Pizza sauce like in a pizzeria can come in handy in two cases.

Firstly, in conditions where you need to make a lot of pizzas, and timing is really important. You see, if you make one or two pizzas, then, in essence, it doesn’t matter how long you roll the dough and lay out the ingredients - 5 minutes, or 6, or 8. It doesn’t really matter how long the pizza is baked. But when you make ten pizzas (or hundreds of pizzas a day, like pizzerias), then every minute counts. For pizzerias, every unmade and unsold pizza reduces profitability. At home - your guests have to wait longer.

Secondly, American pizzas (i.e. pizzas with thick and fluffy yeast dough) are generally inconvenient to make with undercooked sauce - it does not allow the dough to rise well.

In my opinion, ready-made sauces lose out in taste to those collected from individual ingredients, at least on thin pizzas. My favorite pizzerias use assembly, and so do I.

On the other hand, when I make a lot of pizzas - I know myself: in the park I can make a mistake exactly in the sauce part - forget to add salt or sprinkle with seasoning. So when we had a party for six pizzas, I decided to still make pizza sauce, like in a pizzeria.

There are three classic pizza sauces that pizzerias use as a standard. Well, I mean tomatoes. These are pizza sauces Margherita, Marinada and Napoli (Napolitana). The last pizza at home, strictly speaking, is almost impossible to make - it is supposed to be baked only in a wood-burning oven. But it hurts that the Neapolitan pizza has a good sauce, so I'll show it in company with the other two, more common ones.

In total, I will have sauce for about six medium pizzas.

Combine chopped tomatoes own juice at the rate of 1 tablespoon olive oil- per 100 g of tomatoes, and cook this mixture, stirring it from time to time, over medium heat with the lid open for 15-20 minutes.

If you are going to make a Neapolitan sauce, then for it you need to grate Parmesan and crush a couple of capers into a pulp.

If several pizza sauces are used, as in a pizzeria, then the boiled tomato mixture should be poured into several containers.

The easiest ready tomato sauce This is the sauce for Margherita pizza. All that needs to be added to the boiled tomato mass with olive oil is salt and basil. Salt - to taste, dry basil for 300-350 ml of boiled tomatoes - 1 tsp. That's it, there are simply no other ingredients in this pizza!

The minimum seasoning for pizza Marinara is salt, oregano and garlic. But I will also have capers. They are allowed along with olives and black olives. What is the convenience of capers? I will see them in a bowl with sauce, and I will know: yeah, where are the capers - I have Marinara there.

Well, the third sauce is Napolitana. It must contain, in addition to tomatoes, salt and olive oil, basil and oregano, i.e. both. Yes, in Italian cuisine it really matters what you season your pizza sauce with, and it's that tiny difference that leads to its name! However, in addition to the base, Neapolitan pizza can also contain parmesan and anchovies. They greatly improve taste qualities of this sauce, plus grated Parmesan, will allow me to tell the bowl of Napoli sauce from the other two.

This is how they will stand on my table: with capers - Marinara, without any large inclusions - Margherita, and with grated cheese - Napolitana. Everything, they are optically easily distinguishable, you do not need to sign. To prepare each of these pizzas, the sauce also requires a crust and mozzarella.

And have a good party with these pizza sauces, just like in a pizzeria! Using them allows you to win about 2 minutes on each pizza: 1 when assembling and 1 when baking.


It's hard to find someone who doesn't like pizza. There is sure to be a filling that will win the heart of the most fastidious gourmet. Someone loves thin pizza, someone - on a thick cake of yeast dough. But its main secret is not at the core. He's in the sauce. Therefore, today we will try to cook a real pizza sauce - a recipe, like in a pizzeria, will definitely not leave anyone indifferent! Traditionally, it is customary to distinguish between three types of sauces:

  1. Red is prepared on a tomato basis. You can use both fresh and canned tomatoes. In the first case, it is better to choose sour varieties so that the taste of the filling is not fresh. If there are no tomatoes at hand, you can take the finished pasta. The effect, of course, is not the same, but still, with some effort, the result will come out quite decent.
  2. White sauce is not so popular in pizza, but it also finds its connoisseurs. It is usually prepared with cream or soft cheese. It happens that kefir is added to the composition.
  3. Green sauce is a rarity in our pizzerias and tables. This is usually the classic basil-based pesto, which gives the mass its color. But there are others more exotic options, which we will discuss below.

