  • 150 gr. butter, room temperature
  • 4 eggs
  • 1-2 tsp vanillin or vanilla sugar
  • 1 tsp lemon peel
  • 1 tsp orange peel
  • 100 gr. raisins
  • 50 gr. blueberries, dried cranberries, can be replaced with candied fruits, raisins
  • 70 gr. almond nuts(hazelnuts, cashews, walnuts, etc.)
  • 1/2 tsp salt

Cooking:

1. Remove the zest from the orange and lemon. But before removing the zest, citrus fruits must be scalded with boiling water to remove the protective layer.

2. Cottage cheese must be rubbed through a sieve to obtain a delicate texture. Softened butter, put in cottage cheese along with lemon and orange zest.

3. Combine the curd mixture with sour cream, sugar, salt, vanilla, eggs, mix until smooth, first with a spoon, and then with a mixer.

4. We shift the mixture into a saucepan with a thick bottom, move it to the stove, over a very small fire, stirring occasionally. As soon as the first bubbles appear, turn off the fire.


curd mass it is necessary to cool, for which we put the pan on ice, and then cover it with a film, put it in the refrigerator for 2 hours.

5. Let's prepare the form, it should be: either special for Easter cottage cheese, or you can adapt a plastic container with holes. We cover with wet gauze, from several layers and put on a plate.

6. Mix the finished mass with candied fruits, nuts, raisins and fill the pasochnik.


We wrap the edges of the gauze on the top of Easter, level it and put the load on top. It can be a jar of water or a pack of salt. We send this “design” to the refrigerator for 1 day, periodically pour out the resulting liquid.



7. Having taken it out of the refrigerator, remove the load, turn it over onto a dish, remove the form and gauze. We decorate Easter with food decorations, raisins, etc., than our imagination will tell us. You need to cut the curd Easter with a hot and wet knife.


Cottage cheese Easter without baking with candied fruits on gelatin


We need:

  • 600 g cottage cheese
  • 125 gr. sour cream
  • 50 g butter
  • 1 st. powdered sugar
  • vanilla sugar, salt to taste
  • 30 g cream
  • candied fruit to taste
  • 20 g gelatin

Cooking:

1. Pour gelatin with water and leave to swell. It is better to use instant. Proportions according to the recipe on the package.

2. To obtain a soft consistency of cottage cheese, grind it through a strainer.

3. Add sour cream, powdered sugar, a pinch of salt, cream, softened butter to the cottage cheese and mix with a mixer. At the end, put vanilla and swollen gelatin.

4. Pour candied fruit or other dried fruit into the curd mixture, mix thoroughly until smooth.

5. We cover the form with gauze and fill it with prepared cottage cheese, tamp it down, cover it with gauze, put the load and put it in the refrigerator for 3 hours. Do not forget to put a bowl to drain the liquid.

6. After that, we turn it over onto a dish, remove the gauze and decorate Easter.

Easter cottage cheese without eggs with raisins and candied fruits without sugar


This recipe may be suitable for type 2 diabetics.

We need:

  • 500 gr. cottage cheese 9% or homemade
  • 100 gr. candied fruits, raisins
  • 50 gr. coconut flakes
  • 4-5 tbsp. fructose or fine brown sugar
  • 200 ml low fat cream 10%
  • 1 tbsp agar-agar

Cooking:

1. If the cottage cheese is granular, grind it through a sieve.

2. We combine cottage cheese with fructose, raisins, candied fruits, coconut flakes and mix thoroughly.


3. Pour the cream into a saucepan and put on a slow fire. While stirring the cream, add agar-agar and bring to a boil. Boil for 1 minute, you get a creamy jelly.


4. We prepare the form for Easter, we cover it cling film. This must be done so that after adding agar-agar to the curd, quickly move it into the mold.

5. Mix cottage cheese and cream, mix until smooth.

In the form, lay out the curd mass and tamp.

We turn over on a dish, remove the pasochnik and the film.

We need:

  • 600 g cottage cheese, homemade
  • 100 g butter

  • zest of 1 orange or lemon
  • 1/4 tsp turmeric

Cooking:

1. We combine cottage cheese with softened butter, sugar and sour cream, grind with a spoon until smooth, you can use a blender.

2. The resulting mixture is divided into two parts:

  • 1st, mix cottage cheese with orange zest and turmeric, mix.

  • 2nd, add poppy seed filling to the cottage cheese (see below for how to cook).

3. We cover the pasochnik with gauze, spread the curd mass with zest at the beginning, in a circle of shape,


and then in the middle of the cottage cheese with poppy seed filling, tamp.

We select hanging gauze, cover Easter with it, on top of a plate and a load (a jar of water, a pack of salt) and put a container under the bottom of the form to collect liquid. We stand in the refrigerator for 12-13 hours, then remove the form and gauze. We decorate Easter.

Poppy filling for home baking


Poppy seed filling can be used for any home baking.

We need:

  • 250 gr. poppy
  • 5 tbsp sugar
  • 50 gr. butter
  • 100 ml. milk
  • 25 gr. honey, optional
  • boiling water for steaming poppy seeds, the water should cover the poppy seeds

Cooking:

1. We select fresh poppy so that there is no bitterness. Fill it with boiling water and leave for 10 minutes, drain the water through a sieve and repeat the action again.

2. Mix poppy seeds with sugar and twist in a meat grinder through a fine mesh, twice, or knead in a mortar until milk appears. You can also use a blender.

3. In the resulting mixture, put butter, honey and half of the milk, if you need more, add it. We move everything to a saucepan and put it on low heat, cook it with stirring for 30 minutes.

The liquid should evaporate and the poppy should become a paste.


It can be used in this form for home baking.

4. You can add raisins and nuts to this mass, if desired, it will be very tasty. Poppy seed filling can be stored for a week in the refrigerator or it is stored for a long time in the freezer. Before use, the poppy seed filling is thawed in the refrigerator overnight.

We need:

  • 1 kg cottage cheese, not wet
  • 400 g sour cream 20-25%

We need:

  • 1 kg cottage cheese
  • 3 eggs
  • 300 ml milk
  • 1.5 - 2 tbsp. honey
  • 2 tbsp vanilla sugar

Cooking:

1. Steam raisins with boiling water, leave to swell. Then we decant the water and dry it on a paper towel.

2. Bring milk to a boil, but do not boil.

3. Beat the eggs with a whisk and a thin stream, pour in hot milk, stir vigorously. We put this mixture on fire and brew until it thickens, remove from heat and cool.

4. Transfer the egg mixture to cottage cheese, put vanilla sugar, honey and mix with a blender. Then, put the raisins and candied fruits.
