Hi all!
Not so long ago, such pastries as muffins and cupcakes became popular in our country. That is, in fact, small cupcakes with or without filling. And somehow our manniks, sour cream and large muffins in the form of a rhombus faded into the background. But it all depends on the form of serving baking. For example, muffins and cupcakes are served in portions in small paper cups, they are baked, by the way, also immediately in them. So why not try making mannik using the same baking tins. Indeed, at its core, mannik is the easiest version of a cake that is suitable for children and the elderly.

To prepare manna, we need:

  • - 160 gr. semolina;
  • - 130 gr. wheat flour;
  • 180 gr. granulated sugar;
  • 350 gr. kefir;
  • 0.5 tsp soda;
  • 2 chicken eggs;
  • 40 gr. vegetable oil.

Pour kefir into a large container

Add a glass of semolina and granulated sugar to it.

We send two chicken eggs into a bowl. We mix everything well.

Add the sifted flour little by little. If it is necessary to make the mannik completely dietary, we remove the flour from the recipe, and put the semolina twice as much.

At the end, put half a teaspoon of soda or a teaspoon of baking powder. There is no need to extinguish soda, since the dough contains a fermented milk product.

Butter can be taken vegetable or pre-melted butter. You will need 2 tablespoons. We send the oil to the dough and knead well.
At this point, work is suspended for about 1 hour. It is necessary to let the semolina swell, and the soda and kefir to react.
Returning to work, first of all, turn on the oven, let it heat up to 150 degrees.

Ready dough must be divided into molds. In this case, a metal mold for cupcakes is used. You can take silicone molds or, as mentioned earlier, special corrugated paper molds.

It is best to grease the metal mold from the inside with butter and sprinkle with semolina so that the cupcakes do not stick. With silicone and paper molds, this problem does not arise.

We spread the dough with a spoon without reaching the edges by about 0.5 cm. Unlike flat muffins, the manna dough is porous and rises very well.

You can add any available berries by pressing them into the dough. Or take raisins, nuts, dried fruits, chocolate pieces and more to your taste.

These are such that I don’t even know if there could be some simpler recipe. Mixed, poured into molds, baked. No pitfalls, nothing that could ruin the final result. I can’t even imagine that this recipe may fail - it is elementary. Plain muffins, like twice two, in general. But! At the same time, the baking turns out to be so deliciously wonderful that I am writing this recipe, and I myself think that I urgently need to run to the kitchen and repeat, repeat again and again, because it is actually very tasty.

Did you know that semolina boasts a high content of potassium, an element that ensures the smooth functioning of the heart? In addition, semolina is useful for iron, B vitamins, and an essential vegetable protein.

Dough semolina muffins comes out crumbly, slightly crispy, but at the same time completely devoid of heaviness, for example, shortcrust pastry. Of course, you can’t call it airy either, but it’s still very light and even fluffy. Considering that in these plain muffins practically no fat, this is a very considerable plus. In general, cook - you will not regret it! I added a little raspberry to the dough - it plopped down, but the overall impression of baking did not spoil. If desired, you can add zest, nuts, dried fruits, candied fruits and whatever you want. But raspberries, keep in mind muffins on kefir"sounds" incredibly cool.

Ingredients:

1 cup of sugar;

1 glass of kefir;

1 glass of semolina;

1/2 tsp soda;

1/3 tsp salt;

1 st. l. vegetable oil.

I use a 200 ml glass.

I pour kefir into a bowl.

Pour sugar, break the egg, add salt.

Stir, add oil.

Add semolina, stir, leave for 5 minutes.

After that, I add soda, mix again and pour into muffin molds.

I bake simple muffins on semolina and kefir for about 20 minutes at a temperature of 180 degrees.

Enjoy your meal!

With a glass of milk or a cup of strong coffee - a wonderful pastry.

Pour semolina into a bowl, add kefir at room temperature, mix and leave for 40 minutes so that the mass swells.

Melt the butter (you can not melt completely) and cool a little, add sugar, vanilla sugar and salt to it, beat the mass with a whisk.

Add eggs to butter mixture and beat until smooth.

Next, add the swollen semolina mixture, mix with a spoon. Add flour sifted with baking powder, mix well.

The dough will be pourable and homogeneous.

Divide the dough over silicone molds without adding 5 mm to the top. These cupcakes will not rise much when baking.

Preheat the oven to 180 degrees and bake the semolina muffins for 30-35 minutes. The top of the cupcakes will brown well - this determines their readiness, but I still advise you to play it safe and check the doneness with a toothpick or wooden skewer (the toothpick should remain dry when piercing the finished cupcakes).

Sprinkle cupcakes with powdered sugar and enjoy! From the indicated amount of ingredients, you will get 12 very tasty semolina muffins mixed with kefir.