The first type of sauce is usually used in meat pizzas. It harmonizes perfectly with sausages, pork, bacon, olives. Creamy dressing is more often smeared with a dish with seafood - salmon, shrimp, mussels. It is also best added to pizza with mushrooms and vegetables. But cheeses and chicken are "friendly" with both types of sauces. As for green, it is very self-sufficient in itself, and therefore does not combine with complex fillings. It can be supplemented with poultry meat, vegetables, fish, olives.

  1. As additional ingredients greens are always added to the sauce. These are basil, cilantro, dill and other herbs.
  2. Not without a hot pepper. Depending on preferences, you can use regular ground pepper or a piece of real cayenne.

  2. Cut the peeled tomatoes into halves or quarters and set aside temporarily - let the excess liquid go away.
  3. Heat up a frying pan, pour oil into it.
  4. Finely chop the garlic or pass through a garlic press and fry.
  5. Add the tomatoes to the skillet and mash them with a fork until smooth. Reduce the fire to medium.
  6. While the tomatoes are simmering, finely chop the basil and add it to the pan near the end of the process.
  7. Remove the pan from the heat when the amount of tomato mass has been reduced by about a third. Rub it through a sieve and season with salt and pepper.

Traditional tomato sauce for pizza is ready - grease the cakes! It can be put in the refrigerator for 3-4 days, and left in the freezer for up to two months.

Tomato sauce for pizza

If you plan to use a complex multi-component filling, then give preference simple sauce, for example, from some tomatoes.

  1. Cut the tomatoes in half and place on a baking sheet. Sprinkle them with salt and pepper.
  2. Bake for a few minutes until done.
  3. Remove the skin from the tomatoes (it will already be easily removed), chop them with a blender and transfer the tomato mass to a saucepan. Boil for just a few minutes - you're done!

Creamy pizza sauce

  • a glass of grated parmesan;

Prepare:

  • meat broth - half a liter;
  • butter- 40-50 grams;
  • a couple of tablespoons of flour.

  1. Melt the butter in a saucepan and fry the flour in it, adding a couple of tablespoons of the broth.
  2. Slowly add the broth to the thick mass, stirring constantly.
  3. Let the mixture boil and cook for 10 minutes.
  4. Strain the finished filling and immediately grease the cake.

Tomato Paste Pizza Sauce

  • sour cream - 6 tablespoons;
  • olive oil - 2 tablespoons;
  • lemon juice.

You don't have to boil or fry anything. Just crush the garlic in a mortar, add salt, oil and lemon juice. Whisk. Then gradually add fat sour cream and continue whisking so that the sauce comes out light and airy.

Cooking takes a couple of minutes. Grate the cheese, greens with garlic and nuts in a mortar into a homogeneous gruel. Mix the resulting mass with cheese and butter - your pesto is ready to go to the cake.

Thai sauce has an emerald green color and a very unusual taste. The ingredients are also specific. But if you want to really surprise your guests, believe me - this is your choice.

So get ready:

  • green chili - 4 pieces;
  • bulb;
  • garlic - 2 cloves;
  • cilantro, lemon peel- on a spoon;
  • oil - a spoon;
  • cumin, turmeric, cinnamon - a teaspoon.

Unripe chili is not as hot as red chili, but if it seems too hot to you, replace part of it with green bell pepper.

Components:

  • ¼ kg of champignons;
  • 250 ml of fat (35% or more) cream;
  • a couple of tablespoons of flour;
  • dill and a pinch of salt.

If you like, add garlic or sautéed onions to the sauce.

  1. Cut the mushrooms and throw into the pan. Simmer until the juice is released.

This sauce smells like the sun of the southern coast of Italy, where one of the largest cities in the country, Naples, stands. Pastas and pizzas with the addition of the classic tomato sauce with onions are incredibly popular here. We called it "Neapolitania" or "Neapolitano". For cooking you will need:

  • half a kilo of fresh tomatoes;
  • large onion;
  • clove of garlic;
  • 4-5 tablespoons of oil;
  • basil;
  • salt, a pinch of sugar and black pepper.

Traditionally, we start cooking by peeling the tomato from the skin.

