I used to not really like to make cabbage rolls, because I did not know how to cut cabbage. But today I decided that I need to overcome myself and take up this business. And as it turned out, I even liked it! I'll tell you how I did it: I poured water into a large saucepan and when it boiled, I lowered the cabbage into it. It is only better to cut the head first, as it will interfere. When the cabbage was boiled for 1-2 minutes, I just took two forks and separated the top sheets. Then again she waited a couple of minutes (the saucepan with cabbage is on low heat) and again separated the top leaves. Everything is very easy and fast. I even did it for the first time in 10 minutes. Do you already have experience in this matter? How do you undress cabbage?

A few more words do not count minced meat - blue ones can be replaced with zucchini, many more add a little crushed walnuts(about a third of a glass), well, instead of tomato juice, you can take tomatoes (rub on a grater). By the way, according to this recipe, you can cook vegetarian stuffed peppers.

Quantity- 15 cabbage rolls.

Time for preparing- 120 minutes.

Ingredients for cabbage rolls:

  • 1 head of cabbage;
  • 2 eggplants;
  • 2 carrots;
  • 2 peppers;
  • 150 g paneer (or Adyghe cheese, but not required);
  • 1/2 stack. rice (but you can also 2/3 stack.);
  • 0.5 l of tomato juice;
  • salt, black pepper, turmeric, nutmeg, asafoetida or other spices to taste.

Put the rice to cook until cooked, and at this time separate the cabbage leaves.

Also, fry spices (turmeric and asafoetida) in a pan in a small amount of oil, add carrots and Bell pepper(one by one).

Fry for 2 minutes and add finely chopped eggplant. Also fry for a couple of minutes.

Then salt, add 150 ml of tomato juice and paneer (finely chopped or grated). Simmer for 5 minutes.

Mix rice and vegetable fry together. Salt and season with pepper if needed.

Make a sauce: the remaining pepper and carrots are also finely chopped, fry in oil (+ nutmeg) for a couple of minutes and pour the remaining tomato juice, salt and simmer for 5 minutes. In order for the gravy to be thicker, you can add 1-2 tsp. flour. But I didn't add it.

On the cabbage leaf lay out the minced meat (1 tbsp each) and wrap it in an envelope.

I got 15 pieces. But next time I will boil more rice (2/3 cup or even a glass), since there was not enough of it in the minced meat (as for me), and, therefore, more cabbage rolls will come out.

Put all the envelopes in a saucepan (you can put a couple of cabbage leaves on the bottom so that the cabbage rolls do not burn) and pour in the gravy, add water so that it covers all the vegetable cabbage rolls. And now stew them until the cabbage is ready. The time depends on the age of the latter. It may take an hour or an hour and a half.

In a pot of boiling water, add one teaspoon of vegetable oil and a little salt. We also send peeled and pre-washed rice there. Cook it for 10 minutes over low heat. Mushrooms need to be washed, peeled and cut into pieces. Onions, carrots and bell peppers are also peeled and washed well. Onion and pepper are cut into small pieces. Carrots are rubbed through a medium grater. A little vegetable oil is poured into a heated pan. Onions and carrots are fried until golden. At the end, you can add a little vegan sour cream or cream and mix.

2. Divide the head of cabbage into separate sheets. Heat water in a large saucepan and place the sheets in it. It is necessary to boil them a little so that they become softer and it is possible to roll them into rolls. But do not digest, otherwise the cabbage rolls will fall apart.

Remove the leaves from the water and set aside.

3. Mix all the ingredients for the filling, add ¼ of the cooked tomato sauce so that the filling is not dry.

Lay it in the center of the sheet and carefully wrap it. Try not to overfill. If necessary, you can pin the envelope with a toothpick (see photo at the bottom of the page), and remove it after cooking.

4. Roll up all the cabbage rolls in this way, then put them on the bottom of the pan, starting with the largest ones and ending with the smaller ones. Fill a saucepan with sauce and add vegetable stock or water. Bring to a boil, and then reduce heat as much as possible. Simmer for about 40 minutes until soft.
