Multi-format and conceptual restaurant STAGE in the south-west of the capital occupies an area of ​​almost 2000 m 2 . Rare scope for a restaurant project these days, but still! Three floors form a space for recreation - noisy and lively, calm and serious, cozy family and musical youth. On the ground floor there is a gastro market selling farm products, fresh pastries and bread. own production(including specialties such as Serbian fluffy buns somun, pita-burek made from thin filo dough rolled by hand), semi-finished products and ready meals, desserts from the pastry chef, as well as craft beer. The gastromarket is a kind of "preface" to the gastronomic concept of the restaurant, which is in charge of the head chef from Serbia, Goran Stepanovic. Having collected dishes from the South of Europe in the menu, he presented them to the guests both in classic and author's versions, observing the principle of "Clear food for honest money." As for honesty, there are not only eco-friendly (and therefore high-quality) products, but also large portions. This should be taken into account when choosing, for example, meat dishes for which Serbian cuisine is famous. However, breakfasts are very hearty here (from 8 to 12 hours). For example, "Slovensky" - with grilled sausage, fried crispy bacon, fried eggs, cheese, french fries. Or the beloved by many "Primorsky" - with a poached egg, salmon and trout, red caviar and boiled new potatoes with fragrant dill. Even seasoned restaurant critics are surprised by the firm presentation of completely familiar dishes. For example, "Greek salad" is cucumbers, tomatoes and Bell pepper on a pasta of olives with cheese cream. Familiar ingredients can be combined in a completely unusual way: for example, in Basque Salad - roast beef, mushrooms, corn with vegetables and spicy sauce. Tuna tartar is served with tomato ice cream, and Stage pasta is served with bacon ice cream. By the way, all ice cream is only our own production. The open kitchen of the restaurant accommodates a grill, a skewer, a Serbian furuna oven for baking pizza, tortillas, bread. Sach is also served at the table - a cauldron in the coals, where meat and vegetables are stewed. Meat lovers will appreciate gourmet bacon splash (grilled minced meat patty), chevap (sausage) stuffed with feta in bacon, soft pork belly in spicy sauce. A more "lady's" version is duck breast with ginger pear. Sweets from the pastry chef are a separate pride of the restaurant. They are as tasty as they look interesting. Warm pear with chocolate-caramel crumbs and three types of sorbet, bird cherry cake with blueberry sauce, pesh-melba - juicy peaches with vanilla ice cream and raspberry sauce. The Stage Bar offers signature non-alcoholic cocktails and a large tea list. For younger guests, the restaurant has a children's menu. From 12 to 16 hours there is a 20% discount. The top floor of the restaurant is occupied by a large hall with a stage. The atmosphere here is more like a club: a large bar counter, concerts, performances and parties. Therefore, the Stage can hold events of various formats - from noisy musical evenings and classic banquets to dinners in a narrow circle and children's parties. The total capacity of the restaurant is 350 seats. The main hall on the second floor overlooking Vernadsky Avenue can accommodate up to 200 guests, there are also separate rooms for 70 and 20 guests, as well as a children's room equipped for games.

The Stage Restaurant is not a new establishment. Before settling on Sadovo-Kudrinskaya, it entertained the residents of the "Vernadsky Avenue - University area", so it should be considered as a fully formed participant in the restaurant market, but there is something to consider in it.

I'll start with the location, which I would describe as difficult, because at least five different establishments passed through the yellow-and-white 19th-century mansion. The sad Palatin was the last to try to hold on there. It didn’t work out, Oksana Federova’s restaurant quietly evaporated, and the Stage occupied the vacant premises, and drove loudly, with a PR campaign, photographs and loud assurances about the excellent quality and honesty of the cuisine.

Internal changes affected only the color of the walls and the arrangement of furniture. Now the walls are grey, with different shades. The layout and breakdown into levels remained the same. Behind the glass doors, guests are greeted by a small corridor and a stepped foyer with a hostess counter, but without the hostess herself. Further on, a view of the dining space, which consists of two floors, opens up. On the first floor there is a large hall with a huge window, a semicircular row of columns, a bar counter and a curved staircase. There is a lot of space, the tables are arranged imposingly, far from each other, but for some reason there is no feeling of comfort. Even the murmur of open oyster tanks leaning against one of the columns does not help. The second floor is also spacious, with different levels, nooks and crannies and a view of the lower part.

The restaurant itself defines the concept of the menu as “a gastronomic journey through the south of Europe”. The definition is deliberately vague, because the south of Europe is large, from Gibraltar to Cyprus. A cursory glance over the lines reveals a typical Moscow concoction spiced with a section from Serbian cuisine. The main accent is Italian, but not traditional, but muscovitated.

The food at the Stage, like the menu, only portrays the authenticity of the original sources, but in reality, many of the dishes are accurate imitations.

For example, the menu says: “Tuna tartare. Tuna fillet with soy sauce, sesame oil and arugula. Served with tomato ice cream. On the plate, a completely different story is read - a bunch of tuna cubes on a tasteless pale green sauce with salad mix petals, halves of berries and lumps of orange. No distinct spices, no soy sauce, arugula and tomato ice cream. The taste is poor, pale, empty.

I had to deal with Pasta Carbonara even when ordering. What kind of pasta was meant was not explained in the menu. The waiter was also clueless. In the end, I was offered spaghetti. I agreed and instead of the classic Italian food Spaghetti carbonara got a typical Moscow creamy cheese soup with overcooked vermicelli and wilted bacon. The taste is heavy, sugary, not at all Italian.

“Lamb shank with mashed potatoes” looked quite voluminous, but again there were problems with taste. The meat was barely warm and dry, the sauce was sharp and rough and not at all salty, and the puree was more like a cold potato mousse. “Traditional Balkan lamb sausages” were presented by the waiter as homemade, but what arrived at the table was not homemade sausage didn't seem like it at all. Firstly, there was only one "sausage". Secondly, it was dry and hinted at the defrosted original product. The taste is monotonous - peppery. The potato side dish looked sluggish and smoked suspiciously with microwave steam.

I don’t know what exactly the Chili con carne soup has to do with the “south of Europe”, but I personally convinced myself that it had nothing to do with the real Chili con carne. Resting in a black bowl was a smooth, brown, sweet mass without pungency or any sense of richness or authenticity.

From the dessert group, he told his poem "Tiramisu" extremely unsuccessfully. He did it too indistinctly, hard, tight and bitter.

On the positive side, I would like to note the New York Steak, which was cooked correctly. They gave the meat a rest, supplied it with salt and pepper, did not cut it and did not miss the roast. Pizza Margherita did not disappoint either, however, it was cooked in a bar, because it was in the center of the wooden bar structure that a wood-burning stove was installed. The pizza was basic and good. The ratio of sauce and cheese is right. The dough is thin, but did not turn into porridge. The only drawback is that the sauce lacked sweetness, which is why acid dominated the taste.

Two more pluses very moderate prices for the center and its own parking with a very accepted, polite valet.

The attendants were not ready for full-fledged work at all. With two occupied tables, the chefs, managers, hostesses and waiters preferred not to follow the hall, but to talk at the bar. My waiter was not familiar with the menu, he did not know the recipe for the dishes, he mixed up part of the order. So, instead of “Tuna tartare”, he brought “Beef tartare”, and at the same time, before correcting his mistake, he offered to eat beef after all, since the dish had already been prepared.

The bottom line is this:

Despite the fact that the Stage restaurant is not a newcomer, on Sadovo-Kudrinskaya, it looks like a crude project with mediocre food and service errors, and this is not the best combination for such an unlucky location.
