case.
  5. Mix about half a glass of flour with baking powder and sift to the butter-cheese mass, stir.
  6. Next, proceed to kneading by hand, adding flour in small portions. We achieve a dough that is elastic and does not stick to the palms. If necessary, increase the dosage of flour.
  7. From the resulting flour mass we form thin "flagella" about 15 cm long and spread on a baking sheet covered with parchment.
  8. Lubricate each blank with a raw egg, and then generously sprinkle with sesame seeds. We bake cheese sticks in an oven heated to 200 degrees for 15-20 minutes (until a light golden crust appears).
  9. Having removed from the baking sheet, you can immediately carry freshly prepared pastries to the table. These sticks are good both hot and chilled.