  1. Chop the onion as finely as you can, it will have to completely “disperse” in the tomato mass, leaving only its taste.
  2. Grind the garlic into a pulp so that the pieces do not come across in the finished sauce.
  3. Cut the tomatoes.
  4. Chop the basil. Optionally, you can add oregano to it (oregano, in our opinion).
  5. Heat up a frying pan, add oil and add onions. Fry until golden. Add garlic and saute for another minute.
  6. A spicy mixture of vegetables will well set off the taste of the meat filling.

  • 3 fleshy tomatoes;
  • 2-3 pickled cucumbers;
  • 250 grams of champignons;
  • garlic, a couple of cloves;
  • carrots, onions;
  • a third cup of sour cream.

Prepare all the ingredients: peel and chop the tomatoes, cucumbers, champignons, finely chop the onion and garlic, rub the carrots.

  1. Fry the mushrooms, add onions and carrots to them.
  2. When the vegetables are half cooked, transfer the tomatoes and cucumbers to them.
  3. Pour the whole mass with sour cream, bring to a boil. At the very end, add garlic, salt and pepper.

You can leave the sauce in this form, but it is better to grind everything well with a fork, mixer or blender.

Burning spicy tomato sauce

And in this recipe, tomatoes are not present at all, but no one will forbid them to be added if you have such a desire.

  • 3-4 large Bulgarian peppercorns;
  • half a glass of chicken broth;
  • basil leaves;
  • a pinch of chili;
  • salt.

Cooking does not require special culinary skills. Everything is simple. Roast the peppers on a baking sheet until tender, then remove the peel from them and chop into a pulp with a fork or blender. Cream sauce is not considered traditional in pizza preparation. It is more suitable for a change when you want something unusual. White sauce is no more difficult to prepare than any other, but it tastes very different.

Ingredients:

  • Cream 20% (warmed) - 250 ml.
  • Flour - 100 gr.
  • Egg yolks (fresh) - 2 pcs.
  • Butter (melted) - a tablespoon.
  • Sugar - a teaspoon.
  • Salt - a pinch.

Cooking method:

  1. First you need to beat the egg yolks with a whisk or a fork.
  2. Then mix the cream, flour and butter, the resulting mixture should resemble thin sour cream.
  3. Pour the mixture into enamelware and put languish on water bath.

Analog white sauce, similar in color, but completely different in taste.

Ingredients:

  • Chicken egg - 4 pcs.
  • Low-fat sour cream - 200 gr.
  • Hard cheese (any variety) - 100 gr.
  • Dry mustard powder- tea spoon.
  • Vegetable oil - 3 tbsp. l.
  • Lemon juice - a tablespoon.
  • Salt / pepper - to taste.

Cooking method:

  1. Boil the eggs in such a way that the yolk in the egg remains liquid inside, hard on the outside.
  2. Proteins are not useful for cooking, the yolks need to be ground, gradually adding oil to them.
  3. Add mustard to the resulting yolk mass.
  4. Then also gradually add sour cream.
  5. The sauce must be stirred until the consistency becomes homogeneous.
  6. Then add all remaining ingredients except cheese. It must first be ground on a fine grater.
  7. Gradually adding the cheese last, put the sauce in a water bath for 5 minutes. Do not bring to a boil!

To vary the taste, the cheese variety can be changed. citric acid if desired, you can replace wine or apple.

Red bell pepper pizza sauce

Tomatoes are not used in this recipe at all. Pepper brings its specific pleasant taste, completely replacing tomatoes. Pepper can also be used in some other recipes as a substitute for tomatoes, but you need to pay attention to additional products.

Ingredients:

  • Large red bell pepper - 4 pcs.
  • Chicken broth - 150 ml.
  • Basil - a few branches.
  • Ground chili pepper - a teaspoon.
  • Salt and black pepper - to taste.

Cooking method:

  1. Peppers must be baked in the oven for 15 minutes at a temperature of 200 degrees. You can bake them in the microwave, but then the time is reduced to 8-10 minutes at medium power.
  2. Peppers need to be peeled and seeds removed. In order not to suffer from the release of the peel, hot peppers should be put in a plastic bag for 20 minutes.
  3. Then beat the roasted peppers to a puree consistency, add chicken bouillon and spices.
  4. The sauce must be poured into a saucepan and simmer until the final thickening.
  5. After that, cool and apply as directed.

Chocolate pizza sauce
